Ready in a Flash: Craveworthy French Bistro Sandwiches

When PartySugar wrote about heading straight to the store after a Barefoot Contessa episode, I couldn't help but laugh and think of a recent instance when the same thing happened to me.

When PartySugar wrote about heading straight to the store after a Barefoot Contessa episode, I couldn't help but laugh and think of a recent instance when the same thing happened to me. Sometimes, all it takes is a momentary glance at a picture, and I develop a sudden, pressing need for a particular dish.

Said craving occurred most recently when I was flipping through an old magazine, and happened upon a 15-minute recipe for oven-toasted egg, pâté, and gruyère sandwiches. No more than 16 minutes later, it seemed, I was enjoying the crunch of a broiled baguette melded with the earthiness of Marcel et Henri pâté and a runny fried egg. Currently lusting after the same? 'Wich of the Week: Fish and Farm Baguette

Faced with some random farmers market booty a few weeks back, I ended up inventing a rather out-there sandwich that may just be one of my favorite creations since I started this series.

Faced with some random farmers market booty a few weeks back, I ended up inventing a rather out-there sandwich that may just be one of my favorite creations since I started this series. This pile of goodness combines quick stir-fried veggies with orange roughy fillets baked in a parchment paper pouch — or, in my case, a paper bag since I was out of parchment. Either one works equally well.I used zucchini, leeks, and peppers to take advantage of what's in season, plus some enormous trumpet mushrooms I couldn't resist buying. But you could easily adapt the veggies on this 'wich to correspond with the changing seasons. The sweet marinade for the fish reminded me of a delicious sea bass, and the Asian flavors played well off of the simple baguette. To see how I made this easy but surprising sandwich, read more

Simple Tip: Refreshing Day-Old Bread

Last night, I stopped off to buy a fresh baguette for dinner, only to get home and realize that the bread, having been baked that morning, wasn't exactly fresh anymore.

Last night, I stopped off to buy a fresh baguette for dinner, only to get home and realize that the bread, having been baked that morning, wasn't exactly fresh anymore. If you've ever been stuck with a loaf of "fresh" bread, or if you want to get more mileage out of a baguette you bought the day before, try this simple trick.

Heat your oven to 250 or 300 degrees, and splash some water on top of the bread — not too much that it's soaked, but just enough that it's slightly damp on top. Then, pop the moistened bread in the oven for no more than five minutes. When you take it out, the bread will feel warm and fresh, with a crispy outside and a soft middle.
