&lt;li&gt;In a very large skillet, heat the olive oil. Add the prosciutto and garlic and cook over moderate heat, stirring, until the garlic is golden, about 4 minutes. Transfer to a plate.&lt;/li&gt;
&lt;li&gt;Season the pork medallions with salt and pepper, add them to the skillet and cook over moderately high heat until well browned on the outside and medium within, 3 to 4 minutes per side. Transfer the medallions to a plate and keep warm.&lt;/li&gt;
&lt;li&gt;Add the balsamic vinegar to the skillet and cook until nearly evaporated, scraping up any browned bits from the bottom of the skillet.&lt;/li&gt;

&lt;p&gt;This recipe is really fast and easy to make. It takes about two minutes to prepare and it tastes amazing.  I like to serve it with a Balsamic vinegar reduction.  Mashed potatoes, polenta or roasted asparagus all make great sides.  If you don&#039;t like blue cheese, you can easily use goat cheese or fresh mozarella instead.&lt;/p&gt;
&lt;p&gt;
&lt;p&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;- Chicken breasts&lt;br /&gt;
- Blue cheese (I normally Bresse Bleu because it&#039;s not too strong and it&#039;s really creamy)&lt;br /&gt;
- Sun dried tomatoes (about 3 for each chicken breast)&lt;br /&gt;
- olive oil, pepper&lt;br /&gt;
- a good amount of Balsamic vinegar
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;br /&gt;1. Preheat your oven to 400 F (200 C).&lt;br /&gt;
2. Clean your chicken breasts and remove excess fat.&lt;br /&gt;
3. Cut a horizontal slit through one side of each chicken breast half. Don&#039;t open them completely!&lt;br /&gt;
4. Place your chicken on a baking sheet lined with parchment paper.  Dispose two or three sun dried tomato on one side of the chicken breast.  Make sure you remove as much oil as you can from your tomatoes or your oven will transform into a deep-fryer. Trust me. Cover with a big piece of cheese. Or two. I like cheese a lot.&lt;/p&gt;
&lt;p&gt;&lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;5. Fold the other side of the chicken breast on top of the tomatoes and the cheese. Close as well as you can. Add as much pepper as you like and drizzle with a little olive oil.&lt;/p&gt;

&lt;p&gt;6. Cook in the oven for about 20 minutes.  15 minutes if your chicken breasts were quite thin.&lt;br /&gt;
7. If you want to serve your chicken with a Balsamic vinegar reduction: five minutes before your chicken is ready, bring to a boil in a small saucepan a good quantity of Balsamic Vinegar. Let it reduce to about 1/3 to 1/4 of the original quantity. Keep an eye on it at all time and make sure it doesn&#039;t turn into caramel.&lt;br /&gt;
8. Drizzle some of the Balsamic reduction on top of your chicken and enjoy!&lt;/p&gt;
&lt;p&gt;* If you had more time, you could make sure the chicken breast is well closed and sear it in a pan before popping it into the oven. The chicken would be more colorful and flavorful. The cooking time in the oven would then be reduced. I rarely do it because I enjoy the super fast and easy aspects of this recipe.&lt;/p&gt;

&lt;li&gt;Put the ricotta in a fine sieve set over a bowl. Cover with plastic wrap and refrigerate overnight. Discard the liquid in the bowl.&lt;/li&gt;
&lt;li&gt;Wipe out the bowl, add the thickened ricotta and stir in 1 tablespoon of the olive oil and season with salt and pepper.&lt;/li&gt;
&lt;li&gt;Preheat a grill pan. Lightly brush both sides of the bread slices with oil and grill, turning once, until toasted, about 3 minutes. Transfer the toasts to a platter and rub them with the whole garlic clove.&lt;/li&gt;
&lt;li&gt;In a small bowl, toss the red onion with 2 tablespoons of the balsamic vinegar and let stand for 10 minutes; drain the onion, discarding the vinegar.&lt;/li&gt;
&lt;li&gt;Meanwhile, in a small saucepan, boil the remaining 1/4 cup of balsamic vinegar until reduced to 1 tablespoon, about 5 minutes.&lt;/li&gt;

Deglazing the fried egg in vinegar gives it a gentle saltiness that tastes gourmet and - I must admit - is highly suitable for hangovers. &lt;p&gt;As I suspected, the flavors were easy to reproduce on my own plate with some balsamic-reduction sauce, hearty multigrain bread, and mixed greens. I made two versions of the sandwich: one open-face with greens, and one closed-face with serrano ham. &lt;p&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;2 slices swiss cheese&lt;br /&gt;
2 to 4 slices multigrain bread&lt;br /&gt;
3 very thin slices of Serrano ham, cut into strips (optional)&lt;br /&gt;
1 tablespoon butter&lt;br /&gt;
2 large eggs&lt;br /&gt;
2 tablespoons balsamic vinegar reduction sauce&lt;br /&gt;
2 cups mixed baby greens, loosely packed
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Preheat the oven to 250°F.&lt;/li&gt;
&lt;li&gt;Place two slices of swiss cheese on each of two pieces of bread.&lt;/li&gt;
&lt;li&gt;Place the two cheese-covered slices of bread in the oven, plus two more pieces of bread if you want a closed-face sandwich. Cook for about 5 minutes or until cheese is just melted.&lt;/li&gt;
&lt;p&gt;&lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;&lt;/p&gt;
&lt;li&gt;In a skillet over medium-low heat, cook Serrano ham until crispy, turning once, about 5 minutes. &lt;/li&gt;
&lt;li&gt;Turn burner to low, add the two eggs, and cook sunnyside up. Alternately, if not using the ham,  melt 1 tablespoon butter over low heat, then add the eggs.&lt;/li&gt;
&lt;li&gt;When the yolks have just started to firm up but are still runny, drizzle the balsamic reduction sauce atop the eggs. Place a lid over the skillet and cook for an additional 30 seconds. Remove from heat.&lt;/li&gt;

&lt;li&gt;On each piece of cheese-topped bread, add 1 cup mixed greens and top with the fried egg. If using the ham, top each egg with the Serrano ham and a second slice of bread.&lt;/li&gt;
