For the longest time, I thought they were called &quot;girl cheese sandwiches,&quot; meaning that the sandwich was something so special and delicious only girls like myself got to enjoy them. Eventually, I learned that boys ate them too, but at that point, I was so smitten by the classic combination of cheese and bread that I didn&#039;t care. My latest favorite &quot;girl&quot; cheese sandwich is actually a baked cheese sandwich. With its three cheeses (fontina, provolone, and parmesan), triple decker, and slow roasted tomatoes, it&#039;s far more gourmet than anything I devoured as a child.  <title>Say Cheese! My Ultimate Grilled Cheese</title>

&lt;p&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;1 loaf of ciabatta bread&lt;br /&gt;
butter, for melting&lt;br /&gt;

&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Cut the rounded edge of the bread off. Discard. Slice a large chunk of bread, 3-4 inches wide. Place the rest of the ciabatta back in the bread bag and reserve for another use.&lt;/li&gt;
&lt;li&gt;Cut the ciabatta chunk in half horizontally, so you have a top piece and bottom piece.&lt;/li&gt;
&lt;li&gt;Peel back the wrapping on a stick of butter. Rub the butter on the outside of the bread.&lt;/li&gt;
&lt;li&gt;Pull out some of the bread&#039;s filling. Discard.&lt;/li&gt;
&lt;li&gt;Cover both pieces with a smooth layer of Mt. Tam.&lt;/li&gt;
&lt;li&gt;Top the bottom piece of bread with the sliced fontina, covering completely. Carefully mound the grated gruyere on top.&lt;/li&gt;
&lt;li&gt;Close the sandwich by placing the top piece over the gruyere.&lt;/li&gt;
&lt;li&gt;Heat a large skillet over medium-low heat. Melt 1/2 teaspoon of butter in the skillet.&lt;/li&gt;
&lt;li&gt;Carefully set the sandwich in the skillet. Place a heavy pot over the bread and press down.&lt;/li&gt;
&lt;li&gt;Cook for 8-10 minutes until the bread is browned and crisp. Flip and cook for another 8-10 minutes until the top is crisp and the cheese is throughly melted.&lt;/li&gt;
&lt;li&gt;Slice in half and enjoy immediately.&lt;/li&gt;

&lt;li&gt;Let cool. Croutons can be made 1 day ahead and stored in an airtight container.&lt;/li&gt;

&lt;li&gt;Add the yellow onion and saute until soft, about 15 minutes.&lt;/li&gt;

&lt;li&gt;Add the vinegar and stir with a wooden spoon to release any browned bits stuck on the bottom of the skillet.&lt;/li&gt;
&lt;li&gt;Transfer to a blender or food processor and puree until smooth. With the machine running, slowly add 1/2 cup of the olive oil, then the water.&lt;/li&gt;
&lt;li&gt;Transfer to a bowl and season with salt and pepper.&lt;/li&gt;
&lt;li&gt;&lt;b&gt;For the salad&lt;/b&gt;: Heat a large skillet over high heat.&lt;/li&gt;
&lt;li&gt;When hot, add 1/4 cup olive oil.&lt;/li&gt;
&lt;li&gt;When the oil begins to smoke, sprinkle in the mushrooms. Don&#039;t stir! Let them sizzle until they have caramelized on the bottom, about 2 minutes. If you toss them too soon, they will release their liquid and begin to steam. When the bottoms are caramelized, toss the mushrooms, reduce the heat to moderate, and continue to cook until well browned.&lt;/li&gt;
&lt;li&gt;Stir in the thyme and garlic and cook for about 1 minute to release their fragrance. Season with salt and pepper.&lt;/li&gt;
&lt;li&gt;In a large bowl, combine the croutons, the mushrooms, and the onion dressing. Toss well to coat.&lt;/li&gt;
&lt;li&gt;Add the celery, red onion, and arugula or spinach and toss again gently.&lt;/li&gt;
&lt;li&gt;Taste and adjust the seasoning. Grate fresh Parmesan on top and serve immediately.&lt;/li&gt;

&lt;li&gt;In a grinder add the dried garlic, salt, black peppercorns, mustard powder, and chili powder. Grind them all up.&lt;/li&gt;

&lt;li&gt;In a 10 to 12-inch nonstick saute pan, heat 2 tablespoons of olive oil over medium-high heat until smoking.&lt;/li&gt;
&lt;li&gt;Add 1 tablespoon of the butter and cook until the sizzling subsides.&lt;/li&gt;
&lt;li&gt;Dip 2 of the sandwiches into the egg mixture, turning to coat, place in the pan, and cook until golden brown on the first side, about 2 minutes. Flip over and brown on the other side.&lt;/li&gt;

&lt;li&gt;In a bowl, whisk the cake flour with the cornstarch, baking soda and 2 teaspoons of kosher salt. Add 2 1/2 cups of the club soda and whisk until smooth; the batter should be thick but pourable. If necessary, add the remaining 1/2 cup of club soda, a few tablespoons at a time.&lt;/li&gt;
&lt;li&gt;Working with 6 to 8 onion rings at a time, dip them in the batter until completely coated; as you pull the rings from the batter, scrape some of the excess against the side of the bowl.&lt;/li&gt;
&lt;li&gt;Carefully add the onion rings to the hot oil and fry until golden and crisp, about 2 minutes. Drain the onion rings on paper towels.&lt;/li&gt;
