A couple of weeks ago, I hosted a last minute brunch. All of the food was made either the evening before or the morning of the brunch. The easy menu featured something for everyone, with dishes that were both vegetarian and meat friendly.

Leftover ham pairs great with eggs. An elegant way to serve eggs for dinner is in the form of a frittata. Besides ham, this hearty frittata is filled with potatoes, cheese, and caramelized onions.

This year, instead of planning a blowout bash for New Year's Eve, invite everyone over for a New Year's Day brunch. With all of the hustle and bustle from the holidays there was no time to make beautiful invitations. Luckily, we can download, print, and fill out our fabulous
New Year's party invite.

If you're not making
Thanksgiving dinner, think about inviting friends and neighbors who are cooking the bird over for an informal brunch. Keep things simple by hosting it open house style: people can stop by at their convenience Thursday morning. Call,
evite, or place a simple flyer in their mailbox.

How delicious does this
three cheese frittata look. Wondering who made it. None other than Martha Stewart's private chef.

Frittata
An Italian style omelet that typically has the ingredients mixed in with the eggs before frying. It's much firmer than your standard omelet because it's cooked very slowly over low heat and it has a round shape rather than the typical half moon shape. Usually it's finished under the broiler or flipped to ensure even cooking.

A great way to put a bounty of fresh summer zucchini to use is in the form of a tasty dinner frittata. Similar to a crustless quiche, frittatas are splendid quick fix dinners. I always have eggs in the kitchen and just combine them with whatever vegetables, herbs, and cheeses are leftover from previous meals or farmer's market trips.
