For Something Different, Try Cinnamon-Spiced Eggs

At the beginning of the month, I resolved to simplify every respect of my life, including the number of items and ingredients I keep stocked in my kitchen. That's because I've discovered that in cooking, as in life, sometimes less equals more!

One unintended consequence of this newfangled declaration? I've suddenly been eating far more meatless meals made from pantry staples (think beans, lentils, eggs, and grains). My favorite dish as of late has been a Mediterranean-North African twist on eggs in purgatory, prepared by baking eggs in a slow-simmered onion-and-tomato sauce spiced heavily with cinnamon, allspice, and cloves.

Baked eggs of any sort are often thought of as a brunch dish, but I actually love to eat this any time of day, dinner included; the faraway flavors of the sauce make this dish the perfect way to end a long day. Keep reading if you want a recipe for cinnamon-spiced eggs.

Mediterranean Quiche Is Great Morning, Noon, or Night

Sometimes I'll bake my own pie crust, but other times, when I'm in a hurry, I'll use a pre-made one from the store. The thing I love about quiche is its timelessness. It can be enjoyed at breakfast, lunch, or dinner. I've even eaten a cold slice as a snack in the afternoon! It's also a great way to use up old and leftover ingredients. This Mediterranean-inspired quiche is my latest favorite recipe. It's a perfect easy meatless Monday meal, and it's so good you may end up eating half the quiche in one sitting! The filling is a combination of sautéed onions, zucchini, red peppers, and sun-dried tomatoes; gruyere and goat cheese provide a luxurious richness. To give it a try,

Ingredients
2 tablespoons unsalted butter
1 cup sliced yellow onions
1 medium zucchini, chopped
1 red pepper, chopped
1 teaspoon minced garlic
4 ounces oil-packed sun-dried tomatoes, drained and chopped
3 tablespoons chopped fresh basil
2 teaspoons chopped fresh thyme
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 large eggs
1 1/4 cups half-and-half
1/2 cup grated Gruyere
1/2 teaspoon crushed red pepper
1 pie crust (store bought or homemade)
3 ounces goat cheese, crumbled

Directions

Preheat the oven to 375 degrees F.

In a large skillet melt the butter over medium-high heat. Add the onions and zucchini and cook, stirring, for 6 minutes. Add the red peppers and cook, stirring, until the vegetables are wilted, about 10 minutes.

Add the garlic and cook for 1 minute.

Add the tomatoes, basil, and thyme and season lightly with salt and pepper. Cook, stirring, for 1 minute. Remove from the heat and let cool.

In a bowl, beat the eggs and half-and-half together. Add the salt, pepper, grated Gruyere, and crushed red pepper.

Spoon the vegetable mixture into the prepared piecrust, pour in the egg mixture, and crumble the goat cheese on top. Bake for 25 to 30 minutes until set. Remove from the oven and let cool for 30 minutes before serving.

Serves 8-10.

Leggo the Eggos: Vegan Egg Substitutes

If you're avoiding eggs because you eat a plant-based diet or simply to limit your intake of saturated fat and cholesterol, you have several options. Some substitutions work better than others depending on the recipe, but a little trial and error will help you determine which one works best with each dish. See the list below to learn which option I used in the vegan Chocolate Cranberry Zucchini Bread pictured here.

EnerG Egg Replacer: This gluten-, dairy-, and nut-free product is made with potato and tapioca starch flour. Replace each egg in a baked good recipe with one and a half teaspoons of powder mixed with two tablespoons of water.

Banana: A half a mashed banana replaces one egg in a recipe for baking. This substitution works best in sweet muffins and yeast-free breads since the banana flavor is so strong. Aside from adding moisture to baked goods, using a banana adds potassium to the final product.

Canned pumpkin: Use a quarter cup per egg when making baked goods. Since it has a distinct flavor, it's best used in recipes that have other stronger flavors such as cinnamon or chocolate, or with ingredients that complement it like apples or carrots.

Need Room Temperature Eggs Fast? Here's What You Do!

When I need butter to be at room temperature quickly, I grate it, but for eggs I use a different technique. I fill a big bowl with warm water, then I place the eggs gently inside the bowl. The key is to make sure that the water's not too hot; you don't want the eggs to cook. Let them sit for 10 minutes in the warm water, and they should be good to go. Have you ever done this? What's your method for bringing eggs to room temperature?

The ovoid protein is a fixture during every occasion, from breakfast fry-ups to dessert soufflés - and, with a repertoire that includes Spanish tortillas and Ethiopian doro wat, it dots every corner of the world's culinary landscape.

You may be a regular when it comes to enjoying eggs, but what do you really know about them? In honor of May being National Egg Month, I'm going to list out a number of facts, and I want you to either confirm them or dispel them. Can you crack these questions? Take the quiz to find out.

Egg in a Nest, Meet the Grilled Cheese

The grilled cheese sandwich is one of life's simplest pleasures, while an egg in a nest is a deliciously nostalgic breakfast. What happens when the two come together? You get one spectacular sandwich! Although this recipe is a little more complex then making the two dishes separately, it's worth the effort. It has you discard the center portion of the bread, but I decided to make a mini sandwich and serve it with the larger grilled egg and cheese. If you enjoy bacon in your egg sandwiches, sauté a couple of diced pieces and cook the spinach-onion mixture with the bacon.
Treat Mom to Homemade Benedict, California-Style

Classic eggs Benedict is my favorite brunch dish; if it's on a restaurant's menu, I'll order it nine times out of 10. However, when I'm cooking brunch at home, I prefer to make a lighter, meat-free Benedict. Instead of Canadian bacon, I use roasted tomatoes and mashed avocado. The butter-heavy Hollandaise sauce is replaced with a creamy parmesan cheese sauce. Although you could use poached eggs, most of the time I'm lazy and simply used fried eggs. This dish is one that my mom loves, so if you're looking for something to make for your mother on Sunday, I highly recommend the California Benedict! Get the recipe now.
