Just Grill It: Caesar Salad

I love that a classic Caesar can be whipped up in a pinch, and now that we've hit grilling season, I experimented a little by charring lettuce leaves directly on the grill.

I love that a classic Caesar can be whipped up in a pinch, and now that we've hit grilling season, I experimented a little by charring lettuce leaves directly on the grill. By quickly grilling the romaine lettuce, I imparted a charred flavor that's irresistible with a creamy Caesar salad dressing.

Of course, every Caesar salad needs croutons, so I lightly coated slices of bread in olive oil before grilling them alongside romaine lettuce. I wasn't able to source fresh anchovies but picked up salted whole anchovies, which I rinsed and lightly grilled for a boost of fish flavor.

The result? A salad that makes for a great first course for any barbecue party — or, with grilled chicken, a complete Summer meal. Heat up the barbeque and get to grilling this Summer Caesar salad.

There's something about the warm weather that makes me crave Mexican food. Spicy salsa, cooling guacamole, crunchy chips, and stuffed tacos. Everything is eaten with your hands and it's just so darn delicious. Recently, I gave into a craving and made these scrumptious steak tacos.

This sort of meal is great for entertaining. You simply make (or buy) the fixings and lay them out on the dining table. Then, you grill the beef and let everyone assemble their own tacos. I like this recipe because it doesn't require any marinade time. The meat is rubbed with a flavorful mixture of spices and only takes about 10 minutes to cook.

Tex-Mex Tacos Take No Time to Make

I'm all for tacos consisting of crispy corn tortilla shells, ground beef, and cheddar cheese.

His passion for the subject quickly became apparent as he made spicy jerk chicken tacos topped with red cabbage slaw and habañero hot sauce as well as an enticing stone crab and orange mojo stunner. He even proclaimed them a perfect food — "you can make anything a taco," he said — later admitting that they're a food he consistently craves, especially "late at night [after he's] had a few cocktails with friends." Here are a few tips and tricks the chef had to impart:

  • Prioritize textural contrast: Both of Flay's tacos had a crunchy element: a red cabbage slaw for the jerk chicken and a deep-fried blue corn tortilla for the stone crab. He emphasized waiting until the last minute to dress the slaw so that it would stay crisp.
  • Overseason taco fillings. "Otherwise, it's going to be fighting through the tortilla," he said. A bland tortilla can overpower the other components, making for an uninteresting bite.

A simple carb-on-carb sandwich might slip into the mix, but otherwise my plate is fully loaded with reheated turkey, stuffing, mashed potatoes, all the fixings (heavy on the gravy), and nothing else. But after a marathon day in the kitchen, I have little desire to repurpose leftovers in any ambitious manner.
