YumSugar Gift Guide: Crazy for Coffee

Whether it's an aunt or an uncle, seems like everyone has a coffee addict on their holiday shopping list. My coffee addict doesn't actually need any other gadgets - although the Bravi Home Coffee Bean Roaster would probably be well received - so I'm opting for a monthly coffee subscription from Blue Bottle Coffee Co. If your coffee addict has enough java to last a lifetime, treat him or her to a book like I Love Coffee! that will help hone their barista skills. Scroll through for more coffee gift ideas.

Starbucks to Halt Continual Brewing of Decaf After Noon

Starbucks may be generously giving back to the community, but it's a bit more tight-fisted when it comes to labor and production costs. As part of a drive to save the coffee giant $400 million by September, Starbucks announced Tuesday its stores will stop regularly brewing decaffeinated coffee after 12 p.m. The company said in a statement:

For many of our stores, the demand for decaf is greatly reduced in the afternoon. With our current standard of continually brewing decaf after 12 p.m. regardless of demand, we have seen a high amount of waste.

This cost-cutting measure is one among many that have recently been implemented, including brewing smaller pots of coffee. The company also plans to slash 6,700 jobs and close 300 more stores.

So far this announcement has received lots of negative press, and I can see why: This business decision seems contrary to all logic. Personally, I only drink coffee in the afternoon if it's decaf - and in the morning, I'll only drink joe if it's got caffeine. Do you agree that it doesn't seem to make sense? Or is this a smart decision for Starbucks?

Source

Meet the World's Largest Irish Coffee

Earlier today, at 1 p.m. PST to be exact, history was made at the Buena Vista Cafe in San Francisco. Irish coffee making champion Frank Silletti, in conjecture with the staff of the Buena Vista, made the world's largest Irish coffee. I was there to witness them break the Guinness World Record.

To check out my firsthand account and a bunch of pictures from the event, read more.

It was a cool but clear sunny day in San Francisco, perfect for enjoying a coffee spiked with whiskey and topped with a thick, creamy head. The bar was packed with fans, old and young, waiting to watch as the oversize cup was hoisted onto the bar. The three-foot tall glass - that can hold up to 15 gallons - was blown specifically for the occasion. A case of Tullamore Dew filled the glass one-third full as the scent of whiskey permeated the air. A box of confectioner's sugar and countless pots of fresh-brewed, sustainably grown organic coffee was added to the gigantic glass as the crowd cheered in anticipation. Just-whipped heavy cream topped off the concoction to create the world's largest Irish coffee.

After the drink was made, the staff worked quickly to transfer the concoction to smaller glasses which they then passed out to everyone in attendance. The atmosphere was lively and the people friendly. Since the drink was created 56 years ago, the cafe estimates it has served 37,010,000 Irish coffees; that's roughly 2,000 a day. It's only natural that they hold the record for the world's largest drink.

It was very exciting to be a part of the bar's history.

Have you ever experienced a world record being broken? Do you enjoy Irish coffee?

Haughton has penned five other cookbooks, including The Best Slow Cooker Cookbook Ever, so she's clearly spent a lot of time with her Crock-Pot. To find out what I thought of the book, read more.

Pros:

The introduction has helpful information from choosing and getting to know your slow cooker to which foods are most forgiving and which are most demanding.

There's a wide range of recipes, from smoky roasted cashews to gingerbread for dessert, and although the the book contains over 250 recipes, it's surprisingly light.

A "cook's notes" sidebar proves helpful, explaining nuances such as the differences in types of paprika available at the grocery store.

Cons:

The book contains no pictures.

If you don't have interest in a slow cooker, then this book isn't for you.

Many of the seafood recipes require adding in the protein near the end of cooking time, which requires more attentiveness on your part.

Recipes: The recipes cover just about everything. Here are some that caught my attention:

Caponata, Edamame Cheese Dip

Shrimp Chowder, Vegetable Stock

Artichoke Pasta Sauce

Shortcut Lasagna

Mac and Cheese

Turkey Molé

Shrimp Veracruz Style

Beef Lettuce Wraps

Tagine of Lamb With Apricots

Asian-Flavored Quinoa With Broccoli and Chard

Spanish Pistou

Blueberry Coffee Cake

Green Pepper Jelly

Flourless Chocolate Torte

Imagery: None.

Overall Rating: If you're a fan of the slow cooker (and aren't bothered that it doesn't contain pictures), then this informative yet innovative slow-cooker guide would be a useful, go-to book to add to your repertoire.

Would You Pay $20,000 For a Cup of Coffee?

Would you pay $20,000 for a pot of coffee? James Freeman did.

When the man behind San Francisco's cult favorite Blue Bottle Coffee decided to open his first café - a step way above the original kiosk - he took the plunge and purchased a $20,000 halogen-powered coffee siphon bar. The bar, which is imported from Japan, is the only one like it in the US and is really a sight to behold. In fact, it doesn't really look like a coffee maker; at first glance you might even think it's some sort of gadget from Journey to the Center of the Earth - or perhaps some weird device found on the Lost island.

However, I'm here to tell you that it is indeed a coffee maker. It uses a technique known as siphon or vacuum, where water rises from the bottom chamber to the top. We recently met up with Freeman and he and his crew gave us the lowdown on how it works. To find out just what a $20,000 coffee bar can do, read more.

Oh and as an added bonus, I should mention that they also serve Kyoto iced coffee, which is a cold-filtered coffee - it takes eight hours to make one pot - that is also created in another retro sci-fi-styled machine. It was amazingly smooth and had a sort of whiskey or tobacco hint to it. I was actually able to drink it straight without any cream or sugar. But don't take my word for it. If you find yourself in San Francisco, make sure Blue Bottle finds its way onto your must-see list.

Come Party With Me: Foodie Thanksgiving - Menu

With rich flavors, luxe ingredients, and complex cooking techniques, this delicious Thanksgiving menu is sure to wow your foodie friends. Start with brioche toasts topped with foie gras, date purée, and pomegranate seeds. Caviar with cream cheese on peppered crackers is another hors d'oeuvres option that comes together easily with elements from a gourmet grocery store. A slow-smoked turkey with cane syrup-coffee glaze is a showstopping centerpiece to the main event. Before being smoked, the bird is braised in a mixture of coffee, apple cider vinegar, and cane syrup, so make sure you have a pot large enough to hold a whole turkey.

A decadent stuffing with bacon, sage, and fresh-shucked oysters is a delightful accompaniment to the smoked bird. Sweet potatoes reach new heights when served in souffle form stuffed inside a phyllo dough. To get these recipes for the more advanced home cook, read more.

Foie Gras With Date Purée and Pomegranate
From Gourmet

Ingredients

1/4 pound Medjool dates (packed 1/2 cup), pitted
1/2 cup boiling-hot water
1 tablespoon plus 1 teaspoon pomegranate molasses
1 large brioche loaf or challah loaf (1 to 1 1/2 pound)
1 (6 1/2-ounces) block foie gras, chilled
Garnish: pomegranate seeds (from 1 pomegranate)

Directions

Soak dates in boiling-hot water (1/2 cup) in a bowl 10 minutes. Transfer dates with a slotted spoon to a mini food processor or a blender along with 1 tablespoon soaking liquid. Add pomegranate molasses and purée until smooth.

Preheat broiler.

Cut enough 1/4-inch-thick slices from brioche to cut into a total of 32 (1 1/2-inch) squares (without crust).

Broil brioche squares on a baking sheet 4 to 5 inches from heat, turning once, until pale golden, about 1 1/2 minutes total. (Watch carefully; brioche toasts quickly.)

Dip a sharp paring knife in hot water, then dry it and halve foie gras lengthwise. Cut each half crosswise into 16 slices (32 total), dipping and drying knife after each cut. Put each slice as cut on top of a brioche toast, then top with a small dollop of date purée and a few pomegranate seeds.

Makes 32 hors d'oeuvres.

Make ahead: Brioche can be cut (but not toasted) 1 day ahead and kept in an airtight container at room temperature. Date purée can be made 3 days ahead and chilled, covered. Bring to room temperature before serving.

Ingredients

2 gallons water
1 cup apple cider vinegar
1/2 cup ground coffee, preferably chicory coffee
1 large onion, halved
12 large thyme sprigs, tied together
1/4 cup kosher salt
1 tablespoon black peppercorns
2 cups light brown sugar or 3 cups cane syrup*
One 11-pound turkey
About 3 cups hickory chips
Vegetable oil, for brushing

Directions

In a large saucepan, bring 1 gallon of the water to a boil; keep warm. In a large stockpot, combine the cider vinegar, coffee, onion, thyme, salt and peppercorns with 1 3/4 cups of the brown sugar and the remaining gallon of water. Bring to a boil.

Holding the turkey by the legs, carefully ease the bird into the hot brine, neck end down. Add enough of the hot water to the stockpot to cover the turkey and bring to a simmer. Simmer for 1 1/2 hours.

Carefully remove the turkey from the stockpot. Strain 2 cups of the braising liquid into a heatproof bowl and stir in the remaining 1/4 cup of brown sugar. Discard the remaining braising liquid.

Meanwhile, light a charcoal grill or preheat a gas grill. A few minutes before the turkey has finished simmering, add 2 cups of the hickory chips to the coals. When the chips start smoking, brush the turkey breast with oil.

Set the turkey, breast side down, on the grill. Cover and smoke over a low fire or flame for 15 minutes. Baste the turkey with the reserved braising liquid; turn it breast side up and baste again.

Cover the grill and continue smoking the turkey for about 40 minutes longer, basting occasionally with the braising liquid and adding more coals or hickory chips to the grill as necessary.

The turkey is done when an instant-read thermometer inserted in the inner thigh registers 165°. Transfer the turkey to a cutting board and let rest 20 minutes before carving.

Serves 10 with leftovers.

*Cane syrup is available by mail order from Steen's.

Ingredients

11 cups 1⁄2" cubed white French bread (about 14 oz.)
6 slices bacon, cut crosswise into 1⁄4" strips
6 tbsp. unsalted butter, melted, plus more for
greasing the pan
6 shallots, thinly sliced
4 ribs celery, thinly sliced
40 medium oysters, such as bluepoints, shucked (about 1 lb.), with 1 cup of the liquor reserved
1 cup chicken stock
1⁄4 cup madeira or port
1⁄3 cup chopped flat-leaf parsley leaves
2 tbsp. chopped thyme leaves
2 tbsp. chopped sage leaves
1⁄2 tsp. Tabasco
1⁄4 tsp. fresh grated nutmeg
1⁄8 tsp. ground cloves
Kosher salt and freshly ground black pepper, to taste

Directions

Heat oven to 250. Arrange bread cubes on a baking sheet in a single layer and bake, stirring occasionally, until dried but not browned, about 15 minutes. Let cool.

Put bacon into a 12" skillet; cook over medium-high heat, stirring frequently, until crisp and its fat has rendered, about 10 minutes.

Add 4 tbsp. of the butter and heat. Add shallots and celery, reduce heat to medium, and cook, stirring occasionally, until vegetables are soft, about 10 minutes.

Add oyster liquor, stock, madeira or port, parsley, thyme, sage, Tabasco, nutmeg, cloves, and salt and pepper.

Bring to a boil over high heat and cook, stirring occasionally, for 5 minutes. Scrape the mixture into a large bowl and stir in the bread cubes and oysters. Set aside to allow the flavors to come together for 10 minutes.

Raise the oven temperature to 400°. Transfer mixture to a buttered 2-qt. oval baking dish and cover with foil.

Bake for 30 minutes, remove foil, drizzle with remaining butter, and continue baking until golden brown and crusty, about 30 minutes more. Serve immediately.

Serves 8-10.

Sweet Potato Souffle Pie
From Martha Stewart

Ingredients

2 medium sweet potatoes, pierced with the tines of a fork
1/4 teaspoon ground ginger
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt
4 large eggs, separated
2 tablespoons packed light-brown sugar
1 cup whole milk
1 2-inch piece peeled fresh ginger, thinly sliced
1/4 cup unsalted butter, plus 1/2 cup melted, plus more for pan
1/4 cup all-purpose flour
1/3 cup plus 1/4 cup granulated sugar, plus more if needed
1/4 teaspoon ground cinnamon, plus more if needed
9 sheets phyllo dough, (17 by 12 inches) thawed if frozen
Pinch of cream of tartar

Directions

Preheat oven to 400 degrees. Bake potatoes until tender, 1 hour to 1 hour 15 minutes. Remove from oven; let stand until cool enough to handle.

Peel potatoes, and press through a ricer into a large bowl (you should have about 1 cup); let cool completely. Stir in ground ginger, vanilla, salt, egg yolks, and brown sugar; set aside.

Meanwhile, heat milk and fresh ginger in a medium saucepan over medium heat until just under a boil. Remove from heat; let stand 30 minutes. Pour through a fine-mesh sieve into a bowl.

Melt 1/4 cup butter in a medium saucepan over medium-high heat. Whisk in flour; cook, whisking, 1 minute. Whisk in milk mixture. Bring to a boil. Reduce heat to medium, and cook 1 minute. Stir into potato mixture.

Butter a 9-inch springform pan, and place on a baking sheet; set aside.

Stir 1/3 cup granulated sugar and the cinnamon in a small bowl.

Brush 1 phyllo sheet with melted butter. Sprinkle lightly with cinnamon-sugar mixture. Fold in half crosswise; brush with butter. Sprinkle lightly with cinnamon-sugar mixture, and fit into prepared pan, folded side in, allowing a 2 1/2-inch overhang. Repeat, overlapping sheets to cover bottom.

Put egg whites into the bowl of an electric mixer fitted with the whisk attachment; beat on high speed until foamy. Add cream of tartar; beat until soft peaks form.

With machine running, gradually add remaining 1/4 cup granulated sugar; beat until stiff glossy peaks form. Whisk one-third of the egg whites into potato mixture. Gently but thoroughly fold in remaining egg whites.

Pour over phyllo; fold overhang over filling. Sprinkle with cinnamon-sugar mixture (if needed, combine 1 to 2 tablespoons more sugar and a pinch of cinnamon).

Reduce oven temperature to 375 degrees. Bake pie until puffed and just set in center, 45 to 50 minutes. Remove from oven; let stand until slightly cooled and center has fallen, about 20 minutes.

Serves 10.

Coffee + Creativity = Art

The bf (we're going to call him Jimmy from now on, okay? I really hate that phrase bf) is really into coffee. As in, we got rid of our microwave counter space in order to make room for the coffee pot, espresso machine, grinder and all the other bits of coffee paraphernalia. So when I found this link, I immediately had to forward it to him. For several years, Duluth based artists Andy and Angel Saur have been creating all of their works of art with coffee. Like fine watercolors, the coffee works as washes and shading and each painting is 100% coffee (with the exception of an acrylic coat to preserve the art). It started when the artists were working on a new exhibit for a coffee house. Hoping to create something unique and fun, they decided to work with coffee as a medium. To achieve the different gradients, the artists brew their own thick coffee and dilute as needed. I personally think the results look rich and inviting, like sepia toned paintings. And somehow even their rendition of George Costanza mananges to capture a nostalgic feeling. But don't take my word on it, decide for yourself by checking out their coffee art gallery.

Come Party With Me: Engagement Party - The Look

One reason to choose a long engagement after your man pops the big question is so you can have an engagement party. This week I'm planning one for julieulie and her fiancé Scott who recently got engaged, but aren't getting married until Memorial Day 2008. I thought it would be fabulously fun and original to throw a dessert party instead of a typical dinner or cocktail party. Desserts as meals are an up and coming trend, and more and more restaurants that are devoted to only desserts are showing up all over the place.

Julie & Scott's close friends and family have received their invitations to the fiesta that will start on a Saturday night at 8:30. The menu will consist of a dazzling array of divine desserts including brownie cupcakes, strawberry shortcakes, and a cheese and fruit plate. The champagne will flow like water as the invitees toast Julie and Scott's eternal love. I've painted a pretty picture of this party, but what about the decor? To see my romantic, chic, and elegant ideas, read more

A bride that knows what she wants, Julie has already selected the colors of her wedding (light blue, white, and black), so I will use these to guide me in my decorating scheme. No worries if you have yet to decide the colors of your wedding, a simple color scheme of white, black and a bold or metallic accent color will work wonderfully. Likewise, there should be no pressure to stay with these colors if you suddenly change your mind and opt for different colors.

First find the location of the party. Will it be held in the intimate living room at the bride's parents' house or the large, modern kitchen at the groom's aunt's ranch? Walk around the space and envision a party there. Where can guests sit and chat? Where should the buffet be set up? Are there tables/counters for the champagne buckets and flutes? These are the types of questions you should be thinking when you envision your fete.

To adorn the dessert buffet, begin with a long flat table that will be your canvas to create a beautiful presentation of candies, cakes, fruits, and cheeses. Place upside down cardboard boxes and large pots on the table. With an over-sized satin tablecloth, or piece of light blue fabric, cover both the table and boxes/pots pressing the fabric down the sides of the boxes/pots. The look you will achieve is one with various heights and dimensions. Now the platters of brownies can be placed on a square box and the strawberry shortcakes in martini glasses can rest at a different height on a circular pedestal.

Fill small clear bowls with the couples favorite grocery store candies: white m&m's, silver chocolate kisses, blue jelly beans.

Large clear vases in diverse shapes, a few oval, a few square, maybe one triangular, will create a stunning background when filled with water and one simple long stemmed flower such as a white orchid or gardenias. Place the flowers on each end of the buffet tables and on windowsills, banquets, or small coffee tables.

Don't forget small white plates, white napkins, and silver spoons for the dessert table.

Black accents in the form of satin ribbons, velvet pillows, and mesh runners will add a touch of mysterious sophistication.

A glowing and warm atmosphere is necessary and to achieve, so light as many candles, votives, tapers, pillars, and the like as possible. Keep the look uniform with all white candles and black votives and candelabra.

White or light blue tiny Christmas lights can be wrapped around the windows, the rim of the room, or any pillars and columns that enhance the architecture.

Got a decoration idea perfect for Julie's party? Please share it with us below. Tomorrow I'll talk about the appropriate music for an engagement party. Equally important to the look of the engagement party is the correct behavior. If you are attending, hosting, or planning an engagement in the near future, I highly recommend reading DearSugar's tips for proper engagement party etiquette.
