    I really like Snofrisk cheese. It is really soft and creamy...like buttah. The smoked salmon version looks soooo good. *drool* I know what I'm gonna buy at the store this weekend.

    * I never the toast the bread when I make open face sandwiches. I use just about any bread from the bakery. I especially darker breads like rye bread.
    * I've seen Snøfrisk at Costco in Canada before (I think) and at some grocery stores (that, I'm sure). They might have it somewhere in the USA. Otherwise a mix of cream cheese and goat cheese would work.
    * I buy the hot smoked salmon from the Fish Market, Party. I've never tried making my own yet. The guy from the market told me that the one from Bergen is covered with pepper and spices and sprayed with Cognac when it's almost ready. It's really good!

    Looks really fresh and light. I'll try the salmon and apple(only I'll slice the apple thinly) on soft pumpernickel. I just can't eat toasted bread in a sandwich, it cuts the roof of my mouth.

    i've never really been that into open faced sandwhiches but i think that they do have their place. the one with the peppers and spreadable goat cheese looks GREAT so i think that it's something that i can try - but for some reason, i kind of feel like if i'm eating bread i should just have the 2 pieces so i can hold onto it with both hands rather than eat with a fork and knife.

    being of nordic blood, my mom and grandparents are from norway (arendal) and my aunts cousins and uncles still live there, I eat these sandwiches all the time! My favorite is the eggs and lox, or cream cheese and lingonberry.

    Well done, I love this post. Will bookmark it for lazy Saturday lunches. My boyfriend is a sandwich freak so I think he would appreciate a changed from grilled chicken ones.
