In Texas, much like the cattle that dot the Lone Star State, Tex-Mex dishes like enchiladas, queso, and chimichangas dominate. As a native Houstonian, I've devoured more than my fair share of Tex-Mex fare. Nonetheless, I have a deep, dark confession to make: I've never understood the real difference between beef tacos (like tacos al carbon) and fajitas. After all, they're both hot Mexican plates that involve wrapping tortillas around sizzling meat. So is there really even a difference? Turns out there actually is. Lisa Fain of the Texas cooking blog Homesick Texan helped set the record straight: "The difference between a fajita and a taco is that the former refers to a type of meat, while the latter refers to a method of presentation," she explained. Cinco de Mayo is finally almost here, and we're already drooling over the fiesta we plan to indulge in tomorrow. Here at Yum, we're pretty partial to tacos of all kinds. Hard shell, soft shell, chicken tacos, fish tacos — you name it, we'll happily eat it with a margarita or cerveza! There's something so satisfying about the simple combination of meat, salsa, and tortillas. Whether or not it's your favorite Mexican dish, what do you prefer in your tacos?

Pork Two Ways: Tacos and Posole

We love repurposing leftovers, and from the looks of it, Lauren does too. Here she shares the story of pork two ways.
I had picked up pork at my local butcher, but wasn't completely sure how I wanted to prepare it. Using what I had on hand and of course, not measuring, I browned the meat, caramelized onions and garlic, and roasted/cleaned two poblano peppers. For even more flavor, I ground up cumin and crushed red pepper flakes and placed everything in the crock pot. I added just enough chicken broth to just about cover the meat and let it cook over night. The next morning, the pork was incredibly tender and perfect for tacos!

There was still a ton of pork, but I am not one for repeat dinners, so I picked up a couple cans of hominy and added it to the pork along with some more chicken broth for a makeshift pozole. The soup topped with cilantro, avocado, salsa, and lime juice was absolutely scrumptious. I love when simple dishes with no recipe turn out so well, I am sure I will be making this again! Sorry about not snapping a photo of the tacos but trust me they were tasty!

I took this picture after...6 pm!  That is so outstanding I can barely contain myself.  It's been a long, dark winter in Minnesota and while it's still cold as hell, with a thick blanket of dirty snow covering everything (the color of despair as my Twitter friend @ChefSpencerGray called it, perfect), there is light.  Lalalight!

Taco night is a regular thing in my house since they are an easy weeknight dinner.

Taco night is a regular thing in my house since they are an easy weeknight dinner. However, I've gotten bored eating the same filling, so I started exploring more authentic options on Rick Bayless's website. The first one to catch my eye was this quick chicken recipe with a variety of greens including chard, spinach, and arugula — all topped with Mexican sour cream and freshly roasted poblanos. The recipe only calls for two chicken breasts, but the onions, greens, and poblanos bulk up the filling. There was plenty for my party of four and a little left over. I topped the tacos with chopped scallions and a squeeze of lime juice; next time I'll add cilantro. Hard tacos, soft tacos: what's not to love about this versatile dish that can be filled and topped with an endless array of ingredients? Taco Bell to Give Away Free Beef Tacos

Taco Bell, it seems, is not done defending its beef tacos.

Taco Bell, it seems, is not done defending its beef tacos. After being sued by a woman who claimed the chain's beef tacos, which contain only 15 percent protein, were falsely advertised, the Tex-Mex eatery took out full page advertisements in major publications to explain the truth behind its seasoned beef. Today, Taco Bell has taken it one step further by announcing the world's largest taco giveaway.

The company plans to thank Facebook fans for their support throughout the ordeal by giving away 10 million free beef tacos. To get a free taco, all you have to do is "like" Taco Bell on Facebook, then you'll be granted access to print a coupon for the taco. Although I haven't had Taco Bell in years, all this taco talk has made me crave the fast food joint's crunchy, meaty tacos. Perhaps I will take them up on the offer. How about you?
