Using mangoes and lime, I made creamsicles with a tropical twist! &lt;/p&gt;
&lt;p&gt;The tartness of the lime zest perfectly complements the sweetness of the mango and the creaminess of the vanilla ice cream. Replicating the ice cream center of a creamsicle proved extremely difficult (believe me I tried!) so instead, I opted for a swirl effect by alternating layers of mango-lime puree and ice cream.  &lt;/p&gt;

&lt;p&gt;2 large mangoes&lt;br /&gt;
2 limes&lt;br /&gt;
1 1/2 cups of store-bought ice cream&lt;br /&gt;
1/4 cup sugar

&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Zest and juice the limes, reserving the zest and juice in a bowl.&lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;Dice the mangoes into small pieces: Cut the mango in half lengthwise. With a small sharp knife cut, score the flesh both horizontally and vertically. Pushing on the skin of mango, flip it inside out and cut off the flesh.  Add sugar and mangoes to the bowl with lime zest and juice. &lt;li&gt;Stir together cookie crumbs, zest, butter, and corn syrup in a small bowl, then press into bottom of loaf pan.&lt;/li&gt;
&lt;li&gt;Spread sorbet evenly over crumb crust and freeze 30 minutes to harden.&lt;/li&gt;
&lt;li&gt;While sorbet is freezing, slightly soften frozen yogurt.&lt;/li&gt;
&lt;li&gt;Spread evenly over sorbet and freeze, covered with plastic wrap, until firm, at least 2 hours.&lt;/li&gt;
&lt;li&gt;Using plastic wrap as an aid, lift frozen cake out of pan, then peel off plastic.&lt;/li&gt;
&lt;li&gt;Let stand 5 minutes to soften, then cut crosswise into 4 slices.&lt;/li&gt;

They&#039;re urging their customers to check out all five &lt;b&gt;Idol&lt;/b&gt;-themed Slow Churned Light flavors, and then vote for their favorite. This year the flavors are:&lt;/p&gt;

&lt;li&gt;Cheesecake Diva - cheesecake ice cream, brownie bites, and fudge swirls&lt;/li&gt;
&lt;li&gt;Cookies &#039;n&#039; Dreamz - chocolate ice cream with crunchy chocolate cookies&lt;/li&gt;
&lt;li&gt;Mint Karaoke Cookie - mint ice cream with chocolate cookies&lt;/li&gt;
&lt;li&gt;Most Orange-inal - vanilla ice cream with orange sorbet swirls&lt;/li&gt;
&lt;li&gt;One Split Wonder - banana ice cream with fruit and fudge swirls&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;You have until May 31 to vote, but if you cast your vote before April 29, you will be entered in a contest to win a trip to the &lt;b&gt;American Idol&lt;/b&gt; finale. The winning flavor will end up in the regular Slow Churned Light lineup.&lt;/p&gt;
&lt;p&gt;To get the nation ready for the new flavors, last year&#039;s &lt;b&gt;American Idol&lt;/b&gt; finalists Melinda Doolittle and Chris Richardson will go on a 20-city tour to perform and sample the flavors. They will actually give private living-room tours in each city.&lt;/p&gt;
&lt;p&gt;Do any of the flavors strike your fancy? I haven&#039;t tried any of them yet, but going on names and descriptions only, I&#039;ll have to vote for Most Orange-inal. It sounds like a creamsicle in an ice-cream format!&lt;/p&gt;

 <title>Summer of Sandwiches: Chocolate Citrus Biscotti with Orange Ice Cream</title>

It was almost like adding a creamsicle between two crispy crunchy cookies! The cornmeal in the biscotti really paired nicely and this ice cream recipe is one I&#039;ll definitely be making again. 2 cups (480 ml) freshly squeezed orange juice&lt;br /&gt;
1/2 cup (100 grams) granulated white sugar  (or to taste)&lt;br /&gt;
1 tablespoon fresh lemon juice&lt;br /&gt;
1 tablespoon orange zest (optional)&lt;br /&gt;
1 teaspoon pure vanilla extract&lt;/p&gt;
&lt;ol&gt;
&lt;li&gt;In a large bowl or measuring cup combine all the ingredients.&lt;/li&gt;
&lt;li&gt;Cover and place in the refrigerator until it is completely cold (several hours or overnight). &lt;/li&gt;
&lt;li&gt;Transfer the mixture to the container of your ice cream machine and process according to the manufacturer&#039;s instructions.&lt;/li&gt;
&lt;li&gt;Once made, transfer the ice cream to a chilled container and store in the freezer. If the ice cream becomes too hard place in the refrigerator for about 30 minutes before serving so it can soften.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Makes about 3 cups.&lt;/p&gt;
