It's packed with chorizo and shellfish, so it has a wonderful surf-and-turf quality.

Although the recipe has you cook the paella on the grill, I made it on the stovetop. Other substitutions to note: I used Mexican chorizo instead of Spanish chorizo and omitted the squid and saffron, because of a restricted selection at the local market. The folks at Chipotle may be busy working on a Southeast Asian concept, but this hasn't stopped them from making new developments in their Mexican kitchen.

The folks at Chipotle may be busy working on a Southeast Asian concept, but this hasn't stopped them from making new developments in their Mexican kitchen. The latest addition they've taken for a test drive? Chicken chorizo sausage.

The chicken chorizo, which the company describes as being made with "naturally raised pork and chicken sausage with herbs and spices," is currently available at most New York locations, and will roll out to select stores in Denver in about a week. Should the option become available nationwide, it would be the first new protein rolled out in years.

Chorizo always has been a popular Mexican breakfast item, so it'll be interesting to see how well it fares at a lunchtime favorite like Chipotle. Does chorizo sound like it has enough promise to go nationwide?

Nachos are one of my favorite foods, so when I realized the Super Bowl was around the corner, I had to whip up a batch. The thing that makes these nachos — which are not baked, but assembled — absolutely to die for is the spicy queso sauce.

I used Cabot's hot habanero cheddar, and I highly recommend seeking out this cheese to make these nachos. Combined with a quick béchamel, it results in a super creamy, sharp, spicy, and flavorful queso sauce. The chorizo pinto bean mixture is also wildly delicious and could easily be used in huevos rancheros or as the filling for quesadillas.

If you're a fan of classic fiery Tex-Mex, you must make this recipe. It sounds crazy, but I think these were the best nachos I've ever eaten — and I've tried a lot of nachos! Check out the method now.

A couple weeks ago I attended a very special class hosted by Williams-Sonoma. The workshop was a two-hour sausage making course led by the one of the Fatted Calf's owners, Taylor Boetticher. The Fatted Calf is a famed Napa Valley Charcuterie known for its old world methods, small batch products, and organic, locally grown meats. Boetticher taught the small group how to make three pork products: rosso sausage, pork crepinettes, and my personal favorite, Mexican-style chorizo. The amazing thing about his chorizo is that you don't need a meat grinder to make it at home — it's a hand-cut sausage. Here is Boetticher's technique.
