While the bulbs have started popping up, the cold weather is still in effect and I'm craving Winter comfort food. To feed that hunger, this weekend, I made a hearty and scrumptious butternut squash lasagna. It wasn't a fast process, but the finished product is rewarding.

It's still Winter and that means I'm constantly craving soup. Last week I warmed my soul with this smooth butternut squash and apple soup. The apples provide a lovely sweetness to the robust and rich soup.

As much as I love complex and exotic recipes, there's something to be said about simple and basic dishes like chicken with butternut squash. Neither the ingredients or cooking technique is unfamiliar. Instead this chicken is like an old friend — someone you've known forever and never tire of seeing because their company is always enjoyable.

Last week, I took a trip to Yosemite National Park for the kickoff session of The Ahwahnee's annual Chefs' Holidays. The event ended with a big blowout dinner, but I walked away with tons of tips. Chef Matt Bolton, who runs the kitchen at Pacific's Edge restaurant in Carmel's Highlands Inn, showed the audience how to confit a duck leg to make pâté-like rillette.

I'm not a recession flexitarian yet — but my goal is to make today a meat free Monday. It seems easier for me to go light on animal protein at lunch, but dinner, my biggest meal, will be more challenging.
Not to worry: I found a hearty, meat-free alternative last night, and today, I'll be using the leftover beans to make an equally substantial Italian bolognese.

Recently, I praised butternut squash for its mild sweetness and versatility — but I was surprised when so many of you said you'd never prepared one before, or find it hard to work with. Since it'd be a bummer to miss out on this Fall vegetable at home (unless you can afford $400 for an automated butternut squash peeler!), I thought I'd help you out with instructions on how to prep it yourself. Perhaps the most-loved variety of Winter squash, butternut squash is to Thanksgiving what pumpkin is to Halloween: ubiquitous. Reasonably priced and versatile, with a long shelf life, these mild, vibrantly-hued veggies are at their best during the cold days ahead. When selecting, look for squash free of bruises, feel heavy for their size, and have a matte skin.

Last year on Thanksgiving, my older brother, while shoveling stuffing down his throat asked, "How come we only have stuffing once a year? It's so good!" I have to agree with him, stuffing is one of the main reasons I look forward to turkey day.
