However, I've gotten bored eating the same filling, so I started exploring more authentic options on Rick Bayless's website. The first one to catch my eye was this quick chicken recipe with a variety of greens including chard, spinach, and arugula — all topped with Mexican sour cream and freshly roasted poblanos. The recipe only calls for two chicken breasts, but the onions, greens, and poblanos bulk up the filling. There was plenty for my party of four and a little left over. I topped the tacos with chopped scallions and a squeeze of lime juice; next time I'll add cilantro. The dish is broiled in the oven until the ingredients are warmed and the tops of the tortillas are crisp.

Grilled quesadillas are wonderful for an impromptu dinner party. I like to invite friends over on a weeknight, set out a whole bunch of toppings, and let guests assemble their own quesadillas. Next, I throw the personalized quesadillas on the grill and heat them up, slice into wedges and enjoy! To avoid having to rip the tops off of the quesadillas to see whose quesadillas is whose, have your friends carve their first initial into a tortilla (like the D in the above pic). When stacking the tortillas, be sure to inform guests to place the initial side down as the base tortilla. When you flip the quesadillas on the grill the initial will be on top.
