Following the news that all forms of potatoes play a big role in weight gain, the Idaho Potato Association wants to let us know that there are, in fact, benefits to eating the tuber. New commercials will start airing soon to let us know the role potatoes play in heart health. In fact, potatoes contain high amounts of potassium, which studies have shown may help lower blood pressure and is essential for regulating heart beat.

Roast chicken and potatoes is one of my go-to meals for quick entertaining. All you have to do is season with herbs and olive oil and toss the two ingredients in the oven. However, when I'm in the mood for something a little more special than chicken, I change it up and use delicate, flaky salmon fillets.

The key is to cook each of the elements (potatoes, asparagus, salmon) for different amounts of time. Start with the potatoes, then add the asparagus, and finally the salmon. You can peel the potatoes if you’d like, but I’m not fond of the peeling process. If they don’t have to be peeled, you can bet I won’t do it. So it’s up to you.

We're huge fans of comforting and delicious scalloped potatoes. Usually they're loaded with cream and milk, but girla has shared an awesome recipe that's 100 percent vegan.

The Husband LOVES potatoes and several days a week, he makes hash browns from scratch. But in an effort to reduce fried and sauteed food, he decided to make these baked scalloped potatoes from Veganomicon. They turned out fantastic! The only change we recommend is layering the spices, broth, almond milk, and nutritional yeast instead of just topping the potato slices with them.

One study in Brazilian dieters found that over a 6-month period, each addition gram of fiber resulted in an extra quarter pound of weight loss. I love them steamed in lemon water with fresh mint and drizzled with balsamic vinegar.

This is a great dish for an Easter brunch where ham is making the main meat debut. I came up with this recipe during the holidays when I was menu planning and trying to avoid the plain and often boring ol' mashed potato side dish. I love potatoes and can't quite live without the carbs, but I wanted to have something different that complemented any meat. This dish, scalloped potatoes with smoked gouda cheese and sauteed pancetta with shallots is the perfect complement to any menu. It's delicious! The pancetta and shallots are the ideal combination with the smoked gouda cheese.
