In past Thanksgivings, homemade turkey stock has been conspicuously absent from my kitchen game plan. Despite my usual insistence on simmering up stock for other applications, I never quite felt up to the task of making turkey stock. Perhaps I reasoned that it would take me away from the laundry list of other kitchen rituals involved with the big day, or maybe I was put off by my assumption that it required an excess of planning.

Either way, I've learned my lesson. It turns out that all it takes is a few minutes spent chopping, one or two absent-minded stirs of the pan, and less than an hour of unattended time for the requisite ingredients to make friends and mingle away on the stove. The result speaks for itself; never in my many gravy-devouring years have I tasted a batch that is as intensely turkey-flavored, complex, or as all-around delightful. It's more than worth the minimal effort in my book.

When it snows, I make soup.  And complain.  And take ridiculously long baths.  And pretend like I'm still on vacation.

John and I were in Costa Rica last week and it was...heavenly.  Too heavenly.  I have been in a massive funk ever since we returned.

The lovely view out of our home bedroom window that I normally love?  Hideous to me.  Who wants to see colorless snow after a week of blue-green ocean views?  I was blessedly, easily warm the whole time we were there.  I basked (too much) in the sun, swam in the ocean, listened to music, read two great books, and messed around on Twitter (the hotel had perfect wifi and ATT service, even on the beach) with my foodie friends while John surfed.

I had a blast.

Soup's On: Roasted Red Pepper Soup

The other day I had friends over for dinner, and since it was raining, I wanted to serve a comforting meal like soup and sandwiches.

The other day I had friends over for dinner, and since it was raining, I wanted to serve a comforting meal like soup and sandwiches. The classic soup and sandwich combination is tomato soup and grilled cheese, but I was in the mood for something a little different, something like roasted red pepper soup and grilled cheese sandwiches with prosciutto (stay tuned for that recipe!).

This easy soup, which comes together in about 45 minutes, consists of jarred roasted red peppers, fresh thyme, onions, and garlic. It's hefty thanks to one potato and creamy due to the dollop of mascarpone cheese on the finished product. Although the recipe doesn't call for it, I garnished the soup with a drizzle of Sriracha sauce. It gives the rich, velvety soup a spicy kick. Want the uncomplicated recipe? Keep reading.
