As I lay in bed, my head pounding, I suddenly realized I was in the best place in the world to be hungover: my parents&#039; house - where the fridge was always stocked! &lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;Sure enough there was bacon, eggs, an assortment of cheese, and bread. &lt;p&gt;The combination of crisp bacon, oozing yolk, and melted cheese is scrumptiously sublime. The sandwich features simple ingredients in a magnificent way that is balanced in both taste and texture. 4 tomato slices&lt;br /&gt;
2 leaves of butter lettuce&lt;br /&gt;
1 teaspoon unsalted butter&lt;br /&gt;
1 large egg

&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;In a skillet, cook the bacon over moderate heat, turning, until crisp, about 8 minutes. Transfer to paper towels to drain.&lt;/li&gt;
&lt;li&gt;Set the Monterey Jack slices on 1 piece of toast. Spread the mayonnaise on the other slice of toast, then top with the bacon, tomato and lettuce.&lt;/li&gt;
&lt;li&gt;In a small, nonstick skillet, melt the butter. Add the egg and fry over moderate heat, turning once, until crisp around the edge, about 4 minutes; the yolk should still be runny.&lt;/li&gt;
&lt;li&gt;Slide the egg onto the lettuce; close the sandwich and eat right away.&lt;/li&gt;

1 slice Monterey jack cheese&lt;br /&gt;
1 cooked sausage patty&lt;br /&gt;
2 eggs&lt;br /&gt;
2 tablespoons guacamole&lt;br /&gt;
2 slices of tomato&lt;br /&gt;
Thinly sliced red onion, optional to taste&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Preheat oven to 200°F. Slice the Kaiser roll in half horizontally, and lay the cheese slice on the bottom half. Place both pieces of the roll in the oven for about 5 minutes, until the cheese is melted.&lt;/li&gt;
&lt;li&gt;In a skillet over medium-high heat, heat the sausage patty, turning occasionally, until the sausage is heated through. Remove from heat.&lt;/li&gt;
&lt;li&gt;Reduce the skillet heat to low, and add the eggs. Scramble the eggs, cooking slowly and folding, so that they form a loose, omelet-like patty.&lt;/li&gt;
&lt;li&gt;Place the heated Kaiser roll open on a plate, and top the melted cheese with guacamole, tomato, and sausage patty.&lt;/li&gt;
&lt;li&gt; With a spatula, remove the scrambled eggs from the skillet and lay on top of the sausage.&lt;/li&gt;
&lt;li&gt;Top the eggs with red onion slices if desired, replace the top half of Kaiser bun, and serve.&lt;/li&gt;

2 large eggs&lt;br /&gt;

&lt;li&gt;Preheat the oven to 250°F.&lt;/li&gt;
&lt;li&gt;Place two slices of swiss cheese on each of two pieces of bread.&lt;/li&gt;
&lt;li&gt;Place the two cheese-covered slices of bread in the oven, plus two more pieces of bread if you want a closed-face sandwich. Cook for about 5 minutes or until cheese is just melted.&lt;/li&gt;

&lt;li&gt;In a skillet over medium-low heat, cook Serrano ham until crispy, turning once, about 5 minutes. &lt;/li&gt;

&lt;li&gt;When the yolks have just started to firm up but are still runny, drizzle the balsamic reduction sauce atop the eggs. Place a lid over the skillet and cook for an additional 30 seconds. Remove from heat.&lt;/li&gt;

&lt;li&gt;Using a biscuit cutter or inverted glass, cut out four rounds, or cut into four wedges with a knife.&lt;/li&gt;

&lt;li&gt;Sprinkle remaining 4 tablespoons cheese over the sandwiches; broil until cheese is melted and bubbling, about 30 seconds.&lt;/li&gt;

2 green onions (pale green part), thinly sliced&lt;br /&gt;
1 cup diced celery&lt;br /&gt;
3 tablespoons finely chopped flat leaf parsley&lt;br /&gt;
8 hard boiled eggs, peeled and chopped&lt;br /&gt;
3 tablespoons olive oil&lt;br /&gt;
8 slices whole grain or whole wheat bread&lt;br /&gt;
½ small onion, thinly sliced&lt;br /&gt;
Parsley leaves, for garnish* (optional)

&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;In a large bowl, whisk together the mayonnaise, dijonnaise, white wine vinegar, and paprika.&lt;/li&gt;
&lt;li&gt;Add the green onion, parsley, celery and eggs to the mayonnaise mixture and gently fold to combine; season with salt and pepper to taste.&lt;/li&gt;
&lt;li&gt;Brush the bread on both sides with some of the oil and grill on a grill or grill pan until lightly golden brown or place on a baking sheet and place under the broiler for 45 seconds per side.&lt;/li&gt;
&lt;li&gt;Divide the egg salad among the 8 slices of bread, top with slices of onion and a few parsley leaves.&lt;/li&gt;

4  to 6 spinach leaves&lt;br /&gt;
1  small tomato, sliced&lt;br /&gt;

&lt;li&gt;In a small bowl stir together mayonnaise and mustard. Spread the mustard mixture on one side of each bread slice. Set aside.&lt;/li&gt;
&lt;li&gt;In a large skillet melt 1 tablespoon of the margarine over medium heat. Break 2 of the eggs into skillet. Stir each egg gently with a fork to break up yolk. Cook for 3 to 4 minutes or until eggs are desired doneness, turning once.&lt;/li&gt;
&lt;li&gt;Place each egg on mustard side of a bread slice. Layer the spinach, tomato, and cheese on eggs. Top with the remaining bread slices, mustard sides down.&lt;/li&gt;
&lt;li&gt;In a shallow dish beat together the remaining 2 eggs and the milk. Carefully dip sandwiches in egg mixture, coating both sides.&lt;/li&gt;
&lt;li&gt;In the same skillet melt the remaining 1 tablespoon margarine over medium heat. Add sandwiches; cook about 4 minutes or until bread is golden brown, turning once.&lt;/li&gt;
