Would You Eat This Porter Cheese? At a dinner party over the weekend, I tried Cahill Porter Cheese — an Irish cheddar cheese marbled with malty, bittersweet porter beer. Strangely enough, the mild taste of the cheddar cheese perfectly complements the caramel, chocolatey flavor of the beer. Some guests did not enjoy it, but I can't stop thinking about how it would make a unique, tasty grilled cheese sandwich.

Not Your Regular Nachos: Potachos What do you get when you cross potato skins with nachos? Potachos! The best of both worlds, this tasty invention uses the base of nachos (crunchy potato chips) with the topping of potato skins (cheddar cheese, bacon bits, sour cream, and green onions). The recipe is simple and like all nacho recipes, easily adaptable to your personal liking.

Yummy Link: Green Pea Soup with Cheddar-Scallion Panini There is nothing quite as comforting as a bowl of soup and a grilled cheese sandwich. The classic pairing is tomato soup with American cheese, but I think this green pea soup with cheddar scallion grilled cheese sounds delicious, modern, and perfect for spring. — Vicarious Foodie

Not Your Regular Nachos: Classic Nachos I know I promised these wouldn't be boring, regular nachos, but before things get too crazy, I decided to make my version of classic nachos. According to the food dictionary on Epicurious, a nacho is a chip topped with melted cheddar cheese and chopped chilis. These nachos are topped with cheese, chilis, and refried beans.

Soup's On: Cheddar Beer Soup When I made cheddar cheese soup a couple of months ago, I had a hard time choosing between two recipes. I went with the classic "best ever" cheese soup recipe from Cook's Illustrated rather than the super simple variation from Everyday With Rachael Ray. To treat myself for Valentine's Day I decided to give the other recipe a try.
