Now that you've made your own vegetable stock, you'll need a delectable vegetable soup recipe to put the stock to good use. This one is easy, hearty, and soothing. The technique to make this soup is similar to making the stock; it starts by roasting a bunch of vegetables in the oven.

Cooking Light magazine recently highlighted a baked potato soup recipe and called it their "best soup ever." I had a bunch of potatoes leftover from Thanksgiving, so I decided to test out the recipe. The potatoes are baked before being added to the soup, creating a wonderful texture.

Last week JessNess shared her favorite recipe for chicken tortilla soup over in Kitchen Goddess. She inspired me, and I sort of had the spicy soup on my mind all weekend. When I asked my older brother and his roommate what kind of soup they wanted for dinner on Sunday night, they begged me to make chicken tortilla.

When I made cheddar cheese soup a couple of months ago, I had a hard time choosing between two recipes. I went with the classic "best ever" cheese soup recipe from Cook's Illustrated rather than the super simple variation from Everyday With Rachael Ray. To treat myself for Valentine's Day I decided to give the other recipe a try.

When the weather is cold, there's nothing like a piping hot bowl of soup to warm the kitchen and the soul. I enjoy making soup on Sunday or Monday. Then I eat it for lunch all week long.

Today marks the last day of January and therefore, the last day of National Soup Month. I knew that I wanted to share one last soup with you guys, but I wasn't sure which one. That's when I remembered Pea Soup Andersen's.

I knew that this week's soup recipe would have to be tomato. Not because I was in the mood, but because I realized the end of tomato season is quickly approaching. I make tomato soup often during winter and simply use canned tomatoes.

When I think of a deliciously comforting tomato soup recipe, the ingredients beer, blue cheese, and sriracha definitely do not come to mind. However, these out-of-the-ordinary elements are exactly why I knew I had to make this soup. Created by Iron Chef Michael Symon for Pilsner Urquell, the combination actually works — wonderfully well.
