If desired, run a small paring knife along the back outer side of the shrimp to remove the intestines (the black dot seen here). While most restaurants perform this step, it is not necessary.

thanks for this info. last time i did it at home, I removed intestines from about half, but it took SO LONG that I gave up on the other half. I was a bit worried though that we could get sick from it, even though it was being cooked... Phew!
