Paula Deen's Awkward Appearance on the View

Food Network host Paula Deen appeared on The View this week to promote her new children's cookbook. Those who caught it know that it wasn't pretty to watch. Put the sassy Paula Deen and the straight-laced Barbara Walters together, and you get an uncomfortable dynamic.

As the ladies of The View sit behind a stupendous spread of fried chicken and other Southern comforts, Paula licks strawberry cake off her fingers and pictures of macaroni and cheese grace the background. Walters then forces the queen of Southern cuisine to answer a rather serious question:

This is a cookbook for kids. Obesity is the number one problem for kids today. Everything you have here is enormously fattening. You tell kids to have cheesecake for breakfast . . . Does it bother you that you are adding to it? No? Not at all?

Stunned, Deen bumbles something about moderation - "you know, we don't eat this every day" - to an unconvinced Walters. But Walters has a point. Not one food item in the supposedly kid-friendly spread could be considered wholesome and healthy. Yet, Barbara comes down hard on Paula. Who comes out on top? Say Cheese! Pimento Cheese

I am not from the South, so before this week, I had never tasted the comforting spread native to the region that's known as pimento cheese. However, I was eager to experience this seemingly exotic food, so I decided to make it. Pimento cheese isn't a type of cheese, but rather, a seasoned cheese mixture. The main ingredients are sharp cheddar cheese, jarred pimentos (a type of sweet succulent aromatic red pepper), and mayonnaise. The history of pimento cheese is fairly unknown, although it appeared in grocery stores and home kitchens somewhere in the early 1900s. It's delicious simplicity made it a hit during the Depression, and since then, pimento cheese has remained popular in the South. Paula Deen Reportedly Considering Talk-Show Gig

Rumors are buzzing that production giant Telepictures is looking to develop a morning show in the style of The View with none other than celebrity mom Kate Gosselin and Southern cooking queen Paula Deen.

TV host Paula Deen already has three Food Network shows under her belt: Paula's Home Cooking, Paula's Party, and Paula's Best Dishes. Although Deen signed a deal with Telepictures to host her own syndicated talk show, the series never happened. Now, industry sources say, the two are top contenders for a talk show hosted exclusively by mothers.

Telepictures' rep wouldn't confirm - or deny - speculation, although I can see how the duo might have a lot in common, considering Kate Gosselin recently penned a cookbook.

Dark Chocolate and Red Velvet Make a Scrumptious Sandwich

I celebrated the season premiere of True Blood this weekend with a southern classic: red velvet cake. Rather than make a layered cake, I opted to try a cookie variation. Traditionally the cake is iced with a vanilla cream cheese frosting; however, I was in the mood for something more decadent and concocted a dark chocolate cream cheese frosting. In addition to the sinful filling, to add a little crunch I sprinkled each cookie sandwich with roasted hazelnuts. The cookies are simple to make, but take into account that they spread, so avoid overcrowding the baking sheet. Don't feel limited to cream cheese frosting filling; a variety of ice creams would be a delectable Summer treat. Red Velvet Cookies With Dark Chocolate Cream Cheese Frosting and Roasted Hazelnuts
Adapted from Paula Deen

Ingredients

Cookies
1 1/3 cups all-purpose flour
2 tablespoons cocoa powder
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, room temperature
1 cup sugar
2 eggs
2 tablespoons buttermilk
2 teaspoons apple cider vinegar
1 teaspoon vanilla extract
1 tablespoon red food coloring
Dark Chocolate Cream Cheese Frosting
16 ounces cream cheese, at room temperature
2 cups roughly chopped dark chocolate (72% cocoa)
2 squares of baking chocolate
1 cup powdered sugar
1 teaspoon vanilla
1 cup roasted hazelnuts, roughly chopped

Directions

Preheat oven to 375 degrees F.
Mix together flour, cocoa powder, baking powder, baking soda and salt in a small bowl.
Cream together the butter and sugar until light and fluffy, about 3 minutes. Add the eggs 1 at a time.
Then beat in the buttermilk, vinegar, vanilla and red food coloring.
Once combined, add the dry ingredients to wet. Mix until thoroughly combined.
Onto a parchment lined sheet tray, drop batter using an ice cream scoop, forming 2-inch round circles.
Bake for 10 minutes, until baked through. Cookies should be cake-like and light. Allow to cool for a few minutes on the baking sheet, then remove to a wire rack to cool completely.
Make the dark chocolate cream cheese frosting: Melt all of the chocolate in the microwave roughly 2-3 minutes stirring occasionally.
Let chocolate cool. Add cream cheese, vanilla and powdered sugar and beat on medium low until well combined.
Spread frosting evenly on a cookie. Top with hazelnuts and another cookie.

Makes 12-15 cookies.

Something about the Southern queen of butter rubs me the wrong way. Still, her shows on the Food Network are among the most popular. I'm wondering: how do you feel about her?

Regis and Kelly Dress as Celebrity Chefs

For their Halloween special last Friday, Regis Philbin and Kelly Ripa dressed up in fourteen different costumes, four of which included celebrity chefs. Regis yelled at the audience as Gordon Ramsay while Ripa's Paula Deen munched on a butter kabob that she washed down with a glass of oil. The real Guy Fieri showed up to cook a flank steak with the "chefs." Later Kelly licked chocolate from a bowl as Nigella Lawson and Regis overused the word "Bam" pretending to be Emeril Lagasse. The funny show demonstrates that the popularity and success of celebrity chefsdom is still on the rise. Check out the clip below!
