The demos, food, and cocktails weren't the only things at the South Beach Food and Wine Festival. There's also the tents, the people, and the beach. Basically, there was a lot going on!

While I've watched his television shows countless times, before the South Beach Wine and Food Festival, I had never seen Emeril Lagasse live. I wasn't disappointed: his demonstration was packed and the energetic chef was absolutely fabulous! He made Brazilian fish stew and talked about the importance of tasting your food while cooking.

This weekend I was lucky enough to join Anne Burrell, Bobby Flay, and Guy Fieri at the Food Network's South Beach Wine and Food Festival. While I learned some fun facts at Rachael Ray's Burger Bash on Thursday night, I also picked up more random tidbits while watching the celebrity chef demonstrations, so I've complied them in a quiz. In 2003, I attended a Super Bowl party where I had an amazing and different spinach artichoke dip. It was super creamy, rich, and flavorful, and I suspected that the spinach was fresh instead of frozen. It was the best spinach artichoke dip I've ever tasted.

These days, Food Network simply isn't enough to quell viewers' hunger for culinary programming. Last year, Scripps Networks Interactive announced its plans to replace lifestyle channel Fine Living with a new network, The Cooking Channel, debuting in the Fall of 2010. But today, the company revealed that The Cooking Channel will premiere earlier than expected, on Memorial Day, May 31.

For true mid-Winter comfort food, look no further than the wallet-friendly pairing of red beans and rice. The Louisiana specialty starts with "the holy trinity" of chopped celery, bell pepper, and onions then combines the veggie medley with red kidney beans and pork to be served over steaming hot rice.
You can follow a recipe that calls for canned beans and is easy on the time, number of kitchen steps, and ingredients.

It's my best friend's birthday this weekend, and to celebrate, a group of 12 friends are headed to my parents' cabin in the Sierra Nevada mountains. We'll enjoy lots of delicious foods and decadent desserts. To kick things off on Friday night, we'll make a huge pot of Italian chicken chili with pancetta crouton toppers.
