1/2 cup water&lt;br /&gt;
1/2 cup salted peanuts&lt;br /&gt;
&lt;b&gt;Spicy Pine Nut Brittle&lt;/b&gt;&lt;br /&gt;
1/2 cup toasted pine nuts&lt;br /&gt;
1 cup sugar&lt;br /&gt;
1/2 cup water&lt;br /&gt;
1 teaspoon dried hot red pepper flakes&lt;br /&gt;
1/2 teaspoon salt

&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt; Preheat oven to 250°F. Lightly oil a large sheet of foil on a baking sheet, then warm in oven.&lt;/li&gt;
&lt;li&gt;Cook sugar and water in a deep 2-quart heavy saucepan over moderately low heat, stirring slowly with a fork, until melted and pale golden. &lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;&lt;/li&gt;

&lt;p&gt;3 cups granulated sugar&lt;br /&gt;
2 cups pecans (about 8 ounces)&lt;br /&gt;
2 1/2 cups flour&lt;br /&gt;
1 tablespoon pumpkin pie spice&lt;br /&gt;
1 teaspoon salt&lt;br /&gt;
1 teaspoon baking powder&lt;br /&gt;
1 teaspoon baking soda&lt;br /&gt;
2 sticks (8 ounces) unsalted butter, at room temperature&lt;br /&gt;
2 cups packed brown sugar&lt;br /&gt;
4 large eggs, at room temperature&lt;br /&gt;
3/4 cup milk&lt;br /&gt;
Grated zest of 1 orange&lt;br /&gt;
One 15-ounce can pure pumpkin puree&lt;br /&gt;
1 8-ounce package of cream cheese, at room temperature&lt;br /&gt;
3 cups heavy cream, chilled&lt;br /&gt;
2 teaspoons pure vanilla extract
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Line a baking sheet with parchment paper. Butter two 8-x-2-inch round cake pans. Line the bottoms of the pans with parchment paper and butter the parchment. Flour the pans.*&lt;/li&gt;
&lt;li&gt;In a large skillet, melt 2 cups granulated sugar over medium-high heat until light amber, about 7 minutes.&lt;/li&gt;
&lt;li&gt;Reduce the heat to low, add the pecans and quickly stir to coat. Transfer the pecans to the prepared baking sheet and, using a metal spatula, spread in a single layer to cool completely.&lt;/li&gt;
&lt;li&gt;Place the praline in a sturdy resealable plastic bag and crush into pieces; set aside.&lt;/li&gt;
&lt;li&gt;Preheat the oven to 350°F. In a bowl, sift together the flour, pumpkin pie spice, salt, baking powder and baking soda.&lt;/li&gt;
&lt;li&gt;Using an electric mixer, beat together the butter, 1/2 cup brown sugar and the remaining 1 cup granulated sugar until light and fluffy, about 3 minutes.&lt;/li&gt;
&lt;li&gt;Add the eggs, 1 at a time, beating until combined.&lt;/li&gt;
&lt;li&gt;Beat in the flour mixture in 3 parts alternately with the milk and orange zest on low speed until just combined.&lt;/li&gt;
&lt;li&gt;Add the pumpkin puree and beat until just combined.&lt;/li&gt;
&lt;li&gt;Divide the batter evenly between the 2 prepared pans and bake until a toothpick inserted in the center comes out clean, about 45 minutes. Transfer the cake layers to a rack to cool, about 10 minutes. Remove the cakes from the pans, invert and peel off the parchment paper. Let the cakes cool completely on the rack, about 45 minutes.&lt;/li&gt;
&lt;li&gt;Meanwhile, make the frosting. Using a standing mixer with a whisk attachment, whip the cream cheese and cream on medium speed until soft peaks form, 2 to 3 minutes.&lt;/li&gt;
&lt;li&gt;On low speed, gradually beat in the remaining 1 1/2 cups brown sugar and the vanilla until stiff peaks form. Cover and refrigerate until ready to use.&lt;/li&gt;
&lt;li&gt;Assemble the cake: halve each cake layer horizontally with a serrated knife. Place 1 cake layer on a platter. Spread the whipped cream frosting on top about 1/4 inch thick; sprinkle with about 1/2 cup crushed pecan praline. Repeat with three more layers, saving enough frosting for the cake sides and reserving the last layer of praline. Spread the remaining frosting evenly on the sides of the cake and sprinkle the reserved pecan praline on top. Refrigerate the cake for at least 1 hour before serving.&lt;/li&gt;

&lt;p&gt;I absolutely love almond roca. A family friend used to make this yearly for my dad for Christmas. Every year, he would get a beautifully wrapped shoe box sized parcel from her at Christmas time, which would be filled with this delectable candy. A few years ago, I set out to figure out how to make it myself. It turned out to be a remarkably easy recipe to replicate, and after some trial and error, I finally settled on a recipe that is basically fail-proof as long as I have a steady stove and am paying attention.&lt;/p&gt;
&lt;blockquote&gt;&lt;p&gt;1 lb real butter&lt;br /&gt;
2 cups sugar&lt;br /&gt;
2 tablespoons light corn syrup&lt;br /&gt;
6 tablespoons water&lt;br /&gt;
1 cup finely chopped almonds&lt;br /&gt;
1 (11 1/2 ounce) bag milk or semi-sweet chocolate chips&lt;/p&gt;
&lt;p&gt;In a large soup pot, melt the butter over medium heat.&lt;/p&gt;
&lt;p&gt;While the butter is melting, chop up almonds and brown them lightly in a frying pan.&lt;/p&gt;
&lt;p&gt;As soon as the butter is melted, add corn syrup, water and sugar, and cook over medium heat until temperature reaches a hard crack (290 degrees), and becomes the color of a brown paper bag, stirring frequently.&lt;/p&gt;
&lt;p&gt;Once the candy reaches this tempurature and color, remove from the heat and  mix in all of the chopped, toasted almonds. Leave approximately 1 teaspoon for sprinkling over the top, as well as any flakes that have resulted from chopping. Once the nuts are thorougly mixed in, spread the candy out onto a cookie sheet &lt;strong&gt;with edges&lt;/strong&gt;. Spread it out as thick or as thin as you like, the candy will be good no matter what.&lt;/p&gt;
&lt;p&gt;Open the bag of chocolate chips, and with a spoonula, spread them over the top of the still-warm candy until all the candy is colored with cocolate. Sprinkle remaining almonds and flakes over the top and allow candy to cool completely. If covered carefully with hand towels, roca may be placed into the refridgerator to speed cooling. Make sure, though, as it is cooling, that it is not in a very moist spot, or the candy&#039;s texture may alter. Once it is cool, you may break it into pieces as small or as large as you like.&lt;/p&gt;
&lt;/p&gt;&lt;/blockquote&gt;
&lt;p&gt;Many recipes recommend not making this when it is humid or if it is rainy, but by that logic, I would not be able to make this recipe for about ten months of the year, being as I live in the Pacific Northwest right now, and it rains a fair amount. Just make sure the room in which you&#039;re making it is not actually filled with moisture. (For instance, if you&#039;ve just left the dishwasher open to cool down after it has only just finished washing, it may not be a good idea to make this candy just yet.) It should be fine.&lt;/p&gt;

&lt;p&gt;This is definitely one of my favorite holiday recipes, as well. It packages easily and is quite giftable - always a plus!&lt;/p&gt;

&lt;li&gt;Mix pumpkin, milk, brown sugar, eggs, cornstarch, vanilla, salt, cinnamon, ginger, nutmeg, and a pinch of cloves in a medium bowl. Whisk 1/3 pumpkin mixture into chocolate mixture. Whisk in remaining pumpkin mixture until completely incorporated.&lt;/li&gt;
