If BBQ gurus
Pat and Gina Neely were to make a Mexican burrito, it would probably look a lot like this dish. The filling is a simple mixture of ground beef, onion, corn, and bottled barbecue sauce. Instead of a salsa or guacamole topping, a heaping spoonful of crunchy coleslaw is placed atop the meat.

Take a Tex-Mex vacation with these vegetarian tacos. A simple but flavorful mixture of black beans, corn, fresh zucchini, and prepared enchilada sauce makes a delicious filling. The recipe is incredibly versatile, so feel free to get creative.

On your way home from work this afternoon, pick up a rotisserie chicken and whole wheat tortillas. When you arrive, take some help from your pantry and make this delicious burrito for dinner. Filled with canned beans, yellow corn, barbecue sauce, and sour cream, it's hearty and scrumptious.

Did you just get fired from Radio Shack, did the woman you tried to pick up have a boyfriend who threatened to kick your ass, or did you just total your car? Whatever your damage, there's nothing like a late-night burrito place to provide the greasy goods to cure what ails you. God bless America and good night.

When I'm on the road and in need of quick meal, I sometimes stop at
Moe's Southwest Grill. It's like a Mexican version of Subway — you pick a type of burrito, taco, fajita, salad, or quesadilla, and then you choose exactly what goes in it (and you can watch them make it too). They use fresh veggies, but they don't use lard.

When I came across
this recipe for a chipotle chicken burrito, it brought back memories of
La Burrita — the tasty, late-night burrito joint that was across the street from my college apartment. I can't wait to relive old times by making my own variation of this scrumptious looking burrito! — The Kitchen Sink

A few months ago, I saw a sign outside of a McDonald's that said "Now Serving the McSkillet Burrito." When I read it I had to chuckle a little bit, this was near San Francisco's Mission District, an area known for its burritos. At the time, the McSkillet wasn't nationally available, and I wondered if it was just something that franchise was trying to compete with the local market.

My dad is a total meat and potatoes guy, so I'm always looking for creative and innovative ways to give him what he likes. The regular meat and potato combinations of steak/mashed potatoes and burger/fries can get old really quickly. That's why this recipe, where beef and potatoes act as the spicy filling to a delectable burrito, will be a total hit.
