What to serve, I pondered, with a hearty pasta and a rich frozen dessert? The answer turned out to be a hot, creamy spinach dip, made healthier with the addition of reduced-fat sour cream and a greater proportion of spinach. Light yet indulgent, it was a nice, green start to what would be a filling meal. I can't wait to serve it again during March Madness playoffs. Thankfully, I found a Martha Stewart recipe that calls for lowfat ricotta cheese and cannellini beans. The warm appetizer is definitely a little thicker than a regular spinach dip, but it's packed with delicious flavor. St. Patrick's Day is one of my favorite holidays because everyone goes to the local pub, drinks beer, and is in a great mood. It's also a fabulous time to meet guys, so this year I'm inviting all my single ladies over for appetizers before we head out to the bars. Since some of my girlfriends are vegetarian, I'll offer a meat-free menu of green snacks. To start there's green goddess dressing with green crudités like celery sticks, green beans, edamame, and sugar snap peas. A warm spinach artichoke dip is decadent, but healthy when served with pita wedges. Slices of pizza topped with fresh pesto and arugula are delicious and filling.
Broccoli soup is pretty and portable when placed in small tea cups or shot glasses. To look at these green themed recipes, perfect for any St. Patty's Day soirée, read more
Last week I planned KatieSugar's 1st birthday party with a menu that was packed with traditional all American party food, but in miniature sizes. I know that some of you are on diets and in many cases my food is not the most figure friendly. Since I put together a great menu that can be adapted to any sort of party, I thought it would be nice to offer the same menu but with healthier versions. Luckily our friend Hungry Girl does this daily and I took some help from her for this one.
Start with a twist on my Mini Crab Cakes by serving her healthier crab stuffed mushrooms. Instead of making my indulging (and perhaps thigh-bulging) Spinach Dip, prepare HG's equally delicious version. Choose her de-pudged pigs in a blanket over my Mini Hot Dogs and pair them with her hamburgers. She's even come up with an almost calorie-free pink drink to wash everything down!
