Hershey's Closes Scharffen Berger, Joseph Schmidt Plants

Lovers of local artisan chocolate, be prepared for some bitter news: This week, Hershey announced plans to close the plant where Scharffen Berger chocolate is manufactured, as well as the factory where Joseph Schmidt chocolates are produced.

Lovers of local artisan chocolate, be prepared for some bitter news: This week, Hershey announced plans to close the plant where Scharffen Berger chocolate is manufactured, as well as the factory where Joseph Schmidt chocolates are produced.

Although Hershey will continue production of the two brands, the chocolates will no longer be produced where they first became popular – in the Bay Area. The plants are not commenting, but a spokesperson from Hershey's headquarters said, "We will maintain the highest quality standard for all our artisan productions."Both brands, founded in San Francisco, were pioneers credited for increasing the popularity of high-end, premium chocolates. Scharffen Berger, founded in 1996, made a name for itself with its discerning selection of cacao beans, its diligent roasting techniques, and the the chocolate's complex, smooth flavors. Its Berkeley, CA-based plant offered factory tours to local visitors.

I'm sad to hear this news, and a bit skeptical of Hershey's promise. After the company acquired both brands in 2005, it reassured customers that it wouldn't alter the businesses, and would most likely expand them. Hershey's insists it will maintain both brands' integrity, but the chocolate czar recently made the choice to switch to cheaper ingredients.

Chocolate Adventurers Get Ready to Travel!

This past Fall, I told you all about the Chocolate Adventure Recipe Contest.

This past Fall, I told you all about the Chocolate Adventure Recipe Contest. To participate, you had to create a recipe using Scharffen Berger dark chocolate and one of their "adventure" ingredients. Well, the contest is over and the winners have been announced! Now you can print out the recipes and go on your own chocolate adventure.

The top three recipes are Chocolate Wasabi Pom Poms, Dark Chocolate Caramel Calzoni, and Grapefruit Madelines with Rosemary Infused Chocolate Drizzle. All three of them look absolutely delicious, as do the ideas in the list of finalists. And if this isn't enough for you, come back later this week when we have the recipe for the honorable mention Chocolate Ginger Delight!

Head Out On a Chocolate Adventure

A few weeks ago, I had the wonderful luxury of throwing myself head first into an all out chocolate tasting.

A few weeks ago, I had the wonderful luxury of throwing myself head first into an all out chocolate tasting. The event, which was hosted by tuttiefoodie and tablehopper, was to promote the Chocolate Adventure Recipe Contest. It began with a few words from John Scharffenberger (of Scharffen Berger Chocolate). He told us the ins and outs of chocolate, had us taste different varieties — including unprocessed chocolate — and taught us how compare chocolate tasting to wine tasting. After a fun, and highly informative conversation, we were then treated to a trio of desserts by Nicole Krasinski, Rubicon's current pastry chef.

The delicious desserts were meant to get us thinking about chocolate flavor pairings — the contest is all about pairing dark chocolate with different ingredients in order to create a new experience — and it definitely did. Kransinski's three offerings included pairings of chocolate and thyme, chocolate and umeboshi plum, and chocolate and coffee. The unusual flavor combos really captivated the spirit of the Chocolate Adventure contest and completely got my mind racing.

The contest, which has a $5000 prize, has a very simple premise: create a recipe using Scharffen Berger dark chocolate and one of the "adventure" ingredients. I don't know about you guys, but I can't wait to get to the kitchen and cook up an entry! The contest ends Dec 1, 2007, so you better get cracking!
