You may try putting the cookies in the bottom of the cup then putting in the soft ice cream - that way you can chocolate coat the cookies and ice cream at the same time... yum!

WOW these look amazing! Though I feel like those cookies are so flimsy I would probably eat with a spoon — MMMMMM delicious.

I would definitely combine cookies the next time, stacynelson that is a great idea! Molly, those cookies can actually stand up in the Popsicle because they are creme filled, so the creme freezes and makes them stronger! No spoon needed for a Popsicle!

Smuckers makes a bottle of chocolate that you can pour on top of ice cream or whatever you choose and it hardens. Its called Magic Shell!

Oh, I love Magic Shell it is good but you can make it at home as well with melted chocolate chips and a little of oil! I will just have to get a squirt bottle for next time!

Thanks for all of the tips!

You could also line the cup with melted chocolate first, let it freeze until it hardens, then put the ice cream in the chocolate lined cup.

Would this recipe work with an orange sherbert/vanilla ice cream combination with white chocolate shell? My sweetie is a devoted 50-50/Dreamsicle fan. I'm wondering if the sherbert would be too soft or melt too quickly.
