&lt;p&gt;It was freshman year of high school, and the only drink in the world that I hated more than coffee was anything with alcohol in it. Then I developed a nighttime cough that no medicine would cure, and my mother started making me a drink of hot lemon juice, honey, and a splash of whiskey. The whiskey was warming on the way down and had a musky, smoky scent; the lemon left a tart, tongue-puckering finish. &lt;/p&gt;
&lt;p&gt;That experience turned out to be just the beginning. &lt;p&gt;Easy to make, can be made ahead and assembled upon arrival or the day of the event. Adjust to your preferences  by swapping herbs like dried Italian herbs or dill. Depending on desired consistency you can also adjust the amounts of chicken, mayo, and cream cheese. A toothpick in each helps guests serve themselves. Pulse in a food processor prior to adding peas and, talk about easy! I double the recipe since it&#039;s always a hit at gatherings.&lt;/p&gt;
&lt;p&gt;
&lt;p&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;8 wide celery ribs, trimmed&lt;br /&gt;
1/3 cup cream cheese (2 ounces), softened&lt;br /&gt;
3 tablespoons mayonnaise&lt;br /&gt;
1 tablespoon plus 1 teaspoon fresh lemon juice&lt;br /&gt;
1 tablespoon finely chopped basil&lt;br /&gt;
2 teaspoons finely chopped tarragon&lt;br /&gt;
2 teaspoons finely chopped flat-leaf parsley&lt;br /&gt;
1/2 teaspoon finely grated lemon zest&lt;br /&gt;
1/2 pound cooked chicken breast, finely chopped or shredded&lt;br /&gt;
1/2 cup frozen baby peas, thawed&lt;br /&gt;
3 tablespoons finely chopped red onion&lt;br /&gt;
Kosher salt and freshly ground pepper

&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;br /&gt;Using a vegetable peeler, peel the celery ribs so they sit flat, then cut them on the diagonal into 1-inch lengths. In a medium bowl, combine the softened cream cheese with the mayonnaise, lemon juice, basil, tarragon, parsley and lemon zest. Add the chicken, peas, and onion and stir gently until just combined. Season with salt and pepper. Spoon 1 teaspoon of the chicken salad onto each piece of celery.&lt;/div&gt;

1 pound boneless beef sirloin steak&lt;br /&gt;
2 tablespoons vegetable oil&lt;br /&gt;
1 flour tortilla for burritos (8 inch) (from 11.5-ounce package), cut into 4x1/2-inch strips&lt;br /&gt;
1 bag (1 pound) frozen stir-fry bell peppers and onions&lt;br /&gt;
1/2 cup frozen whole kernel corn&lt;br /&gt;
1 cup thick &amp;amp; chunky salsa&lt;br /&gt;
2 tablespoons lime juice&lt;br /&gt;
2 tablespoons chili sauce&lt;br /&gt;
1/2 teaspoon ground cumin&lt;br /&gt;
2 tablespoons chopped fresh cilantro&lt;/p&gt;

&lt;li&gt;Cook rice as directed on package.&lt;/li&gt;
&lt;li&gt;Meanwhile, cut beef with grain into 2-inch strips; cut strips across grain into 1/8-inch slices.&lt;/li&gt;
&lt;li&gt;Heat 12-inch nonstick skillet over medium-high heat. Add oil; rotate skillet to coat bottom. Cook tortilla strips in oil 1 to 2 minutes on each side, adding additional oil if necessary, until golden brown and crisp. Drain on paper towel.&lt;/li&gt;
&lt;li&gt;Add beef to skillet; cook and stir over medium-high heat 4 to 5 minutes or until beef is no longer pink. Remove from skillet.&lt;/li&gt;
&lt;li&gt;Add bell pepper mixture and corn to skillet; cook and stir 1 minute. Cover and cook 2 to 3 minutes, stirring twice, until crisp-tender.&lt;/li&gt;
&lt;li&gt;Stir in beef, salsa, lime juice, chili sauce and cumin. Cook 2 to 3 minutes, stirring occasionally, until hot. Stir in cilantro.&lt;/li&gt;
&lt;li&gt;Divide rice among bowls. Top with beef mixture and tortilla strips.&lt;/li&gt;
