This was delicious! I recommend eating them warm, or at least heating the tortilla for 20 seconds--they roll up easily without ripping. I served these egg rolls, but they'll be great for a cold lunch as well.

A favorite of mine! I doubled it and used just over 2lbs of chicken and it wasn't quite enough chicken...so I recommend for feeding four people, doubling the recipe and using 3-3.5lbs of chicken.

My step mother made this for Christmas in 91 - while I was pregnant with my oldest son. It tasted so good, I just knew she put hours into the cake so would ask her to make it for me for years. She finally gave me the recipe instisting it was easy to make.

Riskrem (Rice cream) is the Norwegian Christmas dessert. So very delicious it is worth waiting a year for. =)
I saw this on Tastespotting.com and had to try it. Originally the recipe did not call for tofu but I really had a desire to add it and add some quality protein to the dish.
The original recipe calls this a pie, kind of like a quiche but I think of it more like a layered casserole.
With the help of my mother, I came up with a tidy, simple recipe. Keep in mind that I didn't actually measure the ingredients as I cooked, so I’m only giving approximations, feel free to experiment! This is a nice little fall dish, written for one serving but can be easily adapted for more people.

Makes 9 servings
Prep Time: 5 min
Cook Time: 15 min
Ingredients
3/4 cup lowfat sharp Cheddar cheese
1/4 cup fresh grated Parmesan cheese
1 3/4 cup reduced fat all-purpose baking mix
1 cup 1% low-fat milk
1/2 tsp black pepper
1/4 cup lowfat ham, finely chopped
Mix cheeses, milk and baking mix together; add pepper and ham. Mix well and spoon into lined muffin pans 1/2 full. Bake in preheated 400 degree oven 12-15 minutes or until golden brown.
