here's what i dont get about flan recipes. are you supposed to lightly coat the liquid sugar around the bottom and sides? or just pour the whole lot in? what about if im doing mini-individual portions?

2I've made both individual and full sized flans and each time I do I make sure to coat the entire bottom and sides of the dish. You want the caramel to ooze when you flip the flan onto a dish.
