Would You Go Vegan For 21 Days?

When I read that Oprah is going vegan as part of a 21-day cleanse, I thought: I could do that - if I had a personal chef! When well-prepared, vegan food can be quite delicious, and I've had some great gourmet meals at vegan restaurants.

But it's definitely a challenging way to eat, so I'd rather have someone cook it for me. How about you? Could you go vegan for 21 days?

Oprah Says Ciao!

Yesterday Oprah announced her yearly Favorite Things list. It's chock full of great gift items - um hello, I want that crazy fridge! - but there's one thing that you can run out and get yourself: Ciao Bella Blood Orange Sorbetto.

"I love it because the flavor is just so refreshing," said Oprah, and well, I couldn't agree with her more. The ingredients are all natural and the blood orange juice is shipped straight from Sicily. It's also amazingly flavorful and completely cleanses your palate. I've seen it at a few of my local grocery stores, but you can also order it online (4 pints for $32.95).

Today's Special: Sautéed Chicken with Cherry Tomatoes

Lately I can't get enough of cooked tomatoes. It all stemmed from an article I read in Rachael Ray's magazine about 6 months ago that talked about the perfect techniques for roasting tomatoes. Since then I have roasted, grilled, and sauteed little tomatoes until they are about to burst. I have used them in salads, appetizers, sandwiches, and pizza. The only dish I haven't tried cooked tomatoes in, is pasta. Well what am I waiting for, right? This is a super stylish chicken and pasta recipe full of vibrant color. Sautéed Chicken with Cherry Tomatoes
From Oprah

3 Tbsp. extra-virgin olive oil
6 boneless, skinless chicken breast halves (about 1 1/2 pounds)
4 cloves garlic, smashed and coarsely chopped
6 shallots, peeled and coarsely chopped
2 pints cherry or grape tomatoes, rinsed and drained
1 tsp. dried oregano
3/4 cup dry white wine
1/2 tsp. salt, plus more to taste
1/4 tsp. freshly ground black pepper
1 pound spinach angel hair pasta, cooked according to package directions

In a 12-inch skillet, a Dutch oven or a lidded casserole, heat oil over medium-high heat. Add half the chicken, and cook until golden brown, about 6 minutes total, turning midway through cooking time. Remove with tongs and brown remaining chicken breasts. Set aside.
Reduce heat to medium. Add garlic and shallots, and sauté until fragrant, about 15 seconds.
Add cherry tomatoes, oregano, white wine, salt and pepper, and sauté until wine reduces by a third, about 4 minutes, shaking the pan from time to time.
Return chicken to pan, cover, and simmer until chicken is cooked through and no longer pink, 5 to 7 minutes.
Adjust seasoning to taste. Serve chicken over angel hair pasta.

Serves 6.

Who says dishes that are packed with complex flavors have to take forever to make? Certainly not PartySugar, because I'm proposing that we make an intriguing and delectable dinner tonight in a little over 15 minutes! Shrimp is the perfect ingredient for quick cooking because it takes on the taste of the flavorings. In this case the surprising combination of jalapeño, orange peel, and thyme create a shrimp that is spicy, scrumptious, and full of layers. Serve the shrimp and tomato sauce over brown rice or whole wheat couscous for a healthy and delicious meal. Pair with a cold beer and you're in business. Make your grocery list and read more

Fire Roasted Tomato-Shrimp Veracruz
From Oprah

1 tbsp. olive oil
1 pound medium raw shrimp, shelled and deveined, tails removed (if desired)
4 medium green onions, sliced (about 1/4 cup)
1 medium fresh jalapeño or serrano chile, stemmed, seeded and finely chopped
1 tsp. grated orange zest
1 tsp. chopped fresh thyme leaves or 1/2 tsp. dried thyme leaves
1 14 1/2-oz. can fire-roasted diced tomatoes, undrained. (If fire-roasted tomatoes are unavailable, use regular canned diced tomatoes.)

In a 12-inch skillet, heat the olive oil over medium-high heat. Cook the shrimp, green onions, chile, orange zest and thyme in the oil for 1 minute, stirring frequently.
Stir in the tomatoes. Heat the mixture until it boils.
Reduce the heat; simmer, uncovered, for about 5 minutes, or until shrimp are pink and firm and sauce is slightly thickened, stirring occasionally.

Serves 4.

Nutritional information: 180 calories, 5 grams fat, 1 gram saturated fat, 172 mg of cholesterol, 400 mg sodium, 7 grams carbohydrate, 1 gram fiber, 24 grams protein

Dark and Stormy: Cheers to the Winter Solstice

Happy Winter Solstice! Today is the shortest day of the year (or the longest day of the year if you are in the Southern hemisphere). I love to make a meal that pertains to it being the longest, darkest day of the year. Soups, stews, and chilis are totally necessary tonight. As are a warm fire and a big blanket. I love to test out new cocktail recipes at home with my hubby. In honor of today being the darkest day of the year-and maybe even in some places stormy-I'm shaking up a cocktail called a Dark and Stormy. Dark and Stormy
From Oprah

3 ounces Reed's Ginger Brew or other ginger beer
Juice of 1/4 lime
1 1/2 ounces of Gosling Black Seal Bermuda Black Rum or other dark rum
Candied ginger for garnish

In a tall chilled glass or a glass filled with ice, add 3 ounces cold Reed's Ginger Brew, or other ginger beer, and juice of 1/4 lime.

Top with 1 1/2 ounces Gosling's Black Seal Bermuda Black Rum or other dark rum. Garnish with candied ginger.

Oprah Stirs the Pot With Free KFC Offer

Two days ago, Oprah offered her viewers a free coupon for KFC's new grilled chicken - complete with sides and biscuit. The promotion took off, and by the next day, Oprah's KFC coupons were the fifth most popular search on Google. But rather than getting recognition for offering her viewers bargain bites, Oprah's fallen under fire for the move.

Last year, the talk show guru was named PETA's Person of the Year for exposing the cruelty of the factory farm industry. But KFC buys its meat from Tyson, a company that has come under attack for supporting CAFOs (concentrated animal feeding operations). This conflict of interest has sent environmental media outlets into outrage; sustainable food blog Civil Eats called the free KFC offer "Oprah's most hypocritical move yet."

Moreover, the free KFC coupons have caused upheaval in stores. The demand for free chicken has overwhelmed many KFC franchisees: one manager at a midtown Manhattan outpost told customers the promotion was over for the day, prompting patrons redeeming coupons to hold a sit-in, refusing to leave the store until they received free chicken.

After all the backlash, I can't help but wonder whether Oprah regrets promoting the offer. Did you partake in the promotion? Do you think the free grilled chicken giveaway was a mistake on her part?
