College Cafeterias Are Going Trayless

In an attempt to cut costs and be more eco-chic, many college campuses have gotten rid of cafeteria trays. Instead, students are being forced to carry their meals on plates. The trayless cafeterias are seeing up to a 30 percent decrease in food waste, and with no trays to wash, the use of energy and water is reduced as well.

While school officials whole-heartedly embrace the change, many students are not happy. They dislike not being able to carry everything at once and are more inclined to spill.

I'm all for the discontinuation of cafeteria trays, not only because it helps the environment, but because it probably also causes students to eat less. Say good-bye to serving trays and say good-bye to the freshman 15! How do you feel about the trend?

Whether it's the biggest food holiday of the year or just another regular day, one thing is consistent: I wake up in the morning craving coffee! While I could easily brew up a batch at home, I prefer to pick up my espresso from the closest coffee shop - be it a small boutique cafeteria or large-in-charge Starbucks. The coffee common denominator? My order. I get the same thing every day: a double short cappuccino. I have a feeling I'm not the only one out there who starts her morning (or afternoon) with a routine cup of joe, so I want to know: What is your signature coffee drink?

Man Dies in Company-Sponsored Pastry Eating Contest

A few months ago we noticed that competitive eating was a rapidly growing "sport": This year, 1.5 million people tuned in to ESPN to watch the Nathan's Hot Dog Eating Contest, and there's now a game, Major League Eating, available on the Nintendo Wii. Yet while it's entertainment for many, it comes at a cost for others. Yesterday, Saurab Sabharwal, a 22-year-old engineer at Nokia-Siemens in Gurgaon, India, died during a company-sponsored pastry eating contest held in the office cafeteria. After choking, he ran to the bathroom alone, and was found unconscious an hour later. Colleagues called for an ambulance, which rushed him to the hospital, where he was pronounced dead. This isn't the first death we've heard of from competitive eating. Last month, a Taiwanese student fell unconscious and died during a steamed bun eating contest.

Does this call for further measures to be taken, so that others don't get hurt? Should a medical expert have been mandated to stand by, just in case? Or should government officials consider placing a ban on eating contests?

TV Dinners: Freaks & Geeks - Salisbury Steak

A little while back, geeksugar lent me the DVD set of "Freaks and Geeks." I fell in love with it immediately for so many reasons, I mean talk about capturing that ridiculous high school experience. One episode in particular really stood out to me, mostly for the lunch scene. The episode "Chokin' and Tokin'" starts off in the school cafeteria and Daniel (played by James Franco) and Nick (played by Jason Segel) are standing in line ordering Salisbury steak. When I heard him say Salisbury steak, I immediately thought of my elementary school cafeteria menu. Wednesday was Salisbury steak day and I haven't actually thought about Salisbury steak since then. I remember eating it as a kid (it came with mashed potatoes and green beans), but what is it?

Salisbury steak is ground beef mixture that is formed into a steak-shaped patty and fried (or broiled) like a steak. It's usually then smothered in some sort of a gravy or brown sauce. This recipe takes the general concept and spruces it up a bit with mushrooms and olive oil.

Salisbury Steak
From SheKnows

1 pound lean ground beef (sirloin, chuck or round)
1 teaspoon garlic powder
1/2 teaspoon seasoned salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1/4 cup chopped onion
8 ounces sliced button mushrooms
2 teaspoons instant beef bullion granules
1 teaspoon red wine vinegar
1/2 cup warm water
1 cup sour cream

Directions:
1. Combine meat with garlic powder, salt and pepper. Form 4 even oval-shaped patties.

2. Meanwhile, heat a nonstick skillet over medium heat and sauté onion and mushrooms in oil. Remove vegetables with a slotted spoon; set aside.

3. Place formed patties in pan and cook for about four minutes on each side, until no longer pink inside. Remove from pan; set aside and keep warm.

4. Dissolve bullion in warm water and vinegar. Add to hot pan and bring to a boil, stirring to loosen and incorporate any pan drippings. Reduce heat and slowly stir in sour cream. Add vegetables back to pan. Continue to cook and stir until heated through and barely bubbling. Divide sauce over meat patties.

Serves 4

Per serving: 7g carbs; 1g fiber; 23g protein; 39g fat; 111mg cholesterol; 453mg sodium; 476 calories

Tyler Florence to Open Restaurant in San Francisco

For the first time in 10 years, celebrity chef Tyler Florence is heading back to the restaurant business. With a scheduled opening for Summer of this year, Florence's first signature restaurant will be located at the new Hotel Vertigo (currently the York Hotel) in San Francisco. Florence believes Northern California is a foodie wonderland and is excited to work on the project. He states:

Having recently moved to the Bay Area from New York City, I wake up every day in awe of this true culinary utopia. I look forward to being a part of it, and bringing something very special to the City of San Francisco.

Star of three Food Network shows and People magazine's Sexiest Chef Alive, Florence's last endeavor in the restaurant industry was as executive chef at Manhattan's Cafeteria. I'm curious to see what this chef will cook up, how about you?

Too-Cool Lunch Tools
