In an age of arugula and frisée, the 1960s Americana icon known as iceberg lettuce might seem behind the times. It's true that iceberg is virtually devoid of nutrients, and lacks the flavor and roughage of contemporary chicories. But coming to terms with the fact that iceberg isn't exactly an antioxidant is what's helped me to embrace it.

Plastic wrapped, large round balls of iceberg lettuce were always present in my childhood fridge. However as I got older my beloved iceberg was replaced by romaine, spinach, arugula and even bitter greens. Turns out I'm not the only who turned their back on iceberg.

No salad week would be complete without a glossary of greens. The base and heart of any salad, greens are crisp, healthy, and when properly paired and dressed, absolutely delicious. Never store leafy vegetables in a wet plastic bag because they will rot quickly.

Countless sandwiches are native to America, but the Navajo Taco is a Native American sandwich in the strictest sense of the word. Made by piling New Mexican taco fixings onto traditional Navajo frybread, this scrumptious sandwich is a specialty of Arizona, so on a recent trip to Phoenix, I stopped by The Fry Bread House to do some firsthand research.
My first question, of course, is why a Navajo Taco — also called an Indian Taco — is considered a sandwich rather than a taco.

Recently I was sent a box of meals by Freshology. Like the Zone, Freshology is a diet delivery program that helps celebrities lose weight and eat healthy. I was given four days worth of packaged meals in containers that resembled airplane food.

It's a shame that so many varieties of kale wind up as garnish on a plate, because the truth is, this dark, tender green tastes divine. Unlike iceberg lettuce, this sweet relative of cabbage happens to be loaded with nourishing nutrients. While the leaves are often available year-round, the peak of kale's season is in the Fall and Winter, so right now it is abundant at the market.

I love a good leftover sandwich, so after whipping up shrimp rémoulade the other night, I made sure to save some shrimp and sauce for a second dinner, sandwiched inside a crispy, sweet baguette. The flavor of the rich, robust rémoulade against the flaky French bread and cool, fresh shrimp was so yummy I wish I'd made sandwiches the first time around, rather than just serving the baguette on the side.
The recipe is equally easy as a from-scratch sandwich or a leftover reinvention.

San Francisco's Roxie Food Center is an unassuming corner store, located on an unlikely residential block, that's rumored to have remarkable sandwiches. I've been meaning to try it for months, so a few weeks ago I made a special trip just to get my jaws around one these sammies.
Though the store has all the usual varieties of bread and cold cuts, I'd heard great things about the Dutch crunch rolls, which are topped with a sugary, salty crust.

It may be old-fashioned, but I love a good wedge salad. With its crisp, cool lettuce and tangy, creamy dressing, the iceberg and blue cheese combination is incredibly comforting. While good bottled blue cheese dressings exist, there's nothing like the thick, rich homemade variation.
