Prosciutto and melon is a classic Italian appetizer, but right now, the abundance of juicy, summery mango is too tempting to resist. Combined with the salty, cured ham, this tropical fruit works just as well, especially when freshly cut mint from your garden (or grocery store) is added to the mix.
To balance out the bold trio of mango, prosciutto, and mint, I went basic with the rest of the ingredients: bitter arugula to cut the sweetness, simple hollowed-out ciabatta for the bread, and mild mozzarella to meld it all together.

In terms of flavored vodkas, I've always enjoyed Absolut's more creative offerings. So naturally I was excited when I got my hands on a bottle of Absolut's newest flavor — Absolut Mango. Just because it's the middle of the week doesn't mean you can't enjoy a delicious steak dinner. Steak is actually an excellent option for a last minute meal because it cooks quickly and can be easily seasoned with a simple sauce or, as in tonight's recipe, a scrumptious chutney. Chunks of sweet potato are mixed with a chunky, mango chutney and sweet, dried cranberries.

I don't know how I missed this earlier, but June is Mango Month. Not that I need an excuse to devour mangoes. I can't get enough of this juicy sweet fruit, and I'm convinced that anyone who doesn't like mangoes has simply never had a good one.
