The final result was perfect for the hot Summer months and a coffee lover&#039;s dream, a coffee popsicle! I used Vietnamese-style coffee - a simple concoction of sweetened condensed milk and strong coffee, traditionally served over ice - as my inspiration. These frozen delights were cool, refreshing, and oh so delicious. Packed with a caffeine punch, these popsicles are super simple to make. The hardest part is waiting for them to freeze!&lt;br /&gt;

&lt;p&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;1/4 cup sweetened condensed milk&lt;br /&gt;
1 3/4 cup water&lt;br /&gt;
1/4 cup freshly ground espresso coffee &lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;br /&gt;1. Brew the coffee to a strong robust flavor. Using a French press, it takes approximately 10 minutes. I love French press but any other coffee brewing method would also work.&lt;br /&gt;

2. Pour the sweetened condensed milk into a separate bowl.&lt;br /&gt;
3. Slowly pour the hot coffee into the bowl with the sweetened condense milk. Stir.&lt;br /&gt;
4. Chill coffee and sweetened condensed milk mixture in the refrigerator until cool.&lt;br /&gt;
5. Strain the coffee, if needed.&lt;br /&gt;

&lt;li&gt;Repeat above, alternating flour and coffee and ending with the flour mixture.&lt;/li&gt;
&lt;li&gt;Fold in the teaspoon of coffee grounds.&lt;/li&gt;
&lt;li&gt;Scoop into cupcake papers about half to three-quarters full (depending on whether you want flat or domed cupcakes. Note that these cupcakes will shrink slightly when they cool).&lt;/li&gt;
&lt;li&gt;Bake for 22-25 minutes until a cake tester comes out clean.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;&lt;b&gt;Sweetened Condensed Milk Pudding Filling&lt;/b&gt;:&lt;br /&gt;
2 teaspoons gelatin&lt;br /&gt;
 3/4 cup sweetened condensed milk&lt;/p&gt;
&lt;ol&gt;
&lt;li&gt;Sprinkle the gelatin over a 1/4 cup of water and let sit for 5 minutes.&lt;/li&gt;
&lt;li&gt;In a small pan over medium heat, heat the sweetened condensed milk until warm.&lt;/li&gt;
&lt;li&gt;Add the gelatin and stir over heat until the gelatin melts.&lt;/li&gt;
&lt;li&gt;Transfer mixture to a bowl set over a pan of ice water. Stir constantly until the mixture thickens. It will get very thick and might clump if you stop stirring.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;&lt;b&gt;Whipped Cream Frosting&lt;/b&gt;:&lt;br /&gt;
1 cup heavy cream&lt;br /&gt;
2 tablespoons sugar&lt;/p&gt;
&lt;ol&gt;
&lt;li&gt;Whisk cream on high speed until soft peaks form.&lt;/li&gt;
&lt;li&gt;Add sugar (more or less depending on your taste) and whip until thick.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;&lt;b&gt;To Assemble&lt;/b&gt;:&lt;/p&gt;
&lt;ol&gt;
&lt;li&gt;Using a small pairing knife, cut off the top of the cupcake in the shape of a cone. Flip the top over and cut off the cone.&lt;/li&gt;
&lt;li&gt;Fill the cavity with a teaspoon or so of sweetened condensed milk pudding.&lt;/li&gt;
&lt;li&gt;Replace top.&lt;/li&gt;
&lt;li&gt;Top with swirls or dollops of lightly sweetened whipped cream.&lt;/li&gt;
&lt;li&gt;Dust with finely ground coffee.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Makes 24 cupcakes.&lt;/p&gt;
