Sunday Dinner: Baked Eggs with Spinach and Mushrooms

If you love the taste - and the runny center - of fried eggs but don't like the "fried" part of the equation, you should think about baking the eggs. Baked eggs are delicious, simple to make, and wonderful for dinner. Remember eggs aren't just good at breakfast, they're divine any time of day! They make an exceptional vegetarian meal especially when paired with a medley of vegetables. A sprinkling of Parmesan cheese finishes off these baked eggs that are nestled on a bed of mushrooms and spinach.

To take a look at the recipe, read more.

Baked Eggs with Spinach and Mushrooms
From Gourmet magazine

Ingredients

10 oz baby spinach leaves
1/4 cup finely chopped onion
1 garlic clove, finely chopped
2 tablespoons unsalted butter
5 oz mushrooms, thinly sliced (2 cups)
1/3 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon freshly grated nutmeg
4 large eggs
2 tablespoons finely grated parmesan

Directions

Put oven rack in upper third of oven and preheat oven to 450°F.

Bring 1/2 inch water to a boil in a 10- to 12-inch ovenproof heavy skillet (not cast-iron), then add half of spinach and cook, turning with tongs, until wilted, about 30 seconds. Add remaining spinach and wilt in same manner, then cook, covered, over moderately high heat until spinach is tender, about 2 minutes.

Drain in a colander and cool under cold running water. Gently squeeze handfuls of spinach to remove as much liquid as possible, then coarsely chop.

Wipe skillet dry, then cook onion and garlic in butter over moderately low heat, stirring, until softened, 2 to 3 minutes. Add mushrooms and increase heat to moderate, then cook, stirring, until mushrooms are softened and have exuded liquid, about 3 minutes.

Stir in cream, salt, pepper, nutmeg, and chopped spinach and bring to a simmer.

Remove skillet from heat and make 4 large indentations in spinach mixture.

Break an egg into each indentation and bake, uncovered, until egg whites are set but yolks are still runny, 7 to 10 minutes. Lightly season eggs with salt and pepper, then sprinkle with cheese.

Serves 4.

Fast & Easy Dinner: Baked Eggs with Spinach and Tomatoes

If your dearest happens to be a vegetarian, make him baked eggs for a romantic dinner tonight. Baked eggs - while not overly glamorous - are delicately delicious. Their simple elegance is sexy, especially when cooked with a garlic, tomato, and spinach mixture. A dollop of cream cheese is a decadent finish. For a full meal start with a cheese plate paired with dried fruit, honey, and crackers; finish with chocolate molten cakes. To drink? It's Valentine's Day so celebrate with a bottle of bubbly!

To take a look at the recipe, read more.

1 tablespoon olive oil
1 clove garlic, finely chopped
1 14.5-ounce can diced tomatoes, drained
Kosher salt and pepper
2 8-ounce bunches spinach, trimmed
8 eggs, separated (yolks kept whole, if possible)
4 ounces cream cheese (optional)

Heat oven to 400° F.

Heat the oil in a medium skillet over medium-high heat. Add the garlic and cook for 1 minute. Add the tomatoes, 1/2 teaspoon salt, and 1/4 teaspoon pepper and simmer for 3 minutes. Add the spinach and cook until it begins to wilt, 1 minute. Transfer to a 2-quart baking dish.

Beat the egg whites until foamy, about 30 seconds, then pour them over the spinach mixture. Carefully place the whole yolks over the top. Bake until the whites are set, 20 to 22 minutes.

Divide among individual plates. Add dollops of the cream cheese, if desired.

Kitchen Experiments: Baked Egg in a Ham Shell

Earlier this week, I wanted a simple, yet hearty breakfast. I knew I had some eggs and ham, but I didn't have a lot of time. I had to get ready for work, but also wanted something yummy. That's when I remembered baked eggs. Baked eggs are great because you can pop them in the oven, get ready for work, and have a warm breakfast before you leave.

I was originally going to have a simple egg, but then thought about lining a ramekin with ham in order to make a self-contained meal. Next I decided to toss in some tomatoes sautéed in garlic. To find out how it all turned out and get the recipe I used, read more.

The overall concept was a good one, I don't think you can really go wrong with a baked egg. However, my dish was a bit runny. I halved the tomatoes, but didn't really let them cook down much. This was a mistake, I should have let them cook down as they weren't seeded and the tomatoes were really watery. There was nowhere for the liquid to go, so the bottom of my creation was a bit soggy. The top, however, was great. Next time, I won't get lazy with the tomato cooking!

Baked Egg in a Ham Shell
A kitchen experiment by YumSugar

handful of plum tomatoes, halved
1 clove garlic
2 slices of ham
1 tbsp. jack cheese
splash of milk
1 egg
salt pepper
olive oil

Preheat oven to 375ºF.

Grease a small ramekin or one slot in a muffin tin. Place two pieces of ham inside the ramekin, make sure they overlap to create a sort of crust. Set aside.

In a small pan on medium heat, heat a small amount of oil until shimmering. Add garlic and sauté until fragrant.

Add tomatoes to pan, salt, and cook for a few minutes.

Spoon tomato mixture into the ham shell. Add a splash of milk and cheese.

Crack an egg on top of the mixture. Sprinkle with salt and pepper.

Place ramekin on baking sheet and place into the oven. Bake for about 20 minutes or until egg white has set.

Here are highlights from the OnSugar blog Cakes Icecreams Tarts And.

That's right, you should bake brownies! 'Cause I'm sure you've already got all the ingredients at home, yeah? Chocolate chips, cocoa powder, plain flour, eggs, butter . . . Okay, now you're ready to go into the kitchen! Anyway, It has been raining since morning and, you know, one gets lazy when it rains. I decided to postpone my study plans till tonight, and to stop being envious of all the bakers who'd been baking recently when I had buried myself among my books, I BAKED!

To see her decadent brownie recipe, read more

Come Party With Me: All Hallow's Eve - Menu

Have no plans for Halloween? Well, there's still time to invite some friends over for a blowout Halloween bash! Halloween won't fall on a Saturday again until 2015, so now is the time to throw a fright-night-themed party.

Start the soirée after dinner and you won't have to worry about serving a complex menu. Instead offer a few fun bar snacks like vampire nut mix. This easy-to-make mixture of nuts gets a vibrant red color from cayenne pepper. Sprinkle won ton wrappers with cheese and bake; the resulting snack resembles bat wings.

Make deviled eggs look like the actual devil by adding a chive beard and bell pepper horns. To check out these quick, simple, crowd-pleasing bites, get the recipes and read more.

Vampire Nut Mix
From Woman's Day

Ingredients

3 cups raw mixed nuts
1⁄3 cup agave syrup
2 tsp salt, or to taste
1⁄4 tsp cayenne pepper, or to taste

Directions

Heat oven to 300°F. Line a baking sheet with nonstick foil or aluminum foil coated with nonstick spray.

Put all ingredients in a medium bowl; toss to mix and coat. Spread on prepared baking sheet.

Bake 15 to 20 minutes until fragrant and toasted. Cool completely before serving.

Makes 3 cups.

Ingredients

30 wonton wrappers
Nonstick cooking spray
2 tablespoons olive oil
1 clove garlic, minced
1/2 teaspoon dried basil, crushed
1/4 cup grated Parmesan or Romano cheese

Directions

Use a sharp knife to cut wonton wrappers diagonally in half to make 60 triangles.

Lightly coat a baking sheet with cooking spray. Arrange one-third of the triangles in a single layer on the prepared baking sheet. If desired, for ruffled chips, line baking sheet with foil. Shape foil to make ridges. Lightly coat foil with cooking spray. Place wonton triangles on foil, draping over foil ridges.

In a small bowl stir together the olive oil, garlic, and basil. Lightly brush the wonton triangles with one-third of the oil mixture; sprinkle with one-third of the cheese.

Bake in a 350 degree F oven about 8 minutes or until golden. Cool completely on a wire rack. Repeat with the remaining wonton triangles, oil mixture, and cheese.

Makes 60 chips.

Devilish Eggs
From Martha Stewart

Ingredients

12 large eggs
3 jarred roasted red peppers, finely chopped
1 cup mayonnaise
2 teaspoons Dijon mustard
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1 teaspoon hot sauce, such as Tabasco (optional)
1 small red bell pepper, cut into small triangles, for garnish
2 scallions, dark-green parts only, cut into small triangles, for garnish
Fresh chives, cut into 1/2-inch pieces, for garnish

Directions

Prepare an ice-water bath; set aside.

Put eggs into a medium saucepan, and cover with cold water. Bring to a boil. Remove from heat. Cover; let stand 12 minutes. Using a slotted spoon, transfer eggs to ice-water bath.

When eggs are cool, peel, and cut in half lengthwise. Carefully remove yolks, keeping whites intact and transferring whites and yolks to separate bowls. Refrigerate whites.

Add roasted peppers, mayonnaise, mustard, salt, pepper, paprika, cayenne, and hot sauce (if desired) to yolks. Mash with a fork until smooth. Cover, and refrigerate until stiff, about 30 minutes.

Mound yolk mixture in each egg-white half. Garnish with bell pepper, scallions, and chives to make devilish faces.

Makes 2 dozen.

World's Largest Burger Among New Record-Setting Foods

It's a tale that'll go down in burger history. At an event this week in London, Guinness World Records revealed a host of new record breakers, among them a 185-pound, $499 whopper of a hamburger, which is officially the world's largest. The record belongs to Mallie's Sports Grill and Bar in Southgate, MI. Owner Steve Mallie, who said the bun must be baked for eight hours and the burger for 15 hours, remarked, "Being in the book is the greatest accomplishment we've ever done. I've worked my entire life to build this restaurant and being able to have the notoriety of Guinness makes it just that bit more rewarding."It seems, in today's world, that everything bigger is better. This week alone, Westhoughton, UK, garnered attention for serving the world's most massive English breakfast (10 sausages,10 rashers of bacon, 10 slices of toast, 10 eggs, fives slices of black pudding, and tomatoes, mushrooms, and black beans); Sacramento, CA, made headlines for a 42-foot-long, 1,200-pound tamale; and Valencians in Spain managed to assemble the world's longest restaurant table. At this rate, the next record will need to be for the world's most capable scale. Are these feats, like the Mallie's burger, legendary stuff, or simply gross?

Source

Another one to add to the list of highly unconventional cupcakes: This 1,224-pound behemoth of a baked good, which just knocked out a recent record contender for the title of world's largest cupcake.

The prodigious pastry, which composed of triple vanilla cake batter and topped with pink frosting, was more than eight times the size of the previous record holder in girth. It stood 4 feet tall and spanned 11 feet around, and was created by Manchester, NH-based GourmetGiftBaskets.com. It required 800 eggs, 200 pounds each of sugar and flour, five days of preparation, and 12 hours of baking time.
Slices of the cupcake were served over the weekend at the Woodward Avenue Dream Cruise Classic Car Show in Detroit, MI, in exchange for donations to breast cancer foundation Susan G. Komen for the Cure. Even though the cupcake contained an estimated 2 million calories, I wouldn't have been able to pass up this once-in-a-lifetime indulgence. Does the cupcake look appetizing to you?

Covent Garden Cupcake Takes the Cake as World's Largest

The cupcake craze is hardly over. Yesterday, hundreds of cupcake consumers crowded London's Covent Garden to witness the cutting of what is now the world's largest cupcake. The oversized confection, which was baked and iced by acclaimed pastry chef Michelle Wibowo, was created to honor the city's Covent Garden Real Food Market, and weighed over 330 pounds. Other important statistics: The cupcake measured 1.25-x-1.2 meters (approximately 4-x-4 feet), and was designed to feed 2,000 people, requiring more than 50 hours of labor and 200 eggs.To make a pastry of such scale, Wibowo, over the course of five days, whipped up batches of smaller-sized sponge cakes, and layered them, eventually carving the masterpiece into a cupcake shape. "I dread to think how many calories it has," she remarked. I'm still attempting to wrap my head around the fact that a cupcake - which, by definition, is a miniature cake - can weigh in at over 300 pounds. Then again, I suppose, with all its layers, that the pièce de résistance is technically more cake than it is cupcake. Still, I'd love to get my hands on some of it. What do you think of the gargantuan creation?
