The Basics: Pear Crisp

A crisp is a deep-dish fruit dessert that's topped with a crumbly oat, butter, and flour mixture. It's a fabulously easy and versatile finish to any home-cooked meal. Once you know the basic topping ingredients, you can use whatever fruit is in season. Apple crisp is my dad's favorite, but when I made this, I decided to use pears. As the crisp bakes, the topping browns and the fruit caramelizes. Crisps are best enjoyed warm out of the oven and are especially wonderful when paired with a scoop of vanilla ice cream. This old-fashioned and comforting dessert is always a crowd pleaser, so learn how to make it and read more.

Pear Crisp
From Ina Garten

Ingredients

4 pounds ripe Bosc pears (8-10 pears)
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
For the topping:
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Directions

Preheat the oven to 350 degrees F.

Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.

For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment.

Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.

Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

Serves 8.

Let's Dish: Whose Recipes Do You Trust?

Whether it's custard that won't set or brittle fleur de sel caramels, we've all had failed cooking attempts. But when disaster strikes while closely following a recipe, it poses the question: Whose recipes can be trusted? And whose cannot? Most religious recipe followers seem to have culinary experts they've come to trust. For example, I find it hard to pick on anything by famed perfectionist Thomas Keller. Same with any cookbook that's been tested over and over again, like those from the late Sheila Lukins. And I've never been able to find fault in a recipe from Tyler Florence or Ina Garten. Whose recipes have you counted on time and time again?

Summer of Salads: Sun-Dried Tomato Pasta Salad

Whenever I'm cooking for a crowd and need a recipe that's portable, I always consider pasta salad. It's filling and easy to make a large batch. While sometimes I assemble a Mediterranean pasta salad with orzo and feta, I also like to make this recipe with tomatoes and mozzarella.

What provides this salad with incredible flavor is the sun-dried tomato dressing - it's so good I've enjoyed it with fish! Made in a blender or food processor, the dressing is a mixture of tomatoes, capers, and garlic, thinned with oil and red wine vinegar. A generous handful of parmesan cheese and fresh basil finish off the satisfying salad that only tastes better the next day. To make it before tomato season is over get the recipe now

Come Party With Me: My Birthday Party - Menu

Selecting a menu for a large dinner party is tricky. You don't want to choose dishes that require last-minute preparation, and you need to pick recipes that will feed a crowd (or can easily be doubled to do so) and consider the dietary needs of your guests. Luckily, the majority of my friends are adventurous eaters and while two girls don't eat meat, they do eat fish and cheese. Thus I'm serving a rustic Italian meal that's several courses long. When the party begins, plates of tomato and basil bruschetta and chicken-liver crostini will sit - ready to be devoured - on tables in the patio. I'll also set out an assortment of Italian olives, shards of Parmesan cheese, and chunks of salami.

At the table, the first course will consist of a crunchy, Italian salad with mustard vinaigrette. The second course is a decadent baked pasta dish oozing with melted cheese. For the entree, we'll enjoy a fragrant seafood stew with garlic toasts for dipping. This is a luxurious menu that's wonderful at any occasion, be it a birthday party or simply a Saturday night, so check out the recipes and read more.

Tomato, Red Onion, and Basil Bruschetta
From Bon Appétit

Ingredients

2 cups assorted cherry, grape, and teardrop tomatoes, halved (or quartered if large)
1/2 small red onion, finely chopped
3 tablespoons olive oil plus additional for brushing
3 tablespoons chopped fresh basil
1 1/2 tablespoons balsamic vinegar
1 large loaf focaccia, halved horizontally (reserve half for another use)
1 garlic clove, peeled, halved

Directions

Combine halved tomatoes, finely chopped onion, 3 tablespoons olive oil, chopped fresh basil, and balsamic vinegar in medium bowl; season tomato topping with salt and pepper. Topping can be made 2 hours ahead. Cover and let stand at room temperature, tossing occasionally.

Preheat broiler.

Place focaccia half, cut side up, on baking sheet; brush bread with olive oil. Toast bread in broiler until top is golden brown, watching closely to avoid burning, about 2 minutes.

Immediately rub cut side of bread all over with halved garlic, then cut focaccia crosswise into 4 equal pieces.

Top toasted focaccia with tomato mixture and serve.

Serves 4.

Ingredients

2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
1 medium red onion, finely chopped
1/2 lb chicken livers, trimmed and patted dry
1/4 to 1/2 teaspoon hot red-pepper flakes
3 tablespoon capers, rinsed and coarsely chopped
1/2 cup sweet (red) vermouth
1 cup chopped parsley
1 sourdough baguette, thinly sliced and toasted
1 lemon wedge

Directions

Heat butter and oil in a 12-inch heavy skillet over medium heat until foam subsides, then cook onion, stirring occasionally, until softened, about 3 minutes.

Add livers and cook over medium-high heat until undersides are browned, about 3 minutes. Turn livers over and add red-pepper flakes, capers, and 1 tsp salt. Cook until livers are just cooked through, 5 to 7 minutes more.

Increase heat to high and add vermouth. Boil, stirring, until slightly thickened and glossy, about 3 minutes. Transfer livers with a slotted spoon to a cutting board, then transfer sauce to a bowl.

Coarsely chop livers and add to sauce. Season with salt and pepper and gently stir in parsley. Spoon onto toasts and squeeze a little lemon juice over each.

Serves 8.

Make ahead: Liver mixture, without parsley, can be made 1 day ahead and chilled. Reheat, then stir in parsley, before spreading on toasts.

Ingredients

1 1/2 pounds spaghetti
1/2 pound imported Fontina, coarsely shredded (2 cups)
1/2 pound mozzarella, coarsely shredded (2 cups)
1/2 pound Gruyère, coarsely shredded (2 cups)
1/4 pound Gorgonzola dolce, crumbled
Salt and freshly ground pepper

Directions

Preheat the oven to 350°. Lightly butter a 9-by-13-inch baking dish.

Cook the spaghetti in a large pot of boiling salted water until al dente. Drain well and spread the spaghetti on a baking sheet; let cool.

In a large bowl, toss the Fontina with the mozzarella and Gruyère.

Spread one third of the spaghetti in the prepared baking dish in an even layer. Sprinkle 1/3 of the mixed cheeses and half of the Gorgonzola over the spaghetti and season with salt and pepper. Repeat with another layer of spaghetti, mixed cheeses, Gorgonzola and salt and pepper. Top with the remaining spaghetti and mixed cheeses.

Bake the spaghetti in the center of the oven until the top is golden brown, about 40 minutes. Let cool slightly before cutting into squares and serving.

Serves 8.

Make Ahead: The recipe can be prepared through Step 2 early in the day and covered with plastic wrap. Uncover the dish before baking.

Ingredients

3 tablespoons good olive oil
1 1/2 cups chopped yellow onions (2 small)
2 cups large-diced small white potatoes
2 cups chopped fennel (1 large bulb)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 cups good white wine
1 (28-ounce) can plum tomatoes, chopped
1 quart Seafood Stock, recipe follows, or store-bought fish stock
1 tablespoon chopped garlic (3 cloves)
1 teaspoon saffron threads
1 pound large shrimp, shelled and deveined (reserve the shells for the stock)
1 pound each halibut and bass fillets, cut in large chunks
24 mussels, cleaned
3 tablespoons Pernod
1 teaspoon grated orange zest
Toasted baguette slices, buttered and rubbed with garlic

Directions

Heat the oil in a Dutch oven or stockpot, add the onions, potatoes, fennel, salt, and pepper, and saute over medium-low heat for 15 minutes, until the onions begin to brown.

Add the wine and scrape up the brown bits with a wooden spoon. Add the tomatoes with their juices, stock, garlic, and saffron to the pot, bring to a boil, then lower the heat and simmer uncovered for 15 minutes, until the potatoes are tender.

Add the shrimp, fish, and mussels, bring to a boil, then lower the heat, cover, and cook for 5 minutes.

Turn off the heat and allow the pot to sit covered for another 5 minutes. The fish and shrimp should be cooked and the mussels opened. Discard any mussels that don't open. Stir in the Pernod, orange zest, and salt, to taste. Serve ladled over 1 or 2 slices of toasted baguette.

Serves 6.

Seafood Stock:
2 tablespoons good olive oil
Shells from 1 pound large shrimp
2 cups chopped yellow onions (2 onions)
2 carrots, unpeeled and chopped
3 stalks celery, chopped
2 cloves garlic, minced
1 1/2 quarts water
1/2 cup good white wine
1/3 cup tomato paste
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
10 sprigs fresh thyme, including stems

Warm the oil in the pan over medium heat. Add the shrimp shells, onions, carrots, and celery over medium heat for 15 minutes, until lightly browned.

Add the garlic and cook 2 more minutes. Add 1 1⁄2 quarts of water, the white wine, tomato paste, salt, pepper, and thyme. Bring to a boil, then reduce the heat and simmer for 1 hour.

Strain through a sieve, pressing the solids. You should have approximately 1 quart of stock. If not, you can make up the difference with water or white wine.

Makes 1 quart.

Rachael Ray, Ina Garten Nab Daytime Emmys

Rachael Ray, Bobby Flay, and Ina Garten took home top honors at the 36th Annual Daytime Emmys on Saturday night.

For the second year in a row, Rachael Ray won the outstanding talk-show prize for Rachael Ray, her daytime TV spot. Grill It! With Bobby Flay took home the award for best culinary program, beating out Barefoot Contessa, Giada at Home, Gourmet's Diary of a Foodie, and Simply Ming. But Ina Garten had her time to shine, too, prevailing with the award of outstanding lifestyle host for Barefoot, an honor bestowed on Giada De Laurentiis last year for her show, Everyday Italian.

But Giada De Laurentiis didn't go home empty-handed, either. Her newest project, Giada at Home, won for directing in a lifestyle program. Food Network's only Susan Lucci of the bunch? Sandra Lee, who lost both her nods - one in outstanding achievement in hairstyling and the other for makeup - to The View. Judging by her ultrapolished, Barbie-esque look at the awards, however, perhaps the Academy should reassess. Are you surprised to hear who the winners are?

Earlier today I teased your tastebuds with a goat cheese quiz, so it's only fair to share my current favorite goat cheese recipe: tomato and goat cheese tarts. Goat's milk has a high amount of fatty acids (much more than cow's milk) that provide the cheese with its characteristic tart flavor.

Goat cheese most commonly comes in a soft, spreadable, crumbly form, although there are hard aged varieties that have a consistency more like feta. Since goats are hardy animals that can survive in areas where cows cannot - parts of the Middle East, Africa, and the Mediterranean - goat cheese is the world's most widely consumed cheese.

I love the salty and creamy flavor of goat cheese and almost always have it in my refrigerator. To see how I paired the tangy cheese with ripe tomatoes to make this easy tart, read more.

I'm a huge fan of Barefoot Contessa's recipes, and this is another winner! The tart dough is simply puff pastry, but she adds layers of flavor with caramelized onions, Parmesan cheese, and chopped basil. I've served this tart many times, both as a main course and a side dish, in individual portions and as a slab. Sliced into smaller pieces it could even work as an appetizer.

Tomato and Goat Cheese Tarts
From Ina Garten

Ingredients

1 package (17.3 ounces/2 sheets) puff pastry, defrosted
Good olive oil
4 cups thinly sliced yellow onions (2 large onions)
3 large garlic cloves, cut into thin slivers
Kosher salt and freshly ground black pepper
3 tablespoons dry white wine
2 teaspoons minced fresh thyme leaves
4 tablespoons freshly grated Parmesan, plus 2 ounces shaved with a vegetable peeler
4 ounces garlic-and-herb goat cheese (recommended: Montrachet)
1 large tomato, cut into 4 (1/4-inch-thick) slices
3 tablespoons julienned basil leaves

Directions

Unfold a sheet of puff pastry on a lightly floured surface and roll it lightly to an 11 by 11-inch square. Using a 6-inch wide saucer or other round object as a guide, cut 2 circles from the sheet of puff pastry, discarding the scraps. Repeat with the second pastry sheet to make 4 circles in all. Place the pastry circles on 2 sheet pans lined with parchment paper and refrigerate until ready to use.

Preheat the oven to 425 degrees F.

Heat 3 tablespoons of olive oil in a large skillet over medium to low heat and add the onions and garlic. Saute for 15 to 20 minutes, stirring frequently, until the onions are limp and there is almost no moisture remaining in the skillet.

Add 1/2 teaspoon salt, 1/4 teaspoon pepper, the wine, and thyme and continue to cook for another 10 minutes, until the onions are lightly browned. Remove from the heat.

Using a sharp paring knife, score a 1/4-inch-wide border around each pastry circle. Prick the pastry inside the score lines with the tines of a fork and sprinkle a tablespoon of grated Parmesan on each round, staying inside the scored border.

Place 1/4 of the onion mixture on each circle, again staying within the scored edge.

Crumble 1 ounce of goat cheese on top of the onions.

Place a slice of tomato in the center of each tart. Brush the tomato lightly with olive oil and sprinkle with basil, salt, and pepper. Finally, scatter 4 or 5 shards of Parmesan on each tart.

Bake for 20 to 25 minutes, until the pastry is golden brown. The bottom sheet pan may need an extra few minutes in the oven. Serve hot or warm.

Makes 4 individual tarts.

Come Party With Me: Outdoor Concert - Menu

During the Summer, most cities host some sort of outdoor concert series. New York has Summer Stage in Central Park, in San Francisco's there's Stern Grove, and Chicago's home to Ravinia. While these events are about enjoying music in the open air, the food cannot be overlooked: a scrumptious picnic makes an outdoor concert! So this week pack a basket and head to your local amphitheater.

Steak sandwiches are a portable favorite, and Ina Garten's recipe with sautéed onions, arugula, and mustard mayonnaise will impress your friends. Make use of Summer's ripe tomatoes with a fresh tomato salad. When placed on a bed of watercress and drizzled with a blue cheese dressing, potato salad goes glam. Be sure to keep the salad's three components separate until serving. No picnic is complete without fruit, and watermelon cubes are a refreshing treat. To look at these recipes, read more.

Steak Sandwich
From Ina Garten

Ingredients

1 (12-ounce) 1-inch thick New York strip boneless beef top loin steak
Kosher salt
Freshly ground black pepper
Olive oil
2 yellow onions, sliced in rings
1/2 teaspoon fresh thyme leaves
1 recipe Mustard Mayo, recipe follows
2 mini focaccia buns, sliced in 1/2
1/2 cup baby arugula

Directions

Season the steak liberally with salt and pepper on both sides.

Heat 1 tablespoon of olive oil in a medium saute pan over high heat until it's almost smoking, then sear the steak on each side for 1 minute. Reduce the heat to low and cook the steak for about 7 to 10 minutes, turning once, until very rare in the middle. Remove to a plate, cover tightly with aluminum foil, and allow to sit for 10 minutes. Slice the steak into strips.

Using the same saute pan, heat 1 1/2 tablespoons of olive oil over medium heat. Add the onion and thyme and saute for 10 minutes, until the onions are brown and caramelized, stirring occasionally.

To assemble the sandwiches, spread a tablespoon of Mustard Mayo on the bottom half of each bun. Place a layer of the steak strips on top of the mayo, sprinkle with salt and pepper, and top with the caramelized onion rings. Place the baby arugula on top of the onion rings, and cover the sandwiches with the top half of the buns.

Makes 2 sandwiches.

Mustard Mayo:

3/4 cup good mayonnaise
1 tablespoon Dijon mustard
1 tablespoon whole-grain mustard
2 tablespoons sour cream
1/8 teaspoon kosher salt

Whisk the ingredients together in a small bowl. Serve at room temperature.

Ingredients

1/4 cup Sherry wine vinegar
1 large shallot, chopped
2 teaspoons Dijon mustard
1/2 cup olive oil
1/2 cup crumbled blue cheese
12 medium red-skinned potatoes, unpeeled (about 2 3/4 pounds)
Additional olive oil
2 bunches watercress, stems trimmed
3 green onions, chopped

Directions

Combine vinegar, shallot, and mustard in medium bowl. Gradually whisk in oil. Mix in cheese. Season vinaigrette to taste with salt and pepper.

Cook potatoes in large pot of boiling salted water until almost tender, about 16 minutes. Drain; cool completely. Cut potatoes into 1/4- to 1/2-inch-thick rounds. Brush rounds on both sides with oil; sprinkle with salt and pepper.

Prepare barbecue (medium-high heat). Arrange watercress on platter. Grill potatoes until golden and cooked through, about 3 minutes per side.

Mound warm potatoes atop watercress; sprinkle with green onions. Spoon vinaigrette over potatoes.

Serves 4-6.

Watermelon Squares in Campari
From Whole Living

Ingredients

One 5- to 6-pound watermelon, halved lengthwise
1/2 cup Campari (optional)

Directions

Using a very sharp knife, slice the rind from the bottom of each watermelon half. The halves will now lay flat on a cutting board.

Working from top to bottom, trim the rind from the watermelon flesh in 4 cuts, creating 2 large squares. Cut each square in half to make 4 smaller squares. Cut the squares vertically into thirds. Rotate counterclockwise and repeat the cut. Rotate once more counterclockwise and cut into thirds again.

Place on dessert plates and serve each with 2 tablespoons of Campari, if desired.

Serves 4.

Blueberry Muffins Two Ways - Beginner and Expert

Last Sunday, we made his favorite breakfast tart, but this week, I'll be taking advantage of the heaps of blueberries at the farmers market with home-baked berry muffins. I'll either make a traditional muffin recipe or mash blueberries up and include them in the batter for enhanced color and flavor. Get your mornings off to the right start when you read more

Come Party With Me: Annabelle's Birthday - Menu

FabSugar's delightful mother has volunteered to do the food for Annabelle's birthday party. Fab has requested a classic barbecue and some dog-friendly dishes. To get things started FabMommie will serve her excellent shrimp and pea salad. I tried it at the Bedazzle Bonanza and it's insanely scrumptious. Next she'll make two kinds of sliders: one for the people guests and another for the dogs in attendance. The first is an outside-in white cheddar cheese slider. The second is a combination of ground meat, cooked rice, and yogurt.

Before you serve this recipe, be sure to consult your vet and find out if the ingredients are appropriate for your pooch. Does this menu sound interesting? Get the recipes now.

Make Use of Summer's Berries With Ina's Pavlova

Ever since I saw Ina Garten make a berry pavlova on her Food Network show, Barefoot Contessa, I've fantasized about making one myself. The episode debuted in 2006 and here I am three years later, finally making the recipe! A pavlova is a dessert consisting of a meringue disk filled with whipped cream and chopped fruit.

Although it requires time and patience, the recipe is rather simple. The three components are made separately and then are combined just before serving. Ina's pavlova includes blueberries, but I subbed in cherries - feel free to use your favorite fruit.

The final dessert is sophisticated, scrumptious, and ideal for Summer entertaining. The outside of the meringue is crisp, while the inside is pillowy and marshmallow-like. The whipped sweetened cream forms a fluffy cushion for the perfectly ripe plump berries. To get started with your own pavlova you'll need the recipe so, read more.

Mixed Berry Pavlova
Modified From Ina Garten

Ingredients

4 large egg whites, room temperature
1 teaspoon cornstarch
Pinch of salt
1 teaspoon white-wine vinegar
1/2 cup sugar
1/2 cup confectioners' sugar, sifted
1/2 teaspoon pure vanilla extract
Sweetened Whipped Cream, recipe follows
1/2 pint fresh strawberries, hulled and sliced
1/2 pint fresh cherries
1/2 pint fresh raspberries
Triple Raspberry Sauce, recipe follows

Directions

Preheat oven to 200 degrees. Line a baking sheet with parchment paper. Using an overturned bowl or a cake pan as a guide, trace a 9-inch circle onto parchment. Turn parchment over, marked side down.

Beat egg whites, cornstarch, salt, and vinegar with a mixer on medium speed until foamy.

Gradually add sugar. Raise speed to medium-high, and beat until stiff peaks form, about 7 minutes.

Reduce speed to medium, and gradually add confectioners' sugar. Raise speed to medium-high, and beat until very stiff, glossy peaks form, about 7 minutes. Beat in vanilla.

Using a rubber spatula or a large spoon, spread meringue into marked 9-inch circle on prepared baking sheet, forming a well in center.

Bake until outside is firm and bottom lifts easily off parchment, about 2 hours. The inside should still be marshmallow soft. Turn off the oven, keep the door closed, and allow the meringue to cool completely in the oven, about 1 hour or overnight. It will be crisp on the outside and soft on the inside. When cool, carefully remove from parchment. Pavlova can be stored in an airtight container for up to 2 days.

Spread the top completely with sweetened whipped cream.

Combine the strawberries, cherries and raspberries in a bowl and toss with about 1/2 cup of raspberry sauce, or enough to coat the berries lightly. Spoon the berries carefully into the middle of the Pavlova, leaving a border of cream and meringue. Serve immediately in large scoops with extra raspberry sauce.

Serves 8-10.

Sweetened Whipped Cream:
1 cup cold heavy cream
1 tablespoon sugar
1 teaspoon pure vanilla extract

Whip the cream in the bowl of an electric mixer fitted with a whisk attachment (you can also use a hand mixer). When it starts to thicken, add the sugar and vanilla and continue to beat until firm. Don't overbeat!

Makes 1 cup.

Triple Raspberry Sauce:
1 half-pint fresh raspberries
1/2 cup sugar
1 cup seedless raspberry jam (12-ounce jar)
1 tablespoon framboise liqueur

Place the raspberries, sugar and 1/4 cup water in a small saucepan. Bring to a boil, lower the heat, and simmer for 4 minutes. Pour the cooked raspberries, the jam, and framboise into the bowl of a food processor fitted with a steel blade and process until smooth. Chill.

Makes 2 cups.
