Kraft's Orange Slices Get Singled Out

You may be impossibly in love with ricotta, feta, and manchego, but Kraft Foods is hoping you'll give its signature orange slices another chance. According to Advertising Age, the food company has begun a major push for Kraft Singles, its synthetic-cheese line of American, Swiss, and Cheddar cheese slices. Although the brand's natural cheese sales have declined amid the recession, processed cheeses such as Velveeta and Kraft Singles have helped to lift the segment's sluggish sales numbers. As a result, Kraft will continue to focus on marketing its Singles products with a grassroots promotion.

For its National Grilled Cheese Month Sweepstakes, Kraft has launched an ad hoc website that encourages consumers to write short essays about why they love Kraft Singles, so they can be entered into a weekly drawing for free packages of Kraft Singles.

Kraft is also backing the Seventh Annual Grilled Cheese Invitational. Organizers of the world's largest grilled cheese competition, which takes place in Los Angeles later this month, expect to turn out 5,000 grilled cheese sandwiches.

Recently our very own Nancita made a culinary pilgrimage to Minneapolis. She went on a quest for one of the nation's most infamous hamburgers, the Jucy Lucy. Created at a small, no-nonsense eatery, Matt's Bar, the Jucy Lucy is a hamburger with a molten cheese core. From the outside the burger looks like any old burger, but following the first bite, a stream of gushing, melted American cheese makes this burger far from ordinary. After seeing her pictures, I'm eager to make my own Jucy Lucy journey. How about you?

Macaroni & Cheese With a Butternut Twist

Who doesn't love comfort food with a twist? I certainly do, so naturally I was thrilled to experiment with this hearty version of the American classic: butternut squash mac and cheese. Although the finished dish is the vibrant color of the classic Kraft Macaroni and Cheese, this variation is substantially more flavorful. With the exception of peeling the butternut squash, the recipe is simple. This creamy, crunchy side dish has a mild, nutty flavor from the butternut squash that perfectly complements the sharp cheddar cheese. Butternut Squash Macaroni and Cheese

Ingredients

1 small butternut squash (about 1 pound), peeled, seeded, and cut into 1-inch cubes (about 3 cups)
1 cup homemade or low-sodium canned chicken stock, skimmed of fat
1 1/2 cups nonfat milk
Pinch of freshly grated nutmeg
Pinch of cayenne pepper
3/4 teaspoon coarse salt
Freshly ground black pepper
1 pound elbow macaroni
4 ounces extra-sharp cheddar cheese, finely grated (about 1 cup)
4 tablespoons Parmesan cheese, finely grated (1 ounce)
1/2 cup part-skim ricotta cheese
2 tablespoons fine breadcrumbs
1 teaspoon olive oil
Olive-oil cooking spray or butter, to grease baking pan

Directions

Preheat oven to 375°F. Combine squash, stock, and milk in a medium saucepan; bring to a boil over medium-high heat. Reduce heat to medium; simmer until squash is tender when pierced with a fork, about 20 minutes. Remove from heat.
Mash contents of saucepan; stir in nutmeg, cayenne, and salt, and season with black pepper. Stir to combine.
Meanwhile, bring a large pot of water to a boil. Add noodles; cook until al dente according to package instructions, about 8 minutes. Drain, and transfer to a large bowl; stir in squash mixture, cheddar, ricotta, and 2 tablespoons Parmesan.
Lightly coat a 9-inch square baking dish (4 inches deep) with cooking spray or coat with butter. Transfer noodle mixture to dish.
In a small bowl, combine breadcrumbs, remaining 2 tablespoons Parmesan, and oil; sprinkle evenly over noodle mixture.
Cover with foil, and bake 20 minutes. Remove foil, and continue baking until lightly browned and crisp on top, 20 to 40 minutes more. Serve immediately.

Serves 6.

France's Wine and Cheese Recovery Act

After embittered battles this year over Roquefort, beef, and Coca-Cola, France has decided it needs to show the rest of the world some love. Concerned that outsiders perceive two of France's top exports, wine and cheese, to be unapproachable, the French government, with the help of local producers, has agreed to spend $2.1 million to sponsor cocktail parties in 19 different countries. While many events around the globe will take place in large convention centers, the program in the US will be different. In an effort to capitalize on the American trend of entertaining at home to save money, the stateside program will be a series of parties subsidized in private homes. On June 4, 1,000 Americans will hold wine and cheese parties, complements of the French Ministry of Agriculture and Fisheries.

The American effort is being organized by House Party, a marketing company that arranges sponsored parties. Hopeful hosts simply apply online; if selected, they'll receive 15 percent discounts on select French wines, a free gift when they order online at specialized cheese websites, and a box of French-themed party gear. In return, hosts are required to throw a party, photograph and blog the event, and answer a survey about the products they tasted.

Mac Attack! Three-Cheese Mini Macs

Looking for something orange to serve at your Halloween bash on Saturday? Why not make these adorable and delicious macaroni and cheese bites?! This mac gets its vibrant hue from cheddar and American cheeses.

The technique is like a typical macaroni and cheese recipe, but the ratio of cheese to liquid is different. There's more cheese and less milk resulting in a dense, easily-compactable pasta with thick sauce.

Although the recipe calls for five minutes of cool time, I found that these macs, which are cooked in mini muffin pans, need about ten minutes to set. If you try to get them out of the pan too early, the pasta won't hold its shape and instead of mac and cheese minis, you'll just have a mac and cheese mess. To look at the recipe, keep reading.

Do You Like Processed Cheese?

As someone who loves the lowbrow as much as the highbrow, I eat processed American cheese more times a week than I care to admit. I'll never turn down a creamy Robiola, but I'll also never stray far from processed cheese, especially if it's on a burger or in cheese dip. I had been embarrassed about it, but recently I discovered I'm not alone in the food world. A Gourmet writer extolled its mild flavors and creamy texture, and Eric Ripert even holds some appreciation for it. Do you love it as much as we do?

First-Ever White House Farmers Market Makes Its Debut

Some legislation, like healthcare reform, might take a little more work for the White House to push through, but other initiatives, like the White House farmers market, are happening virtually overnight. Less than a month ago President Obama revealed that he and the first lady were looking into holding a farmers market outside the White House - and the plan's already come to fruition. At the opening of the FreshFarm market yesterday, Agriculture Secretary Tom Vilsack and Washington DC mayor Adrian Fenty spoke to a crowd of about 300 shoppers about the importance of eating healthy, local food.

The visitor that drew the most attention was Michelle Obama, who encouraged Americans to get to know the farmers that grow the market's food, and stressed the importance of fresh markets, particularly in urban deserts.

Located at 810 Vermont Avenue, just blocks from the White House, the market runs Thursday afternoons through the end of October, and accepts food stamps. It sells pasture-raised meats, artisan cheeses, milk, yogurt, fresh fruits and vegetables, breads, flowers, and preserves. DCers, have you had a chance to visit?
