 <title>2007 State Easter Eggs Cause a Bit of Controversy</title>

The eggs are created by artists from across the US and are decorated to represent each of the 50 states (plus one for DC). The collection is coordinated by the American Egg Board and this year there&#039;s a tiny bit of controversy. When the eggs were unveiled this week, everyone got to see them all, including the Wyoming state egg. Unlike other state eggs, which were decorated by state artists, American Egg Board had the Wyoming egg decorated by Phillip M. LeDonne, the son of an &quot;administrative person&quot; at the board, because they &quot;&lt;a href=&quot;http://abcnews.go.com/US/wireStory?id=3009847&quot; target=&quot;_blank&quot;&gt;couldn&#039;t locate a Wyoming egg artist&lt;/a&gt;.&quot;&lt;/p&gt;

If you&#039;re like me and can&#039;t decide wether you want to host a brunch or a dinner (both are quintessentially Easter) take a look at each of my menus and choose the one you like better. Let&#039;s start this morning with the brunch menu. Don&#039;t go crazy with too many hard-to-make breakfast foods like personalized omelets. Keep it simple with make-the-night-before dishes such as poached egg brioche and maple glazed bacon (the bacon can cook in the oven while you shower). For the recipes, read more&lt;/p&gt;

12 brioche slices, lightly toasted&lt;br /&gt;
12 thin slices Canadian bacon or smoked ham&lt;br /&gt;
12 slices tomato (from 2 to 3 tomatoes)&lt;br /&gt;
12 thin slices red onion (from 1 medium onion)&lt;br /&gt;
3/4 cup grated Cheddar cheese (about 3 ounces)&lt;br /&gt;
3/4 cup grated Swiss cheese (about 3 ounces)&lt;br /&gt;
Paprika for garnish (optional)&lt;/p&gt;
&lt;ol&gt;Preheat broiler. Line 13- by 9-inch baking dish (or large rimmed baking dish) with aluminum foil.&lt;/li&gt;
&lt;li&gt;Over high heat, bring large pot of water to boil, then reduce heat to medium. Crack 4 eggs, 1 at a time, into simmering water. Poach until whites are set but yolks are still soft, about 3 minutes. Using slotted spoon, carefully transfer to paper-towel-lined plate to drain. Poach remaining eggs, 4 at a time.&lt;/li&gt;
&lt;li&gt;In baking dish, place 12 brioche slices. Top each with 1 slice Canadian bacon, 1 slice tomato, 1 slice onion, and 1 (or 2 if using small eggs) poached egg.&lt;/li&gt;
&lt;li&gt;Sprinkle each with 1 tablespoon Cheddar and 1 tablespoon Swiss cheese.&lt;/li&gt;
&lt;li&gt;Broil until golden brown, about 3 to 4 minutes. Sprinkle each egg with paprika and serve immediately.&lt;/li&gt;
&lt;li&gt;Can be prepared in advance and placed under broiler for 3 to 4 minutes before serving.&lt;/li&gt;

&lt;p&gt;3/4 pound thick-cut smoked bacon (16 slices)&lt;br /&gt;
1 to 2 tablespoons good maple syrup&lt;/p&gt;
&lt;ol&gt;
&lt;li&gt;Preheat the oven to 400 degrees F.&lt;/li&gt;
&lt;li&gt;Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon begins to brown.&lt;/li&gt;
&lt;li&gt;Remove the pan carefully from the oven; there will be hot grease in the pan! Brush the bacon slices with maple syrup and bake for another 3 to 5 minutes, until the bacon is a warm golden brown.&lt;/li&gt;
&lt;li&gt;Transfer the bacon to a plate lined with paper towels and serve warm.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Serve 4-8.&lt;/p&gt;

1 large shallot, thinly sliced&lt;br /&gt;
1 thyme sprig&lt;br /&gt;
1/3 cup dry white wine&lt;br /&gt;
3 cups water&lt;br /&gt;
5 cups frozen peas (25 ounces)&lt;br /&gt;
Salt&lt;br /&gt;
1/2 cup chopped flat-leaf parsley&lt;br /&gt;
1/2 cup coarsely shredded Roncal or semi-aged sheep&#039;s-milk cheese&lt;br /&gt;
1/4 cup heavy cream&lt;br /&gt;
1/3 cup coarsely shredded Majorero or other mild, buttery, semi-aged goat&#039;s-milk cheese &lt;/p&gt;
&lt;ol&gt;
&lt;li&gt;Heat the olive oil in a large saucepan. Add the shallot and thyme and cook over moderately low heat until the shallot is softened, about 5 minutes.&lt;/li&gt;
&lt;li&gt;Add the wine and simmer over moderately high heat until reduced by half, about 3 minutes.&lt;/li&gt;
&lt;li&gt;Add the water and all but 1 cup of the peas and bring to a boil. Add a pinch of salt, cover and simmer over moderately low heat until the peas are tender, about 8 minutes.&lt;/li&gt;
&lt;li&gt;Add the remaining 1 cup of peas and simmer for 1 minute, then remove from the heat.&lt;/li&gt;
&lt;li&gt;Discard the thyme.&lt;/li&gt;
&lt;li&gt;Stir in the parsley.&lt;/li&gt;
&lt;li&gt;Working in batches, puree the sweet pea soup in a blender. Strain the soup through a coarse sieve set over another medium saucepan. Season the soup with salt and keep warm.&lt;/li&gt;
&lt;li&gt;Set a medium nonstick skillet over moderate heat. Spread four 1-tablespoon mounds of the Roncal in the skillet and flatten slightly.&lt;/li&gt;
&lt;li&gt;Cook the cheese over moderate heat until bubbling and set on the bottom, about 3 minutes; do not brown.&lt;/li&gt;
&lt;li&gt;Using a spatula, transfer the crisps to paper towels. Let cool until firm. Repeat with the remaining cheese.&lt;/li&gt;
&lt;li&gt;In a small glass bowl, heat the heavy cream in a microwave at high power until boiling, about 30 seconds. Add the Majorero and heat until the cheese is just melted, about 20 seconds. Stir until blended.&lt;/li&gt;
&lt;li&gt;Ladle the soup into small bowls. Swirl in the Majorero cream and serve with the Roncal crisps.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Serves 4.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Make ahead&lt;/b&gt;: Tte pea soup can be refrigerated overnight. The crisps can be made earlier in the day and reheated in a 325° oven for 1 minute.&lt;/p&gt;
