Whenever I have people over for a sit-down holiday dinner, I like to set the tone with a hunger-inducing salad as the first course. For my most recent dinner, I foreshadowed the Fall meal to come with a peppery medley of in-season produce.
This salad, with its salty, spicy, tangy, and sweet components, turned out to be the perfect way to get guests psyched for supper while still leaving plenty of room for the main course.

Tonight, think like the people of Southern France and serve your family a crisp, flavorful, and classic pissaladière. With its flaky crust and savory toppings, pissaladière is similar to a pizza without cheese or sauce. Instead the puff pastry is covered with sweet caramelized onions, fragrant fresh herbs, and nutty, salty anchovies.

Everyone from health experts to Rachael Ray has touted the benefits of olive oil. As demand for expensive, higher-quality olive oil has grown, however, so has the problem of fraud. Last year, Connecticut officials discovered that some of that state's olive oil was a little too slick.

Bobby Flay isn't the only celebrity chef to expand his brand in tough times. UK celebrity chef Jamie Oliver is launching a new chain of food stores that allow customers to create their own dishes under the guidance of professionals.
Chefs at the aptly-titled Recipease will teach eager home cooks how to prepare and assemble set dishes.

Recently I participated in a "quickfire challenge." I was asked to concoct an amuse-bouche for 20 people. However, I didn't know anything about the group I was feeding, so the bite had to be vegetarian with universally liked ingredients.

This weekend the Food Network debuts its newest show, The Cooking Loft. Like Secrets of a Restaurant Chef, the host of the show, Alex Guarnaschelli is the head chef of a popular New York City eatery, Butter. The Cooking Loft is an interactive show in which Alex teaches a group of students how to make several dishes with a specific ingredient.

One of my favorite seminars at the Food and Wine Classic was Tony Abou-Ganim's party punches and sangria class. A pioneer in the world of classic cocktail making, Ganim is known for establishing cocktail programs at prestigious bars in San Francisco, New York, and most recently Las Vegas. Referred to as the Modern Mixologist, Tony takes a culinary approach to cocktails and considers himself a "bar chef."
