Why not start the weekend with a spicy, fragrant chicken? This chicken is rubbed with a mixture of spices typical to Jerk seasoning: paprika, allspice, cayenne, and garlic powder. Although the recipe roasts the chicken in the oven, it would be equally delicious cooked on a grill.

Recently I visited Costa Rica. One of my first stops was a local farmers market set up in a small plaza in the town of Quepos. It was a bustling place with a variety of stands: fruit, flowers, vegetables and makeshift restaurants serving local fare.

The answer is somewhere in between. Creole cooking evolved out of the cosmopolitan culture of New Orleans, a city affected by the influx of international colonists who settled there after the Louisiana Purchase.

Waiting for a table at a Caribbean joint a few weeks back, my friends and I were enchanted — possibly a bit too enchanted — by the ginger mojito on the cocktail menu. Fresh and crisp like the traditional rum drink but with a kick of aromatic ginger to balance the tang of the lime and the coolness of the mint, these mo'gingeritos were so good, I had to replicate the recipe.
While I have no idea how the restaurant made its cocktail, my at-home version tasted remarkably similar.
