My boyfriend's parents made me some Tea eggs before just because they heard I liked them and my college roommate's dad would make these and send her home with them and I'd gobble them up!

Materials for each person
Eggs White 5 pcs
Longjing Tea Leaves 20 g
Seasoning
Salt 1/3 tbsp
Rice Wine 1/5 tbsp
Corn Flour 3 tbsp
Steps
1) Place tea leaves inside small size stewing container
2) Wash with hot water for few seconds, pour out water
3) Add in hot water to half full of container, cover cup lid and make tea
4) Take out tea leave from container when it turns cool
5) Add seasoning, egg white, stir gently and mix well, cover the lid
6) Place container into a steam case, steamed 10 minutes by low heat, serve
Remark
tbsp - table spoon
If you like concentrate tea's favor, use more tea leaves as 30 g.
It's not easy to get the steaming time right, or the egg custard get bubble and hard.....
It's not easy to get the tea volume right too, or, the egg custard is too soft as soup.......

Canned Bamboo Shoots 100 g
Chives 50 g

Spring Roll Sheet 10 sheets

Oyster Sauce 2 tbsp

Cornflour 1 tbsp

Steps
1) Soak dry black mushroom, remove stalks and shred
2) Cut bamboo shoots and chives into short sections
3) Shred chicken meat, add seasoning 1 and marinate for 15 minutes
4) Heat wok with 2 tbsp of oil, stir fry all shredded materials
5) Add seasoning 2 and stir fry well, pour in sauce
6) Stir fry until dry, dish up and whisk the egg well
7) Put one spring roll sheet on flat surface, as a rhomb
8) Add some fried material on center and make it into a long shape
9) Pack the sheet from the bottom corner to the central, cover all materials
10) Then left and right, roll the packed materials "upwards" until well rolled
11) Stuck the upper edge by whisked egg, finish packing steps
12) Heat wok with plenty of oil, pour in packed rolls when oil is warm
13) Stir the frying rolls until oil is fully heat, turn in mid-heat
14) When rolls turn into golden or light brown, dish up and serve

1 large bag nacho chips
2 cups shredded hot pepper jack cheese
2 cups shredded cheddar cheese
2 cups shredded traditional Monterey jack cheese
1/2 cup chopped green onions
1 cup diced tomatoes
1 can black beans, drained and rinsed
1/2 cup chopped cilantro
salsa, guacamole, sour cream, optional toppings
- Preheat the oven to 350 degrees F.
- Put half the chips on an oven proof platter and sprinkle with half of each cheese followed by a portion of the remaining ingredients.
- Top with the remaining chips and toppings ending with a layer of the remaining cheeses.
- Bake until the cheeses have melted about 10-15 minutes.
- Serve immediately with salsa, guacamole, and sour cream, if desired.
Serves 5.

Golden Potato-Leek Soup with Cheddar Toasts
Soup:
1 tablespoon butter
3 cups thinly sliced leek (about 3 medium)
6 cups cubed peeled Yukon gold potato (about 2 1/4 pounds)
2 cups water
1/2 teaspoon salt
2 (14-ounce) cans organic vegetable broth (such as Swanson Certified Organic)
2 thyme sprigs
Cheddar Toasts:
8 (1/4-inch-thick) slices diagonally cut sourdough French bread baguette
Cooking spray
1/2 cup (2 ounces) shredded sharp cheddar cheese
1/8 teaspoon ground red pepper
Remaining Ingredients:
1/3 cup whipping cream
1/4 teaspoon freshly ground black pepper
Thyme sprigs (optional)
Preheat oven to 375°.

Try this amazing Pad Thai sauce from A Taste of Thai. I purchased the rice noodles and made it with pork, bean sprouts, peanuts, cilantro and limes - HEAVEN. My husband and I were licking our plates clean!
CHEDDAR-BACON BISCUITS
3 cups all-purpose flour
4 tsp baking powder
3/4 tsp salt
8 tbs/1 stick cold, unsalted butter
1 cup of finely shredded cheddar cheese
1/3 cup chopped fresh chives
6 slices bacon, finely chopped and fried until crisp
1 1/2 cups milk
1. Position rack in lower third of oven. Preheat to 400 degrees F.
Raspberry Margarita

2 ounces tequila
1 ounce Triple Sec
2 ounces raspberry puree (using fresh or frozen raspberries puree in a processor and push through a fine mesh sieve)
4 ounces homemade margarita mix (2 parts fresh lime juice, 1 part fresh lemon juice, sugar to taste)
- Mix all ingredients with ice in a blender until smooth.
- Alternately stir all of the ingredients in a glass and pour into glass filled with ice.
- Serve both the blended and the on the rocks versions in a margarita glass.
Serves 1.

MARINADE
1 teaspoon cornstarch
2 teaspoons sherry wine or red wine
2 teaspoons water
2 teaspoons soy sauce
FILLING INGREDIENTS
1 1/2 lbs boneless skinless chicken breasts, diced small
5 tablespoons vegetable oil or peanut oil
1 teaspoon minced fresh ginger or grated ginger
2 teaspoons garlic, minced
1/2 cup green onions, minced
1 cup shiitake mushrooms, minced
1 (8 ounce) can bamboo shoots, minced
1 (8 ounce) can water chestnuts, minced
1 (6 ounce) package chinese cellophane noodles, cooked to pkg. directions
COOKING SAUCE
1 tablespoon hoisin sauce
1 tablespoon soy sauce
1 tablespoon sherry wine or red wine
2 tablespoons oyster sauce
2 tablespoons water
1 teaspoon sesame oil
1 teaspoon sugar
2 teaspoons cornstarch
lettuce leaves, washed and taken off the head but left whole
Mix all ingredients for "cooking sauce" and set aside.
