Ceviche is a cool and delicious dish in which raw fish is marinated in fresh citrus juice. The acid of the juice "cooks" the fish until it is firm and plump. It's a wonderful Summer course that can be served as an appetizer with tortilla chips or placed atop a bed of greens as an entree.

Yesterday, the residents of Callao, Peru were up to something fishy. Four-hundred-fifty students and chefs were elbow-deep in whitefish, lime, onions, and peppers in an attempt to break the world record for the biggest serving of ceviche, a seafood dish in which raw fish is "cooked" by the acid of lime juice.
The dish weighed in at a record-breaking 6.8 tons, more than 2 tons heavier than the existing record of 4.5 tons, a record that was made in Mexico.

When planning a menu for a pool party, select a variety of cold and hot (preferably grilled) dishes. Serve small, light bites buffet-style all day, replenishing plates as they go empty.
Offer guests a cool treat the moment they arrive in the form of watermelon wedges with lime ice.

In what may be the world's first pairing of chuck wagons and ceviche, the Top Chef gang went camping this week. In 100-plus degree heat on a dusty dude ranch, the chefs prepared meals over fire pits for a group of hungry ranchers. It looked simultaneously horrible and highly entertaining.

After roughing it while camping last week, this time around we saw the cheftestants get magical. Again. Oh wait, I'm confusing this challenge with one we saw on Top Chef Masters!

Did you catch the second episode of Top Chef Vegas? The chefs had to prepare appetizers that paired with shots and serve them poolside at a co-ed bachelor party. There was ceviche, savory meringues, and poorly executed creme brulee.

One of the reasons I look forward to Summer is the remarkable seasonal fare that comes along with the warm weather, from barbecue to ceviche to tropical Popsicles and everything in between. Now that it's Summer, all the attention has been turned to typical warm-weather fare, like barbecue and burgers. But don't discount fresh seafood dishes as wonderful additions to any backyard feast. Items like ceviche and shrimp rémoulade will help break up monotony at the appetizer table — as will an exotic, indulgent seafood cocktail.

On Top Chef, Jeff seemed like a pretty strong competitor. However, I wasn't surprised to watch Padma ask the blond to pack his knives and go. I spoke with Jeff yesterday, and he's still incredibly disappointed by his dismissal from the show.
