Fast & Easy Dinner: Cornflake-Crusted Snapper

A crunchy coating on soft and flaky fish always takes me back to my childhood and those frozen boxes of fish sticks.

A crunchy coating on soft and flaky fish always takes me back to my childhood and those frozen boxes of fish sticks. That's why a recipe for fresh baked cornflake-crusted snapper seemed like the perfect way to re-create the nostalgic dish with a little more adult flair.

Set up stations for the flour, egg white, and cornflakes, and your family will be sitting down for dinner in about a half hour. To keep the meal healthy, I served it with a simple side salad. However, if you're in the mood for a nutritious variation on fish and chips, why not offer it with oven-baked sweet potatoes?

Pull out the box of cereal at dinner to get started on this easy seafood dish.

Illinois-Shaped Cornflake Sells for $1,350

I'm sure you had better things to do this weekend, but me, I spent mine on eBay looking at a weird number of state-shaped cornflakes.

I'm sure you had better things to do this weekend, but me, I spent mine on eBay looking at a weird number of state-shaped cornflakes. On Friday night, an Austin-based trivia-company purchased a cornflake shaped like Illinois for $1,350. That's right, Monty Kerr, owner of TriviaMania, spent over a thousand dollars on a single cornflake.

Hoping to cash in on the phenomenon, loads of copycat cornflake auctions cropped up this weekend. There was a heart-shaped cornflake, one shaped like the US, another Illinois-shaped cornflake that also resembles Ben Franklin, an Oregon one, an Africa-shaped one, one shaped like Ohio, and so on. At this time, the Ben Franklin cornflake was actually going for over $400, but Oregon was still cheap.

I don't know about you guys, but I think this is absolutely crazy. I don't understand why you'd buy odd-shaped cornflakes, and yet, I have this strange urge to dump out my box of cereal and see what shapes I can find!
