I love Michael for his friendly, easy going approach toward food and his fresh, delicious, recipes. In October of last year Michael opened his first store, Napastyle, in Berkeley - which is where Yum and I spoke with him. The event was a private party, tasting, and demonstration. In person, Michael is a lot like his TV personality: charming, welcoming, laid back and surprisingly he&#039;s more charismatic, incredibly personable, and quite funny.&lt;/p&gt;

He was raised on a farm in the California Central Valley where his mother taught him about the love that is put into making a meal. He doesn&#039;t believe in fast food - which he defines as any meal that is not worth remembering and has jokingly told &lt;a href=&quot;http://yumsugar.com/tag/Rachael+Ray&quot; &gt;Rachael Ray&lt;/a&gt;, &quot;I can&#039;t even clean the kitchen in under 30 minutes.&quot; &lt;/p&gt;
&lt;p&gt;Michael enjoys turning the ordinary into the extraordinary, being a guest at his own parties, and gray salt. Although his life is beyond busy, he inserts self-imposed speed bumps or meditation time to spend time with his 14 month old baby boy (maybe we should set him up with KatieSugar), 3 older daughters, and his wife (whom he lovingly refers to as his girlfriend because it &quot;sounds better&quot;).&lt;/p&gt;

&lt;b&gt;Michael Chiarello&lt;/b&gt;: For breakfast I had organic cheerios, mangoes, and strawberries. For lunch my wife made me asparagus soup with Point Reyes blue cheese and I drank dinner.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;P/YSugar&lt;/b&gt;: What are you inspired by?&lt;br /&gt;
&lt;b&gt;MC&lt;/b&gt;: My mother. That little girl in the crowd, Samantha, who watches my show every Saturday. The fact that food can open your heart and bring people into your life. One time a woman came up to me and told me that she had never gotten along with her mom and when she asked her mom why she had never tried making pasta, the mother answered it was because  she didn&#039;t have anyone to help her, so the daughter offered. Cooking brought them back together as a family. The best food is like gospel music, it makes you feel good.&lt;/p&gt;

&lt;b&gt;P/YSugar&lt;/b&gt;: What&#039;s your advice to the everyday hostess?&lt;br /&gt;
&lt;b&gt;MC&lt;/b&gt;: The Greeks set aside time while building the Parthenon to eat, so eat well even while busy. Set aside the time to eat well. &lt;/p&gt;
&lt;p&gt;&lt;b&gt;P/YSugar&lt;/b&gt;:  A successful party is…&lt;br /&gt;
&lt;b&gt;MC&lt;/b&gt;: Spending half as much time at the table as your guest do. When somebody else cleans up. When the wine is wonderful.&lt;/p&gt;

&lt;b&gt;MC&lt;/b&gt;: Organic Greek yogurt. Mango and papayas. Organic milk. Lots of cooked and ready to go protein.&lt;/p&gt;

&lt;p&gt;Michael jokes about being upset by the fact that he rarely gets invited out to a friend&#039;s house for dinner and dislikes that his favorite organic milk is available only in glass bottles. And while his style is definitely different, he loves that his buddy Emeril has brought millions of people back into the kitchen.&lt;/p&gt;

I always make sure my freezer is stocked with the easy-to-manage dough because it&#039;s ideal for impromptu entertaining. &lt;p&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;All-purpose flour, for parchment&lt;br /&gt;
1 standard package (17.3 ounces) frozen puff pastry, thawed&lt;br /&gt;
1 1/2 teaspoons paprika&lt;br /&gt;
1/4 cup unsalted butter, melted&lt;br /&gt;
2 1/2 tablespoons Dijon mustard&lt;br /&gt;
1 1/2 cups finely grated Gruyere cheese&lt;br /&gt;
1 cup finely grated Parmesan cheese&lt;br /&gt;
Freshly ground pepper
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Preheat oven to 375 degrees.&lt;/li&gt;
&lt;li&gt;Generously flour two pieces of parchment paper; on each, roll out an unfolded pastry sheet to form a 15-by-13-inch rectangle, about 1/16 inch thick. Refrigerate until firm, about 15 minutes. &lt;/li&gt;
&lt;li&gt;Meanwhile, stir the paprika into the melted butter.&lt;/li&gt;
&lt;li&gt;Remove pastry from the refrigerator, and brush off excess flour. Spread a rectangle of pastry with mustard; sprinkle with both cheeses. Season with pepper. Lay a second pastry rectangle on top.&lt;/li&gt;
&lt;li&gt;Place a sheet of parchment on top of the stacked pastry; using a rolling pin, roll until smooth and pastry layers are sealed together.&lt;/li&gt;
&lt;li&gt;Remove parchment, and brush top of pastry with butter mixture. Chill until firm, about 30 minutes.&lt;/li&gt;
&lt;li&gt;With a pumpkin-shaped cookie cutter, cut into 18 to 24 shapes.&lt;/li&gt;
&lt;li&gt;Immediately place the shapes on a parchment-lined baking sheet. Using a sharp paring knife, score each shape four or five times to make pumpkin ridges.&lt;/li&gt;
&lt;li&gt;Bake until golden, 15 to 20 minutes. Transfer puffs to a wire rack; let cool slightly before serving.&lt;/li&gt;

I quickly flipped through the pages, but since it was October, I stored it on the book shelf. &lt;/p&gt;
&lt;p&gt;Then two weeks ago I was sitting on my couch, looked up, and swore &lt;b&gt;BBQ Bash&lt;/b&gt; jumped out at me. I scooped it up and started reading. To find out why I couldn&#039;t put this book down - even on the bus - read more.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Pros&lt;/b&gt;:
&lt;ul&gt;
&lt;li&gt;It&#039;s written by two females, the BBQ Queens, so instead of taking a stereotypical manly point of view, the tone offers a refreshing anyone-can-do-it attitude.&lt;/li&gt;
&lt;li&gt;Filled with hundreds of mouthwatering recipes, helpful tips, party plans, interesting lists (example: 15 different flavored butters), general information on grilling, smoking, and barbecuing.&lt;/li&gt;
&lt;li&gt;To the authors, barbecue is a 24/seven, 365-day-a-year thing - meaning there is something for everyone.&lt;/li&gt;
&lt;li&gt;The party plans are festive and fun. They include such themes as A Black-Tie Barbecue, Home For the Holidays Barbecue, and A Cozy Dinner a Deux.&lt;/li&gt;
&lt;li&gt;There&#039;re plenty of cocktail recipes, too.&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;&lt;b&gt;Cons&lt;/b&gt;:
&lt;ul&gt;
&lt;li&gt;Lack of photos. There&#039;s a small color photo spread in the center of the book that features 14 images. Other than that, the book is photo-free.&lt;/li&gt;
&lt;li&gt;Some of the recipes call for specialty ingredients like artisanal prosciutto, peppadews, and tarragon vinegar.&lt;/li&gt;
&lt;li&gt;Other recipes are uncreative and rely on store-made products. A salmon recipe is little more than salmon fillets marinated in Italian dressing and Seafood Magic rub.&lt;/li&gt;
&lt;li&gt;There&#039;s no index or list of the drink recipes making them hard to find.&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;&lt;b&gt;Recipes&lt;/b&gt;: Each recipe is followed up with helpful pointers: to &quot;deck it out&quot; (make the dish seem more formal), to &quot;take it easy&quot; (simplify the recipe), to &quot;change it up&quot; (meat, herb, and cheese substitutions), and to &quot;raise a glass&quot; (alcoholic beverage pairing suggestions). Here are some that caught my eye:
&lt;ul&gt;
&lt;li&gt;Rioja-style grilled pork tenderloin tapas&lt;/li&gt;
&lt;li&gt;Limoncello spritzers&lt;/li&gt;
&lt;li&gt;Big Easy grilled beef tenderloin, Zinfandel-glazed baby back ribs with a kiss of smoke&lt;/li&gt;
&lt;li&gt;Blue cheese coleslaw&lt;/li&gt;
&lt;li&gt;Grilled Winter-greens with warm cranberry port-vinaigrette&lt;/li&gt;
&lt;li&gt;Grilled chocolate crostini&lt;/li&gt;
&lt;li&gt;Dulce de leche sauce&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;&lt;b&gt;Imagery&lt;/b&gt;: As mentioned above, there are only 14 color photos. The rest of the book is filled with curvy illustrations.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Overall&lt;/b&gt;: If you do a lot of outdoor entertaining and don&#039;t mind a cookbook without images, this book is perfect for you! &lt;/p&gt;

 <title>&#039;Wich of the Week: The Ex-Boyfriend at Ike&#039;s Place</title>

I was hesitant to write about my new favorite sandwich place in San Francisco, since the lines are long enough already. But keeping the enormous, palate-entertaining creations to myself wouldn&#039;t be in the spirit of sandwich love.&lt;/p&gt;
&lt;p&gt;&lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;Opened a year ago, Ike&#039;s is a tiny storefront in the Castro neighborhood, barely big enough to accommodate its sizable staff - making sandwiches this well is no easy task - and massive menu of 50-plus sandwiches with playful names like Nacho Boy (hot roast beef, mushrooms, avocado, and swiss) and the Paul Reubens (a take on the Reuben with poppy-seed coleslaw). Priced between $7 and $9, these are some of the largest sandwiches I&#039;ve ever eaten; if I have one for lunch, I&#039;m hardly hungry for dinner. But that&#039;s not even a taste of why I like Ike&#039;s. To count the ways, read more.&lt;/p&gt;

&lt;p&gt;I have sampled several sandwiches from Ike&#039;s, all of which come with lettuce, tomato, and onions. My favorite so far is We&#039;re Just Friends, which features shredded chicken cooked in a sweet orange glaze, contrasted with avocado and pepperjack. On my most recent trip, I tried the similar but not quite as transcendent That&#039;s Too Bad (above), with chicken, spicy lime fajita sauce, mushrooms, and pepperjack, as well as today&#039;s featured sandwich, the Ex-Boyfriend, with salami, bacon, avocado, and cheddar. I&#039;ve whipped up a recipe below, but first, here&#039;s are five reasons that Ike&#039;s is awesome.&lt;/p&gt;
&lt;ul&gt;
&lt;li&gt;The rolls - your choice of French, sourdough, wheat, or Dutch crunch - aren&#039;t baked until you order your sandwich, so they are fresh beyond belief.&lt;/li&gt;
&lt;li&gt;Before baking, the rolls are spread with &quot;dirty sauce,&quot; a homemade garlic and herb aioli. It&#039;s very subtle but adds a perfect little kick.&lt;/li&gt;
&lt;li&gt;The ingredients are first-rate. The shredded chicken is so moist, I could eat a plate of it, and the avocados are always perfectly ripe.&lt;/li&gt;
&lt;li&gt;The French fries are to die for. They&#039;re medium-cut but with a crust like curly fries that tastes vaguely of chipotle.&lt;/li&gt;
&lt;li&gt;The staff is super nice. Clearly they care a lot about sandwiches, so they are happy to help you make a decision about which of the sandwiches suits you best.&lt;/li&gt;

I haven&#039;t quite figured out how Ike&#039;s makes its sammies (for instance, does it put them back in the oven after assembling them?) but here&#039;s an approximation of the Ex-Boyfriend to try at home.&lt;/p&gt;
&lt;p&gt;

&lt;p&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;1 Dutch crunch or French roll&lt;br /&gt;
2 tablespoons of garlic aioli&lt;br /&gt;
2-3 slices of cheddar cheese&lt;br /&gt;
Thinly sliced red onion, to taste&lt;br /&gt;
1/4 cup iceberg lettuce, shredded&lt;br /&gt;
1/2 avocado, sliced&lt;br /&gt;
3 slices of tomato, thinly sliced&lt;br /&gt;
8 slices of high-quality salami&lt;br /&gt;
6 strips of bacon, cooked&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Preheat oven to 350&amp;deg;F.&lt;/li&gt;
&lt;li&gt;Slice Dutch crunch or French roll in half horizontally, and coat the inside of the roll on both sides with garlic aioli.&lt;/li&gt;
&lt;li&gt;Lay sliced cheddar on bottom half, and toast in the oven for 5 minutes or until cheese is melted.&lt;/li&gt;
&lt;li&gt;Remove from oven. On top of the cheese, arrange onions, lettuce, avocado, tomato, salami, and bacon.&lt;/li&gt;
&lt;li&gt;Place the top half of the roll onto the stack of ingredients, cut in half, and serve immediately.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Makes one sandwich.&lt;/div&gt;

&lt;p&gt;Earlier today I had the chance to speak with Tony over the phone. To see what the fabulous Abou-Ganim had to say in my exclusive interview, read more.&lt;/p&gt;
&lt;p&gt;Tony believes that when it comes to food, wine actually pairs better than a cocktail. While he loves to start a nice meal with a cocktail and end it with a strong spirit or dessert drink, in terms of fine dining, he leaves the food pairings to wine. &lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: What trends do you see in mixology?&lt;br /&gt;
TAG&lt;/b&gt;: We call it market fresh mixology. More and more people are utilizing seasonality to make cocktails. It&#039;s the culinary approach to cocktails. Don&#039;t wrestle with mother nature. Use ingredients that are in season.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: Why do you think people are so into classic cocktails now?&lt;br /&gt;
TAG&lt;/b&gt;: I think it was the missing link in the evolution of the culinary arts. Thanks to the rise of celebrity chefs and the Food Network, people have become more aware of cooking and entertaining at home. Most people these days know how to navigate a wine list and it was only natural for people to become more interested in cocktails. &lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: What is your signature drink?&lt;br /&gt;
TAG&lt;/b&gt;: It&#039;s called the &lt;a href=&quot;http://www.themodernmixologist.com/index.cfm/hurl/obj=Cocktails/Cocktails.cfm&quot; target=&quot;_blank&quot;&gt;Cable Car&lt;/a&gt;. I developed it in 1996 at the &lt;a href=&quot;http://www.harrydenton.com/&quot; target=&quot;_blank&quot;&gt;Starlight Room&lt;/a&gt; in San Francisco. I hope it becomes a classic cocktail and that in 100 years people are still drinking the Cable Car that Tony Abou-Ganim created in 1996. &lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: Do you think it&#039;s important to have a specialty cocktail when entertaining?&lt;br /&gt;
TAG&lt;/b&gt;: Absolutely! Specialty cocktails make it easier for you to host and it makes it more fun. I recently hosted a party where I gave every couple a muddler as a party favor. I gave a quick demo on how to make a mojito and set out a bunch of limes and simple syrup. Everyone made their own mojitos which made it easy on me because I didn&#039;t have to make a million mojitos.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: What do you think makes a good mojito?&lt;br /&gt;
TAG&lt;/b&gt;: The mojito is the simplest, most difficult drink to make perfectly. Love, you&#039;ve gotta put love into it. If I order a mojito and the bartender doesn&#039;t get excited about it I know it&#039;s not going to be good. But if the bartender says, &quot;I just got a bunch of clementines from the market, can I make you a clementine mojito?&quot; I know it&#039;s going to be good. &lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: What&#039;s your advice to the home mixologist?&lt;br /&gt;
TAG&lt;/b&gt;: Learn the basic techniques. Search for a balance, the ying and yang of sweet and sour. Understand the flavors, taste everything. Use fresh, in-season produce. Once you know the basic techniques, the simple recipe you can have fun with it and utilize fresh seasonal ingredients. Now bing cherries are in season, so why not pit a bunch of cherries, muddle them with sugar, add ice and cachaça, and make it a bing-cherry Caipirinha?&lt;br /&gt;
&lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;&lt;b&gt;PS: Vodka or gin?&lt;br /&gt;
TAG&lt;/b&gt;: Gin for the classics, but I&#039;m pro vodka. It&#039;s a great spirit that has a bad rap in bartending.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: Martini or Manhattan?&lt;br /&gt;
TAG&lt;/b&gt;: Martini&lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: Shaken or stirred?&lt;br /&gt;
TAG&lt;/b&gt;: Depends if vodka or gin. If vodka shaken, I believe the ice crystals open up the vodka. If gin, stirred. Shaking gin will only dilute it.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: Straight up or on the rocks?&lt;br /&gt;
TAG&lt;/b&gt;: Straight up.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: Lemon twist or olive?&lt;br /&gt;
TAG&lt;/b&gt;: Lemon twist.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;PS: Pineapple or cherry?&lt;br /&gt;
TAG&lt;/b&gt;: Pineapple.&lt;/p&gt;
