comfort food with a twist? I certainly do, so naturally I was thrilled to experiment with this hearty version of the
American classic: butternut squash mac and cheese. Although the finished dish is the vibrant color of the classic Kraft
Macaroni and Cheese, this variation is substantially more flavorful.
Fall produce week continues, and today's featured ingredient is the beloved butternut squash. Although it has a thick skin, squash flesh roasts in a high-heat oven in less than 20 minutes.
Tossed with pasta, sage, and a creamy mascarpone sauce, this dish is decadent and delicious.

I hate to say it, but pretty soon the peak season for butternut squash will be over. Butternut squash are best from early Fall to Winter, and although Spring means a plethora of appetizing vegetables, it's sad to see the squash go. To make the most of it while we can, serve a curried version of the veggie tonight.

I don't really eat very much candy. I have the occasional chocolate here and there but on a daily basis, I try and steer clear from munching on lots of sweets. Halloween, however, is when I eat candy.

One of the best things about this time of year is the abundance of gorgeous and delicious winter squash. Unlike their summer counterparts, winter squash have thick, hard skin and seeds; the flesh is firm and requires cooking. Some varieties are available year round, but winter squash are best now through winter.
