Classic Shortbread Is Easy Yet Altogether Exceptional

Sometimes less really is more; case in point: these tender, pared-down bars of Scottish shortbread made up of little more than butter, sugar, salt, flour, and cornstarch. Sure, one could jazz them up with a hefty pinch of citrus zest, a drizzle of melted chocolate, chopped nuts, or a vast variety of other additions, but something about their simplicity and purity of buttery flavor is what makes them a star in my eyes, and those just about everyone who's tried them.

I've been making this particular recipe for over a decade, and for good reason. Their effort-to-reward ratio is shockingly high — I've been making them unassisted since my tweens — they keep well, and their rich comforting flavor is soul-soothing whether nibbled on unadorned or generously dolloped with a bit of jam or preserves. Given their short ingredient list, use the best butter you can get your hands on; it will make all the difference.

So what are you waiting for? Make this shortbread today.

Artisanal Pick: Clairesquares

To say that I'm fond of Clairesquares ($8) — a bar cookie comprised of layers of shortbread, caramel, and Belgian chocolate (think millionaire's shortbread) — is a vast understatement.

To say that I'm fond of Clairesquares ($8) — a bar cookie comprised of layers of shortbread, caramel, and Belgian chocolate (think millionaire's shortbread) — is a vast understatement. Rather, these delectable treats are a strong contender for my desert island dessert pick, a statement I don't take lightly.

I had my first taste a couple years back while picnicking in Dolores Park after I tentatively grabbed a package off the shelves at the nearby Bi-Rite Market, a much-loved San Francisco-based specialty foods shop. Now, I already had high expectations, as I'm generally powerless regarding anything involving caramel or shortbread, but I was still shocked at just how good they were. I quickly devoured a sizable bar and then (only somewhat shamefully) a second.

Layers of tender shortbread, deeply browned and salt-flecked caramel, and robust Belgian chocolate combined in each bite for something far greater than the sum of their already exceptional parts and left me irrevocably hooked. Ever since that fateful day, it's been a fruitless battle to restrain myself from snapping up a package of the locally made treat anytime I see them in stock. I urge you to follow suit and try these life-changing treats yourself.

Killer App: Parmesan, Black Pepper, and Thyme Crackers

If I could distill just one entertaining tip to y'all, it would be this: don't mess with what's not broken.

If I could distill just one entertaining tip to y'all, it would be this: don't mess with what's not broken. Meaning: find a few can't-fail, easy-to-prepare recipes, and rely on those as the backbone for your party spread. Sure, you might change little things up from occasion to occasion, but knowing that at the very least a few things will turn out according to plan provides much-needed peace in the midst of frenzied party setup.

These piquant, herb-flecked crackers are my go-to entertaining appetizer. Not only do they make an appearance at nearly any get-together I host, they're also a go-to potluck contribution, and even make for an easy-to-transport hostess gift. Most importantly, they are universally crowd-pleasing, can be prepared ahead of time, and are almost always the first snack to go.

Make these savory shortbread crackers your go-to entertaining app.

From Cup to Cookie: Matcha Almond Shortbread

Living with a caffeine junkie means that much of our counter space is devoted to its consumption.

Living with a caffeine junkie means that much of our counter space is devoted to its consumption. Nespresso pods, coffee beans, cans of Diet Coke, rogue bottles of 5-Hour Energy, and a whole host of tea bags seem to multiply overnight; but until recently I hadn't experimented much with consuming caffeine in solid form.

Coffee has long been the star "secret" ingredient in chocolate desserts, adding depth and bitterness to chocolate cupcakes, coffee toffee crunch bars, chocolate mascarpone trifles, and the like, but I'm more of a tea drinker, so hadn't given it much play. That is, until I had my first bite of green tea mochi covered ice cream; the green tea's delicate but savory flavor had me reaching for seconds.

An Easy and Delicious Way to Use Leftover Candy

It seems like every year, fewer trick-or-treaters stop by my house.

It seems like every year, fewer trick-or-treaters stop by my house. Thus, each October, I end up with a large amount of leftover candy. If this happens to you, turn the leftover chocolate candy bars into a scrumptious topping for shortbread. The brown-sugar-based shortbread crust is simple and effortless to prepare. Similar to chocolate bark, these shortbread bars can be covered with whatever chocolate you have on hand. I used an assortment of peanut butter and caramel treats including Reese's peanut butter cups, Heath bar bits, Reese's Pieces, and caramel-filled dark chocolate. Want the recipe? Shortbread Two Ways — Sweet and Savory

Over a thoroughly enjoyable bite of blackberry fool, I couldn't help but dream about a crumbly, larden shortbread round to dust off with it.

Over a thoroughly enjoyable bite of blackberry fool, I couldn't help but dream about a crumbly, larden shortbread round to dust off with it. So tonight, while I've still got some blackberry dessert in the icebox, I think I'm going to bake up a batch of shortbread coins to go along with.

A traditional shortbread is truly spare of ingredients, calling only for butter, flour, and sugar. In fact, it's so simple that I plan to experiment with other add-ins just for fun, like the addition of garlic, pepper, and Parmesan cheese to form savory, bite-sized shortbread coins that can be served with any manner of cheese or charcuterie. Blue Cheese Shortbread Crackers

For an all-natural version of cheese crackers worthy of serving at a party, OnSugar blog Fresh Tart turns to blue cheese and butter to create melt-in-your-mouth blue cheese shortbread.

For an all-natural version of cheese crackers worthy of serving at a party, OnSugar blog Fresh Tart turns to blue cheese and butter to create melt-in-your-mouth blue cheese shortbread. I'll confess. I love Cheez-its. I don't want to know what cheez is, and I endeavor to not eat the things (I forbid them from the house...most of the time), but I'm moved by their flaky, tangy, processed perfection. Addictive little beasts, grrr. But as tasty as they are, I'm obviously not bringing them to a party, at least not in this century. (I've brought much worse to parties, including little cocktail pumpernickel slices spread with herb processed cheese and topped with slices of Oscar Mayer salami cut into Christmas-tree shapes. It took me forever to free-form all those little salami trees. I...yeah. That was a long time ago.) These better days, I think it's nice to bring a host/ess something I've actually made myself, mad scissor skills aside.

The Basics: Shortbread Cookies

Buttery and delicious, a simple shortbread cookie recipe should be in every home baker's arsenal.

Buttery and delicious, a simple shortbread cookie recipe should be in every home baker's arsenal. Why? Because shortbread is such a wonderfully versatile dessert.

It can be used as the base for lemon and other bars. It's easy to cut into fun shapes, dip in melted chocolate, wrap in pretty packaging, and give as a gift. Spread with a sweet filling, like nutella or dulce de leche, and you've got quick sandwich cookies. For an elegant dinner party dessert, serve alongside scoops of ice cream or pot de cremes.

However, my favorite way to enjoy the melt-in-your-mouth treat is right out of the oven with no frills, but a generous sprinkling of festively-colored sugar. I've tried many recipes and always come back to this one by the Barefoot Contessa. She is, after all, the master of making blissful basics. See her technique and read more

Come Party With Me: Cookie Swap — Menu

During December, many people host cookie swaps.

During December, many people host cookie swaps. Organizing a festive cookie party is a great way to cut back on your holiday baking. Instead of making a million cookies, you and your friends each bake a different cookie. Then you get together and trade cookies; everyone walks away with an assortment of treats. To ensure that you don't end up with 10 dozen chocolate chip cookies, ask your guests what type of cookie they will bring. Throw the party on a Saturday or Sunday afternoon in between lunch and dinner.

Don't worry about serving a bunch of appetizers, but do offer a couple of easy nibbles like mixed nuts, cheese, and homemade savory cookies. Thyme, lemon, and sea-salt shortbread is crisp and buttery, while blue cheese pecan crackers are rich and addictive. You'll have to wait until tomorrow to see my suggested sweet cookie recipes, but you can learn the techniques for the salty shortbread and cheesy crackers when you keep reading.
