If you've got a half an hour to spare, you can make time this Monday evening to have an epicurean feast with your loved ones. Impress them with a modern twist on the old Italian standby, linguine with clams. Switch up the traditional marinara sauce with a roasted red pepper purée, and use leftover mussels for a familiar replacement to clams.

With the farmers market now overflowing with verdant vegetables, it's easy for me to drop a pretty penny on produce like Spring onions and English peas.
Case in point: the other day, I bought just a little too much asparagus, reasoning I'd figure out a way to prepare it that would highlight its freshness.
Later that day, I emerged with a casual linguine toss with shrimp, asparagus, and basil that's perfect for every occasion, from a romantic meal to entertaining a dinner party crowd.

Linguine with clams is one of my all-time favorite meals. While sometimes I indulge in a creamy, cheesy version, I actually prefer a lighter variation like this one that lets the flavor of the shellfish shine. The simple sauce — a combination of shallots, garlic, artichoke hearts, and jarred tomato sauce — comes together in less than 15 minutes.

Although you may not think of canned tuna as a ingredient to use in pasta, I highly recommend you give it a try. Flavorful chunks of meaty packed-in-olive-oil tuna work best for this healthy, midweek meal. The greens and whole wheat pasta are lightly coated with a fragrant sauce before being topped with tuna.

Linguine with clams is one of my favorite recipes, so I'm constantly searching for new ways to recreate the classic Italian dish. This variation adds in scallops and white fish to make a robust, filling pasta. Diced tomatoes give the sauce a rich, red tint.

Linguine with clams: The dish is an Italian classic for a reason — because it's a crowd pleaser. Once upon a time, I didn't enjoy eating clams, but I would make an exception for linguine con vongole. The bounciness of the clams, the briny flavors, the chewy linguine flavored with white wine all come together to make the ultimate comfort dish.

Linguine and clams is one of my all-time favorite meals. I've made countless variations, sometimes with cream, other times with a ton of herbs or bacon. However, I've never made pasta with clams and chorizo!

On nights like these choose an elegant but simple pasta dish that can be put together in under 20 minutes. Light and vegetarian, this meal is made with briny olives, capers, and your favorite jarred marinara sauce.
