Do or Don't: Bringing Outside Food/Drink Into a Restaurant

Last week, New York Times critic Frank Bruni broached the question of whether it's kosher to bring outside food or drink into restaurants. I've noticed at some places - most recently at a popular neighborhood coffeehouse - that a growing number of establishments have barred customers from bringing items (such as water) inside. Bruni cited an example of a friend getting turned away from brunch at a New York diner for arriving with a Starbucks coffee in hand, and argued in favor of the establishment. "It strikes me as a measure of disrespect," he writes.

What are your thoughts on the issue? Is Bruni being too extreme when he calls it disrespectful behavior?

Do or Don't: Putting Your Napkin on the Plate?

Yesterday DearSugar and I got into a debate about what you should do with your napkin when finished eating a meal. She said it was tacky and rude to put your napkin on the plate, but I told her I've done it before. What do you think? Is it bad manners to put your napkin on the plate when finished eating?

Thanksgiving Tip: Have Extra Place Settings Ready

Besides setting the table early - a couple of days before Thanksgiving - I also put aside several extra place settings. I'll stack two to three plates, chargers, napkins, and utensils in a hidden spot in the dining room.

My Thanksgiving is a "the more, the merrier" type of event, so if someone shows up with an unexpected friend or family member, all I have to do is grab the extra place setting that's ready and add another chair to the table.

It's one less thing to worry about, and will ensure that you don't have to go digging into your China cabinet looking for extra plates on the big night. Got a great Thanksgiving tip? Please share it with us below!

Off to Market: Serving Ware

Do You Eat at Restaurants That Don't Take Reservations?

A couple of weeks ago, I went to grab dinner at Pizzeria Delfina, my favorite local pizza joint. The trendy restaurant is always packed, and although it doesn't take reservations, I normally don't mind going early to put my name on the chalkboard. However, the wait ended up being two hours on a Wednesday night! I couldn't help but think of a friend who refuses to eat at restaurants that don't take reservations - no matter how good the food is. As my stomach growled, I wished I was more like her. Where do you side on the matter?

In Season: Butternut Squash

Perhaps the most-loved variety of Winter squash, butternut squash is to Thanksgiving what pumpkin is to Halloween: ubiquitous. Reasonably priced and versatile, with a long shelf life, these mild, vibrantly-hued veggies are at their best during the cold days ahead. When selecting, look for squash free of bruises, feel heavy for their size, and have a matte skin. Those with wider necks and smaller bulbs will have the most flesh. Because of its rigid exterior, butternut squash has an extended shelf life, and storing it for longer - up to a month, unrefrigerated, in a cool, dark place - can bring out its sweetness. The Basics: Mashed Potatoes

My mother can hardly be described as a home cook, but there are a few dishes she makes and excels at. Basic mashed potatoes are one of her specialties. When it comes to mashed potatoes, she prefers them as pure and simple as possible.

"I don't understand why people stir in garlic, herbs, and other things that make mashed potatoes taste like something other than potatoes. This recipe is for when you want mashed potatoes that taste like potatoes," she explained when teaching me the technique.

Her method is easy, but she employs a hand mixer to give the potatoes a light, pillowy, and incredibly smooth texture. Half and half is her liquid of choice, although heavy cream or milk make good substitutes. To look at the recipe, read more.

Mom's Mashed Potatoes
From Ellen Sweeney

Ingredients

4 medium-sized russet potatoes, peeled and quartered
salt
1/2 stick butter
1/2 cup half and half
freshly ground pepper, to taste

Directions

Fill a large pot with cold water. Add the potatoes and season the water with salt.
Bring to a boil over high heat. Cook, boiling at medium high heat, until potatoes are fork tender, 15-20 minutes.
Drain potatoes in a colander and return to the hot pot.
Add the butter. Using a hand mixer, beat the butter and potatoes to combine about 30 seconds.
Add the half and half and beat until potatoes are whipped and fluffy, 1-2 minutes. Serve immediately.

Serves 4-6.

Momofuku's David Chang Talks Sabbaticals and San Francisco

We've always been huge fans of New York chef and restaurateur David Chang: He was Sugar's pick for Best Restaurant Chef of 2008. By fusing innovative flavor combinations and haute kitchen techniques with casual dining, the Momofuku overlord revolutionized the restaurant scene in America.

What's most refreshing about Chang, however, are his irreverent demeanor and unapologetic opinions. Even though I'd interviewed him before, when I heard Chang and his co-author, New York Times writer Peter Meehan, were in town promoting their new bible, the Momofuku Cookbook, I couldn't resist chatting with them. His two cents on culinary trends, TV, and Top Chef Masters, after the jump.

Good Vegan Recipes/Products?

I have somewhat recently become totally lactose intolerant - as in, no butter, no cheese, no yogurt, and nothing dairy. I'm totally opposed to relying on drugs to allow me to eat something my body clearly doesn't want to digest, so I've been experimenting with vegan cooking. It's been great thus far, but as the holidays approach, I've realized that I can't eat most of what everyone else in my family can because it relies so heavily on butter, cheese, and cream for flavoring. I'm old enough to bring a dish to pass, so I was wondering if anyone knew of any good vegan substitutes or recipes? I say good because I've tried some very bad vegan food substitutes, and don't want to venture down that road again. I've found a good vegan butter substitute in Earth Balance margarine, and I've heard you can use coconut milk for creams (but I haven't confirmed this). If you have a suggestion for a cookbook, even, I'm all ears. So ladies, any suggestions?
