Goat cheese, leeks, and chives take this standard side dish to a new level of scrumptiousness. This recipe may be more complex with a couple of extra steps, but trust me, it is worth it!

garlic butter thing before - but goat cheese really does make sense. i'll have to try this one.

Goat cheese seems to be popping up a lot recently.
I actually don't eat mashed potatoes that often, so I don't think its plain form is boring.
