The first step towards becoming an excellent guest is knowing when to arrive at the party. When hosting a dinner or an event, there is nothing I hate more than people whom show up early unannounced. Invitations are sent with a specific starting time for a reason and if your hostess is anything like myself she is running around adding finishing touches to her sauces, plating bite sized appetizers, polishing wine glasses, and lighting candles. (My aunt came 30 minutes early for a dinner once and the appetizers were still in the oven, I wasn&#039;t dressed and had curlers in my hair-you can imagine my complete and total mortification). Coming before the space and hostess is transformed into party ready is a complete and total no-no. Just don&#039;t do it. Unless personally asked by the hostess, do not come early and if for some crazy reason you end up getting off the freeway twenty minutes before the specified time call her to let her know there was no traffic and you will be arriving early so she can at least put on her party outfit and set out a bowl of olives. &lt;/p&gt;

 <title>Thanksgiving Tip: Have Extra Place Settings Ready</title>

I&#039;ll stack two to three plates, chargers, napkins, and utensils in a hidden spot in the dining room. &lt;/p&gt;
&lt;p&gt;My Thanksgiving is a &quot;the more, the merrier&quot; type of event, so if someone shows up with an unexpected friend or family member, all I have to do is grab the extra place setting that&#039;s ready and add another chair to the table. &lt;/p&gt;

JA:&lt;/b&gt; Spanish olive oil. It&#039;s the best. Piquillo peppers. Tuna packed in Spanish olive oil. &lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: What&#039;s your guilty pleasure food?&lt;br /&gt;
JA:&lt;/b&gt; I try to be a good role model for my young daughters and not commit too many crimes, but once in a while, I do have too many gin and tonics. Bombay Sapphire is my favorite. Some of my mixology friends think I don&#039;t have any refinement, but I don&#039;t care. &lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: When in the states, what do you most miss about Spain?&lt;br /&gt;
JA:&lt;/b&gt; The fish markets. America is very big, the fishing markets aren&#039;t right there. Barcelona is such a great fishing port with little fisherman who wake up in the morning early to get fish. Here, there are fisherman, but it&#039;s not the same freshness. Really good fresh fish is not as readily available for the average Joe. At the end, it is the ingredients that define the cooking of a country. &lt;/p&gt;

Alex Gauranaschelli:&lt;/b&gt; I think the most important thing people should learn from my show is how fun and easy cooking can be. All you have to do is something simple, make things special, more unique, more flavorful. &lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: What&#039;s your criteria when considering dishes to feature on your show?&lt;br /&gt;
AG:&lt;/b&gt; The show is topic driven. We have a very unique format. We first choose the ingredient - tomatoes, chicken, etc. - and than I pick my favorite recipes. I like to take a different approach, to teach people how to reinvent ingredients, reinvent the basics.&lt;br /&gt;

AG:&lt;/b&gt; I find the New York restaurant industry to be one big family. I&#039;m hoping it will be well-received, but honestly I&#039;m more worried about how my tomato recipes will look. &lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: What is your guilty pleasure food?&lt;br /&gt;
AG:&lt;/b&gt; What? Like stuff I keep hidden from other people? My homemade guilty pleasure is my mom&#039;s chocolate cake with caramel, we feature the recipe on the show. Of processed foods, it&#039;s a tie between Cool Ranch Doritos and Oreos. They are actually really good together. I like to make a little sandwich. It&#039;s quite appetizing, you get all salted up with the chips and cool it off with the sweet oreos. &lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: What did you have for lunch today?&lt;br /&gt;
AG:&lt;/b&gt; I&#039;m glad you asked me! I had a really chefy lunch. I had a salad with lolla rosso [a type of lettuce] and shallots. I made an omelette with local eggs and goat cheese and I cooked it really slowly until the goat cheese melted, then I rolled it up and put it on top of the lettuce. It was so good, it was like a religious experience. &lt;/p&gt;

AG:&lt;/b&gt; Wine.&lt;br /&gt;

Andrew D&#039;Ambrosi:&lt;/b&gt; Yeah, I&#039;ve finally got a coffee in my hand and am ready to start answering some questions.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;YS: Oh good, I&#039;m on the West Coast so it&#039;s pretty early. I&#039;ll try to keep up.&lt;br /&gt;
AD:&lt;/b&gt; Alright, let&#039;s go.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;YS: So how was the whole Top Chef experience for you?&lt;br /&gt;
AD:&lt;/b&gt; It was one of the weirdest, strangest, coolest experiences of my life.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;YS: Was it what you expected?&lt;br /&gt;
AD:&lt;/b&gt; I couldn&#039;t have ever imagined all the production that goes on behind the scenes. There&#039;s a lot of stuff that you don&#039;t get to see on TV.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;YS: Were you happy with how you were portrayed?&lt;br /&gt;
AD:&lt;/b&gt; I was portrayed as me. So well, sure. The editing, they did a great job cutting out weird one liners. But the one thing I had a problem with is that anytime I was in the top three and anyone complimented me, they showed me making a funny face instead of saying something intelligent. I definitely said things up there, but they showed a funny face instead. I guess that goes with the &lt;a href=&quot;http://www.yumsugar.com/1594165&quot; &gt;culinary boner quotes&lt;/a&gt;.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;YS: Are you okay with being the &quot;culinary boner&quot; guy in our pop culture world?&lt;br /&gt;
AD:&lt;/b&gt; It&#039;s bigger than life. Ha ha get it? [laughs] I don&#039;t know, I thought it was something that I said that was really fun, but then in my mind, I say some really funny sh*t. When they aired it at the end of that one episode, it definitely caught me off guard then.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;YS: In one of last night&#039;s exit clips, you said you were never going to talk to any of the other contestants again. Did you mean that?&lt;br /&gt;
AD:&lt;/b&gt; No, no. I still talk to these contestants, but I work a lot and I don&#039;t even talk to my family much. I have nothing against these people they&#039;re really talented chefs. This is just an experience we&#039;ve all had together. I mean, when we&#039;re 60 I&#039;ll call up Blaise and say [goes in to an old man voice], &quot;remember when we were on that show together?&quot; [laughs]&lt;/p&gt;
&lt;p&gt;&lt;b&gt;YS: So despite your heated time at judge&#039;s panel, I thought you bowed out pretty gracefully. What was going through your mind during all of that?&lt;br /&gt;
AD:&lt;/b&gt; I was really drunk [laughs], no don&#039;t put that. Okay you can put that. No, what was going on through my head. I was feeling, well I&#039;m one of the most enjoyable people on the show, now it&#039;s going to be called SuckFest 2008. [laughs] I displayed my enthusiasm, and I was not angry at the decision. I was upset that I was leaving and at the situation, but I wasn&#039;t angry.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;YS: Did you think you were going to be sent home?&lt;br /&gt;
AD:&lt;/b&gt; The judging is kind of erratic. It&#039;s not like I can say this person didn&#039;t follow the rules and they&#039;re going home, because this person did. A &lt;a href=&quot;http://www.yumsugar.com/1574523&quot; &gt;few episodes before&lt;/a&gt;, if I recall correctly, someone didn&#039;t use polish sausage and used fish instead. And that seemed like a rule and yet no one got thrown off. It was really hypocritical and totally erratic.&lt;/p&gt;
&lt;p&gt;&lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;&lt;b&gt;YS: Well speaking of that someone, do you think it was hypocritical that she called you out for not following the rules?&lt;br /&gt;
AD:&lt;/b&gt; I feel she didn&#039;t need to go there at all. One, I forgot the rules, and two, it apparently didn&#039;t taste good, because they don&#039;t eat raw foods. [pause] Oh sh*t, what was the question? [I repeat the question.] Oh no, it wasn&#039;t necessary, and kind of apparent, so she didn&#039;t need to bring it up. It actually just makes her look bad.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;YS: What was it like to watch yourself on TV?&lt;br /&gt;
AD:&lt;/b&gt; Hold on a sec, I have to change my shirt. Okay, it was interesting. Hey there I am. I didn&#039;t think it was too weird, I kept trying to see what was my good side, and if the camera really added 10 pounds.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;YS: Did it add 10 pounds?&lt;br /&gt;
AD:&lt;/b&gt; No, I think I look pretty manly, but as long as Sam Talbot keeps wearing those shoulder pads, I have no choice. [laughs]&lt;/p&gt;
&lt;p&gt;&lt;b&gt;YS: So what are you taking away from this experience?&lt;br /&gt;
AD:&lt;/b&gt; [Faux sales voice] I&#039;m going to start selling my T-shirts online. [laughs] Just kidding. Now I have a face with a name. People who saw the show or who know &lt;b&gt;Top Chef&lt;/b&gt;, they know I&#039;m whatever. I&#039;m young in my career, but I think they saw my passion, enthusiasm, and energy.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;YS: So what&#039;s next for you?&lt;br /&gt;
AD:&lt;/b&gt; I think I said the &lt;a href=&quot;http://www.yumsugar.com/1100035&quot; &gt;same thing last time&lt;/a&gt;. I&#039;m just going to continue to focus and continue to develop my craft and be the best I can be.&lt;/p&gt;

7 ounces bittersweet chocolate&lt;br /&gt;
1 1/4 cups all-purpose flour&lt;br /&gt;
1/4 teaspoon table salt&lt;br /&gt;
1 cup sugar&lt;br /&gt;
2 large eggs&lt;br /&gt;
2 teaspoons pure vanilla extract&lt;br /&gt;
coconut-pecan filling, recipe below&lt;br /&gt;
chocolate ganache, recipe below
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Preheat oven to 350&amp;deg;F. Butter two 9-inch springform pans. Line the bottoms with parchment paper, and butter the paper; set aside.&lt;/li&gt;
&lt;li&gt;Place chocolate and butter in a heatproof bowl, and set over a pan of barely simmering water. Stir occasionally until melted; set aside.&lt;/li&gt;
&lt;li&gt;Sift together flour and salt; set aside.&lt;/li&gt;
&lt;li&gt;Place sugar and eggs in the bowl of an electric mixer fitted with the paddle attachment, and beat until fluffy and well combined, 3 to 5 minutes.&lt;/li&gt;
&lt;li&gt;Add vanilla and chocolate mixture, and stir to combine. Add dry ingredients, and stir to combine.&lt;/li&gt;
&lt;li&gt;Divide batter between the two pans using an offset spatula to distribute batter evenly, and smooth the layers. Bake until the center is set, about 20 minutes. Transfer pans to a wire rack to cool completely before unmolding.&lt;/li&gt;
&lt;li&gt;Place one layer on a 9-inch cardboard cake round. Spread filling over the layer, and invert the second layer onto the top, leaving the smooth side up. Press down gently on top layer to evenly distribute filling to edges. Using a metal spatula, smooth filling flush with sides of cake. Refrigerate until ready to glaze.&lt;/li&gt;
&lt;li&gt;Carefully transfer torte off cardboard round onto a wire rack set over a baking pan. Pour enough ganache glaze over cake to fully coat, shaking pan gently to help spread ganache if necessary. Let sit for 15 to 20 minutes. The ganache in the pan may be melted and strained through a fine sieve and added back to glaze. Pour remaining glaze over torte, allowing excess to drip off sides. If top is not smooth, gently shake pan or run an offset spatula quickly over surface. Allow to set at least 30 minutes before serving. Carefully slide the cake off of the wire rack and onto serving platter.&lt;/li&gt;

&lt;li&gt;Remove from heat, and stir in coconut and pecans. Cool completely, and refrigerate in an airtight container until ready to use, up to 2 days.&lt;/li&gt;
